Cody's Chili Corn Bread Casserole Recipe - (4.3/5) image

Provided by kayjayjohnson

Number Of Ingredients 11

1 lb. hamburger, browned, (drained)
1/2 cup chopped onion
1 can diced tomatoes (do not drain)
2 (15 oz) cans Bush's chili beans
1/2 - tsp. onion powder
3 - tsp. chili powder
1/2 - tsp. garlic salt
salt & pepper
1 cup shredded cheddar cheese
1/2 cup additonal cheddar cheese for batter (optional)
(2) - packages Jiffy Corn Muffin

Steps:

  • Mix Brown hamburger with onion and drain. Add Tomatoes, chili beans and seasonings. Simmer for 15 minutes. Put into greased 9x13 pan and sprinkle cheddar cheese on top. Mix corn bread mix according to box directions. (I add some cheese to the corn muffin mix before pouring it on top) Pour corn muffin mix on top of the chili and cheese cover completely. Bake at 400 degrees for 25 minutes or until golden brown. * I use a packet of chili seasoning mix and omit all the spices. Add about a 1/4 cup of additional water to the meat mixture.

Yield 6 servings

Number Of Ingredients 13

1 tablespoon vegetable oil
1 medium onion, chopped
1 1/2 pounds lean ground beef
1 1/2 cups mild salsa (medium or hot if preferred)
One 12-ounce bag frozen whole-kernel white shoepeg corn, thawed
1/4 cup vegetable broth
2 tablespoons hot Mexican chili powder
1 teaspoon ground cumin
Salt and freshly ground black pepper
Three 8-ounce boxes cornbread muffin mix (Jiffy preferred)
1 1/2 cups whole milk
1 cup shredded Cheddar (about 4 ounces)
1/4 cup sour cream

  • Preheat the oven to 375 degrees F.
  • In a large skillet over medium heat, heat the oil until shimmering, about 2 minutes. Add the onion and saute until soft, about 5 minutes. 2 tablespoons unsalted butter
4 ears corn, kernels cut off
Kosher salt
6 scallions, chopped
3 to 4 cups leftover Slow-Cooker Texas Chili, recipe follows
1 1/2 cups shredded pepper jack or Monterey jack cheese (about 6 ounces)
1 (18-ounce) tube precooked polenta, cut into 12 rounds
2 1/2 pounds beef chuck, cut into 2-inch cubes
2 tablespoons packed light brown sugar
Kosher salt
2 tablespoons vegetable oil
1 small onion, finely chopped
5 cloves garlic, smashed
Two (4.5-ounce) cans chopped green chiles, drained
1 tablespoon ground cumin

  • Spread the chili in an 8-inch-square baking dish. Top with half of the cheese followed by half of the corn mixture. Lay the polenta rounds on top, then sprinkle with the remaining corn and cheese.
  • Bake until the casserole is heated through and the top is golden, about 20 minutes. Let stand 5 to 10 minutes before serving.
