Cornish Game Hens with Garlic and Rosemary image

Crusty garlic bread and a nice light Chianti wine complement this meal very well.

4 Cornish game hens
salt and pepper to taste
1 lemon, quartered
4 sprigs fresh rosemary
3 tablespoons olive oil
24 cloves garlic
⅓ cup white wine
⅓ cup low-sodium chicken broth
4 sprigs fresh rosemary, for garnish

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear. Baste with pan juices every 10 minutes.
  • Transfer hens to a platter, pouring any cavity juices into the roasting pan. Tent hens with aluminum foil to keep warm. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.

4 Cornish game hens, about 1 pound each
Salt to taste if desired
Freshly ground pepper to taste
4 thin slices prosciutto or other ham
8 small sprigs fresh rosemary
4 whole cloves garlic, crushed
1/4 cup melted butter
1/4 cup fresh or canned chicken broth

Steps:

  • Preheat the oven to 425 degrees.
  • Sprinkle the inside cavity of each game hen with salt and pepper. Insert one slice of prosciutto, two sprigs of rosemary and one crushed whole clove of garlic inside each bird. Truss the birds with string and sprinkle with salt and pepper.
  • Pour the melted butter into a metal baking dish and turn the trussed birds in it to coat well. Arrange the birds on their backs and scatter the giblets around them. Place the baking dish on the stove and bring the butter to the sizzling point.
  • Place the dish in the oven and bake 15 minutes.
  • Turn the hens on their sides and bake 15 minutes longer, basting occasionally.
  • Turn the hens to the opposite side and continue baking, basting occasionally, about 10 minutes longer.
  • Arrange the hens on their backs and bake 5 minutes longer, basting often.
  • Remove the birds to a serving dish. Pour most of the fat from the pan. Add the chicken broth, place the pan on the stove and stir to dissolve the brown particles that cling to the bottom of the pan. Untruss the birds. Pour the sauce over the birds and serve them hot or cold.

1/3 cup finely chopped prosciutto
5 teaspoons chopped fresh rosemary
2 1/2 teaspoons Dijon mustard
3 1 1/2-pound Cornish game hens
1 1/2 cups canned chicken broth
1 cup low-fat mayonnaise
3 tablespoons apricot fruit spread
1 bunch watercress

Steps:

  • Preheat oven to 400°F. Combine butter, 3 tablespoons prosciutto, 2 1/2 teaspoons rosemary and 1 1/2 teaspoons mustard in bowl. Season with salt and pepper. Run fingers under skin over breast of each game hen, loosening skin from meat. Rub 1 tablespoon butter mixture under skin over breast of each hen. Sprinkle hens inside and out with salt and pepper. Place 1 teaspoons butter mixture in each cavity. Truss hens with kitchen string.
  • Place hens on rack in large roasting pan. Pour 1/3 cup broth over hens. Dot each hen with 1 teaspoon butter mixture. Roast hens 30 minutes, basting with remaining broth and butter every 10 minutes. Continue roasting without basting until juices run clear when thigh is pierced at thickest part, about 30 minutes more. Reserve 1/4 cup pan juices. Cool hens. Cut each hen in half.
  • Mix mayonnaise, apricot spread, remaining prosciutto, rosemary and mustard, and 1/4 cup pan juices in small bowl. (Hens and sauce can be made 1 day ahead. Cover and chill.)
  • Arrange watercress on large platter. Arrange hens atop. Serve with sauce.

Salt to taste if desired
Freshly ground pepper to taste
1 thin slice prosciutto, about 1 ounce
1 sprig fresh rosemary or 1/2 teaspoon dried, chopped rosemary
2 teaspoons olive oil
1 small onion, peeled and cut in half
1/4 cup fresh or canned chicken broth

Steps:

  • Preheat oven to 425 degrees.
  • Sprinkle game hen inside and out with salt and pepper. Stuff the cavity with the whole slice of prosciutto and rosemary sprig. It is best to truss the hen with string or skewers.
  • Rub oil over outside of hen and arrange it on one side in a baking dish. Scatter onion halves, liver and gizzard around the bird. Place dish in the oven and bake 15 minutes. Turn it to the other side and cook 15 minutes, basting often.
  • Remove hen and pour off the fat from the dish. Place hen breast side up in the dish and pour broth around it. Place in oven and continue baking 10 minutes. Remove and discard trussing string and serve.

Another perfect small-kitchen, busy-life holiday dinner for two: individual roast birds smothered in garlic and rosemary, wrapped in crispy prosciutto, and served with all-Italian white beans.

3 teaspoons olive oil
2 Cornish game hens, about 8 ounces each, backbones removed with kitchen shears, and spread flat.
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh rosemary
2 medium cloves garlic, minced (about 2 teaspoons)
4 thin slices prosciutto di Parma
2 (15-ounce) cans cannellini beans, drained and rinsed

Steps:

  • Preheat the oven to 450°F. Drizzle a rectangular baking dish with 1 teaspoon of olive oil Drizzle each of the hens, front and back, with 1 teaspoon of olive oil each. Season with salt and pepper, and rub all over with the chopped rosemary and garlic. Lay breast-side-up in a single layer in the baking dish, and drape the prosciutto over the top of the chickens. Roast until prosciutto is crisp and breasts register 155°F at their deepest point on an instant read thermometer, 18 to 25 minutes.
  • Take the poussins out of the pan and set aside. Transfer beans to pan and stir to coat in juices. Season with salt and pepper and return to oven until hot, about 5 minutes. Serve beans and hens immediately.

2 Cornish hens (1 *pounds each), quartered
Salt
Freshly ground black pepper
1/4 pound thinly sliced lardo, pancetta or prosciutto, diced
5 cloves garlic, lightly crushed
3 sprigs rosemary
3 dried red chilis, broken
1 cup white wine
1/2 stick butter, cubed and kept cold
1 1/2 ounces thinly sliced prosciutto di Parma, cut into thin strips
1/2 pound arugula
1/3 cup fresh currants
Extra-virgin olive oil
Fleur de sel

Steps:

  • Season the hens with salt and pepper. Spread the lardo in the base of a large skillet set over medium heat. Add 2 of the garlic cloves, and cook, rendering the fat, until the lardo just begins to brown. Discard the garlic.
  • Increase heat to medium-high and add the hens, skin side down. Cook until skin is golden. Add 2 of the rosemary sprigs, the chilies and the remaining garlic. Turn the hens and add * cup of wine. Cover, lower the heat to medium-low and simmer for 6 minutes. Remove the breast pieces and let the legs simmer for another 5 minutes.
  • Meanwhile, make the salad: combine the prosciutto, arugula and currants in a bowl. Sprinkle with 1 tablespoon olive oil and toss to mix. Season with fleur de sel, and add more olive oil, if needed.
  • Remove the lid from the skillet and discard the rosemary. Return the breasts, skin side up to the skillet and pour in the remaining wine. Boil down the juices and baste the hen parts for 1 minute. Pull the pan off the heat, add the butter and swirl to incorporate it.
  • To serve, sprinkle the hens with rosemary leaves from the remaining sprig, spoon over a little sauce and accompany each piece with some salad.

1 Cornish game hen (20 to 24 ounces), split lengthwise
1/2 medium lemon, cut into wedges
2 fresh rosemary sprigs
1 tablespoon olive oil

1/8 teaspoon pepper
10 garlic cloves
2 tablespoons chicken broth
1/4 cup white wine or additional chicken broth

Steps:

  • Preheat oven to 450°. Place hens, breast side up, over lemon and rosemary in an ungreased 11x7-in. baking dish. Brush with oil and sprinkle with salt and pepper. Add garlic to pan. Bake, uncovered, 20 minutes. Reduce heat to 350°. , Pour broth and wine over hen and bake 10-15 minutes or until a thermometer inserted in thigh reads 180°, basting twice with pan juices. Remove hen to serving plates and keep warm., Transfer pan juices to a saucepan. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until pan juices reach desired consistency. 4 Cornish hens about 1 lb. each
Salt and freshly ground pepper to taste
4 sprigs fresh rosemary or 2 tablespoons dry
4 garlic cloves peeled
2 tablespoons olive oil
1 medium-size onion peeled and quartered
1/4 cup dry white wine
3/4 cup fresh or canned chicken broth

Steps:

  • Preheat oven to 450 degrees.
  • Rub the hens inside and out with salt and pepper and remove any excess fat inside. Place one sprig of rosemary and one garlic clove in each cavity and truss the hens, if desired.
  • Place the hens in a large metal roasting pan. Brush them with the oil. Arrange the birds on their sides. Scatter the necks, gizzards, hearts, livers and onion around the birds. Place the dish on top of the stove and heat until the oil is sizzling.
  • Place the pan in the oven and bake for 20 minutes, basting occasionally.
  • Turn the birds on the reverse side and cook for 15 more minutes, basting occasionally.
  • Remove all the fat from the dish and add the wine and chicken broth.
  • Reduce the heat to 425 degrees. Place the hens on their backs for a final 10 minutes of cooking. The simmering broth will deglaze the pan as the birds roast, making a gravy. Remove from the oven and pour the cavity juices, including the rosemary and garlic, into the pan. Remove the rosemary and the trussing string, and let the hens rest in a warm place for 5 minutes before carving. Serve with the giblets and onions, if desired.

I adore garlic so here is yet another recipe using it! I don't know who gave this recipe to me, I found it this weekend in a kitchen drawer! I hope you enjoy it.

4 Cornish hens
4 sprigs rosemary
20 -25 cloves fresh garlic
1 lemon
3 tablespoons olive oil
1/3 cup chicken broth
1/3 cup dry white wine

Steps:

  • Heat oven to 450.
  • Rinse and pat dry game hens.
  • Season cavities lightly with salt& pepper.
  • Cut lemon into 4 wedges.
  • Place 1 wedge inside each hen along with 1 sprig of the rosemary and 1 clove peeled garlic Rub outside of hens with 1 tbl of oil.
  • Season outside of hen lightly with salt& pepper.
  • Place hens in pan placing peeled garlic around all.
  • Roast hens for appx 25 minutes at 450.
  • Reduce temp to 350 and pour wine, broth and remaining oil over hens.
  • Continue to cook for about 25 minutes (or until juice from thickest part runs clear) Be sure to baste about every 10 minutes in this final cooking time.
  • Remove hens from pan and pour remaining juices as well as any juices from the cavities into medium saucepan Boil juices about 6 to 8 minutes (or until desired consistency).
  • Arrange hens on plates and spoon sauce and garlic over and around each, add additional rosemary as a garnish if you like.
  • The 4-8 servings is that you can cut the hens in half to double the servings.
  • This goes very well with a light salad and rice pilaf (and of course a glass of wine).
