These seasoned baked chicken pieces are cooked at a lower temperature than a roasted chicken, it's almost midway between roasting and braising.

1 large fryer chicken (cut into 8 pieces)
1/4 cup flour
1/2 teaspoon white pepper
1/2 teaspoon paprika
1/2 teaspoon dried thyme (crumbled)
1 teaspoon kosher salt
1 stick butter (melted)

Steps:

  • Gather the ingredients. Preheat the oven to 375 F.
  • Pat the chicken dry with paper towels.
  • Combine the flour, pepper, paprika, thyme, and salt, in a shallow dish.
  • Working 1 piece at a time with tongs, dredge each piece of chicken in the flour mixture and then dip into the melted butter, covering completely.
  • Transfer to a baking dish skin-side up.
  • Bake for about an hour, or until the juices run clear and the chicken is nicely browned and cooked all the way through. Serve and enjoy.

2 broiler/fryer chickens (3 to 4 pounds each)

Steps:

  • Preheat oven to 400°. Mix seasonings., Place chickens on a rack in a roasting pan, breast side up. Rub seasonings over outside and inside of chickens. Tuck under wings; tie together drumsticks. Roast until a thermometer inserted in thickest part of thigh reads 170°-175°, 1-1/4 to 1-1/2 hours. (Cover loosely with foil if chickens brown too quickly.), Remove from oven; tent with foil. Let stand 15 minutes before carving.

1 whole chicken, cut up
4 potatoes, peeled and cut in quarters
3 carrots, peeled and cut up
Mrs. Dash seasoning mix, blend to taste
garlic powder, to taste
cajun seasoning, to taste
onion powder, to taste
5 ice cubes
squeeze butter

Steps:

  • Place chicken parts in a foil lined 9x13 glass baking dish.
  • Throw carrots and potatoes on top.
  • Squeeze butter over top. About 2-4 tablespoons.
  • Sprinkle top with garlic powder, onion powder, cajun seasoning and Mrs. Dash. Place an ice cube in each corner and one towards the middle.
  • Cover with aluminum foil and bake for about an hour at 350.
  • After an hour, remove top foil cover and continue to cook uncovered at 350 for about 15-20 minutes or until thickest pieces of meat reach 160 degrees.
