Shrimp Salad Lettuce Wraps are a healthy and low carb dinner idea, flavorful shrimp salad paired with refreshing lettuce wraps

Number Of Ingredients 11

1 1/2 pounds cooked shrimp
1/4 cup mayo
1 Tbsp dijon mustard
1 Tbsp lemon juice
1 Tbsp chopped chives
1 Tbsp chopped fresh dill
2 ribs celery (minced)
1 tsp Old Bay seasoning
1 tsp garlic paste (or 1 garlic cloves finely minced)
a few dashes of hot sauce
1 head Boston or Bibb lettuce

Steps:

  • Cut the shrimp into smaller pieces and put them in a bowl. Add the mayo, dijon mustard, lemon juice, chives, fresh dill, minced celery, Old Bay seasoning, garlic and hot sauce. Stir until combined.
  • Place the shrimp salad in the fridge for about an hour. Once ready to serve separate the lettuce leaves and put some of the shrimp salad into each lettuce wrap.

1 pound of large cooked peeled and deveined shrimp
1/4 teaspoon of pepper
1/8 teaspoon of salt
1 Teaspoon of Dijon mustard
1 Tablespoon of hot sauce
1 cup of Low Fat Honey Dijon salad dressing (I prefer Kens)
1/8 of a cup chopped scallions
1 Cup of chopped tomatoes
8 Medium Red leaf lettuce leaves

Steps:

  • Combine shrimp, salt pepper and hot sauce in a medium bowl. In a small bowl Combine dressing and dijon mustard. Add the salad dressing and scallions to the seasoned shrimp, mixing until combined. Fill lettuce leaves with salad and top with chopped tomatoes. (Make sure lettuce leaves are dry) Wrap the filled leaves and enjoy.

2 Tbsp. corn oil
2 Tbsp. white wine vinegar
2 Tbsp. GREY POUPON Dijon Mustard
2 Tbsp. honey
1 cup plain croutons

Steps:

  • Mix lettuce with shrimp, mushrooms and carrots in large bowl; cover. Refrigerate until ready to serve.
  • Mix egg product, oil, vinegar, mustard and honey in small bowl until well blended.
  • Pour dressing over salad; toss to coat. Sprinkle with croutons.
