This recipe calls for a batter-like dough and is baked on a pizzelle iron. Powdered sugar adds an elegant touch. In the Italian version, vanilla is replaced by anise. Chocolate may also be used.

3 eggs
¾ cup white sugar
½ cup butter, melted
1 tablespoon vanilla extract
1 ¾ cups all-purpose flour
2 teaspoons baking powder

Steps:

  • In a large bowl, beat eggs and sugar until thick. Stir in the melted butter and vanilla. Sift together the flour and baking powder, and blend into the batter until smooth.
  • Heat the pizzelle iron, and brush with oil. Drop about one tablespoon of batter onto each circle on the iron. You may need to experiment with the amount of batter and baking time depending on the iron. Bake for 20 to 45 seconds, or until steam is no longer coming out of the iron. Carefully remove cookies from the iron. Cool completely before storing in an airtight container.
  • For chocolate pizzelles, add 1/4 cup cocoa sifted together with flour and baking powder, 1/4 cup more sugar and 1/4 teaspoon more baking powder. I find that for the chocolate mixture, the iron must be well oiled to start and then brush on more as needed.

3 large eggs
3/4 cup sugar
1/2 cup butter, melted and cooled
1 tablespoon pure vanilla extract
1 3/4 cups all-purpose flour, sifted
2 teaspoons baking powder

Steps:

  • Beat eggs and sugar in a mixing bowl for approximately 2 to 3 minutes, until they're fluffy and a light yellow color.
  • While still beating, slowly drizzle in the melted and cooled butter. Then add the vanilla extract.
  • In a separate bowl, whisk the baking powder into the flour. Using a spatula, fold the dry ingredients into the wet ingredients until just incorporated.
  • Bake one medium cookie scoop of batter (about 1 1/2 tablespoons) per mold in a pizzelle maker until golden brown, about 30 seconds. Remove with a wooden spatula to a cooling rack and cool completely.
  • Dust cooled pizzelles with powdered sugar, as desired.

Chocolate Pizzelles:
6 eggs
3 1/2 cups all-purpose flour
1 1/2 cup sugar
2 Tbsp. vanilla or anise (I use 4)
1 cup margarine, melted (do not use more or substitute oil)
4 teaspoon baking powder
1/2 cup cocoa
1/2 cup sugar
1/2 tsp. baking powder

Steps:

  • Beat eggs, adding sugar gradually. Beat until smooth. Add cooled margarine and vanilla or anise. Sift flour and baking powder. Blend into egg mixture until smooth. Dough will be sticky enough to be dropped by spoon. Bake in Pizzelle Baker. Makes approximately 60 pizzelles. VARIATION: Pizzelles with nuts. Finely chop one cup of walnuts or pecans. Blend into dough. Chocolate Pizzelles: Sift cocoa, additional sugar and baking powder into dry ingredients for classic pizzelles. Blend into egg mixture until smooth . Makes approx. 60 pizzelles. Serving Hint: Pizzelles provide the base for a delicious ice cream sandwich. Can also be rolled and filled with desired fillings for a perfect dessert.

1 1/2 cups granulated sugar
2 tablespoons vanilla extract or 2 tablespoons anise flavoring
1 cup melted margarine, cooled
3 1/2 cups all-purpose flour
4 teaspoons baking powder
1/2 cup cocoa
1/2 cup sugar
1/2 teaspoon baking powder

Steps:

  • Beat the eggs, adding sugar gradually. Beat until smooth. Add cooled margarine and vanilla extract or anise flavouring.
  • Sift the flour and baking powder. Blend into the egg mixture until smooth. Dough will be sticky enough to be dropped by spoon.
  • Heat Pizzelle maker. Grease a small cookie scoop with cooking spray. Scoop the cookie dough and place just past the centre of the form towards the back of the maker. Lock and set a timer for 26 seconds. Cook longer if you like them darker.
  • Remove to a cooling rack.
  • Chocolate Pizzelles: Sift cocoa, additional sugar and baking powder into dry ingredients for Classic Pizzelles. Blend into egg mixture until smooth.
