Cherry Tomato Couscous Salad image

This fresh mediterranean couscous salad recipe is packed with raw & roasted cherry tomatoes, feta, chickpeas & herbs. Perfect for a picnic or packing for lunch! I like to roast the tomatoes in advance for quicker assembly.

4 cups cherry tomatoes ((half for roasting, half raw))
Extra-virgin olive oil (for drizzling)
1 cup dry Israeli couscous
1 tablespoon lemon juice (more if desired)
1 garlic clove (minced)
Leaves from 6 sprigs fresh thyme (more for garnish)
1½ cups roasted chickpeas (tossed with 1/4 teaspoon smoked paprika before roasting)
¼ cup fresh basil (more for garnish)
2 Persian cucumbers (thinly sliced)
⅓ cup crumbled feta cheese
Sea salt and freshly ground black pepper

Steps:

  • Roast 2 cups of the cherry tomatoes according to this recipe. These can be made in advance and stored in the fridge for a few days.
  • Cook the couscous according to the package directions until al dente, about 9 minutes. Drain and set aside to cool.
  • In the bottom of a large bowl, combine 1 tablespoon of olive oil, the lemon juice, garlic, thyme, ¼ teaspoon salt, and several grinds of black pepper. Add the cooled couscous and toss. Slice the remaining raw cherry tomatoes in half and add them to the bowl with the roasted tomatoes, the chickpeas, basil, cucumbers, and feta. Top with more fresh herbs and a generous drizzle of olive oil. Season to taste.

2 teaspoons honey
½ teaspoon minced garlic

4 cups cherry tomatoes (halved)
¼ cup chopped fresh oregano

Steps:

  • In a large bowl, combine the olive oil, balsamic vinegar, Dijon mustard, honey, garlic, salt and pepper.
  • Add the tomatoes and the oregano and toss to combine. Taste and adjust seasonings as needed.

Mixed Greens with Roasted Cherry Tomatoes and Fried Goat Cheese Croutons image

1 cup cherry tomatoes, halved
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 cup pecans
6 to 8 cups mixed greens
1 ripe pear, such as D'anjou, cored and sliced into 1/4-inch slices
1/4 cup champagne vinegar
1/4 cup freshly squeezed orange juice
1 teaspoon honey
1 teaspoon country Dijon mustard
1 small shallot, finely chopped
1/2 cup olive oil
Kosher salt and freshly ground black pepper
3/4 cup vegetable oil
One 8-ounce log goat cheese
1/4 cup all-purpose flour
1 large egg, slightly beaten
3/4 cup panko breadcrumbs

Steps:

  • For the salad: Place the tomatoes on a baking sheet, drizzle with some olive oil and sprinkle with salt and pepper. Roast until tender and starting to brown, about 20 minutes. Let cool.
  • Meanwhile, toast the pecans in a large skillet over medium heat, tossing occasionally, until fragrant, 3 to 4 minutes. Let cool, then chop.
  • For the vinaigrette: Whisk together the champagne vinegar, orange juice, honey, Dijon and shallot in a medium bowl. Slowly whisk in the olive oil; season with some salt and pepper.
  • For the goat cheese croutons: Heat the vegetable oil in a medium skillet over medium-high heat. Slice the goat cheese into 8 equal rounds. Add to 3 shallow dishes, the flour, egg and panko. Coat each goat cheese round with flour, then egg and then panko, shaking off excess, and fry until golden on both sides, about 1 minute per side. Transfer to a paper-towel lined rack or plate.
  • To assemble the salad, toss the greens, pear, pecans and tomatoes in a large bowl. Drizzle with some vinaigrette and gently toss to fully combine. Divide the salad among 4 salad plates, top each with 2 goat cheese croutons, and serve.

WINTER SALAD WITH ROASTED CHERRY TOMATOES



Winter Salad with Roasted Cherry Tomatoes image

Vine-ripened tomatoes are roasted to intensify their flavor, and then tossed with lettuce, endive, walnuts and Pecorino Romano.

10 ounces (about 1 pint) cherry tomatoes (or substitute grape tomatoes)
6 tablespoons extra-virgin olive oil
3 tablespoons balsamic vinegar
Coarse salt and freshly ground pepper
1 stem fresh rosemary
9 cups torn mixed red lettuce, such as red leaf, lola rossa, red Boston, and red oak
2 heads Belgian endive, cut lengthwise into very thin strips
1/2 cup walnuts, toasted
Shaved Pecorino Romano cheese, for serving

Steps:

  • Preheat oven to 350 degrees. Place tomatoes on a rimmed baking sheet. Add 2 tablespoons oil, 1 tablespoon vinegar, 1/2 teaspoon salt, 1/4 teaspoon pepper, and the rosemary, and toss. Roast until tomatoes are soft and beginning to collapse, 20 to 25 minutes. Transfer all but 4 tomatoes to a small bowl. With the back of a spoon, gently crush remaining 4 tomatoes on baking sheet. Separate skins from pulp, and discard skins and rosemary.
  • Scrape tomato pulp and liquid into a bowl. Add remaining 2 tablespoons vinegar. Add remaining 1/4 cup oil in a slow, steady stream, whisking until emulsified. Season with salt and pepper.
  • Combine lettuce, endive, and walnuts in a large bowl. Toss with 1/4 cup of the tomato vinaigrette. Top with reserved tomatoes and cheese. Drizzle with remaining dressing. Serve immediately.

This Roasted Cherry Tomato Caprese salad is certain to become a favourite. It is light, full of flavour and so easy to make. You can serve it as an appetiser or as a side dish. Don't miss the opportunity to mop up the delicious juices with some crusty bread.

500 g cherry tomatoes (I used heirloom )
3 cloves garlic , crushed (See Note 1)
1/4 cup extra virgin olive oil (See Note 2)
1 tsp sugar (See Note 3)
1/2 tsp dried oregano
1/4 tsp sea salt flakes (See Note 4)
150 g fresh mozzarella ball, torn into pieces (See Note 5)
1/4 cup fresh basil leaves
sea salt flakes to taste

Steps:

  • Preheat your oven to 180 Degrees C (355F).
  • Wash and dry the tomatoes, halve any that are large. Pierce the whole tomatoes with the tip of a sharp knife. It will prevent them from bursting in the oven.
  • Place the tomatoes in a medium-size bowl.Add the crushed garlic, olive oil, sugar, dried oregano and salt and toss together.
  • Turn onto a rimmed baking tray and place in the preheated oven.Bake the tomatoes for about 30 minutes or until they begin to caramelise.Remove the tray from the oven and set aside to cool.
  • When cool, remove the crushed garlic. Arrange the tomatoes on a serving platter with the torn mozzarella and the basil leaves. Pour the roasting juices over the tomatoes.
  • Add a sprinkle of good quality sea salt flakes just before serving.Serve as an appetiser with crusty bread to mop up the juices, or serve as a side dish - See Note 6.Also delicious served with a drizzle of our Balsamic Glaze.

My mom always made this salad for Christmas dinner, so it's been a family favorite for many years. I teach special education at the high school level and often incorporate cooking into my lessons. Whenever we make this recipe at school, it's always a hit with the students.

1 cup fresh orange pieces
1 cup fresh tangerine pieces or 1 can (11 ounces) mandarin oranges, drained

2 tangelos, peeled and sliced into 1/4-inch rounds
2 tablespoons thinly sliced flat-leaf parsley leaves

Steps:

  • Preheat oven to 400 degrees.
  • In a medium bowl, toss tomatoes with 2 tablespoons olive oil; season with pepper. Place on a baking sheet and transfer to oven. Roast until soft and blistered, about 20 minutes. Remove from oven and let cool slightly.
  • Arrange tangelos on each of four small plates; top with roasted tomatoes and parsley leaves. Season with pepper and drizzle with remaining 2 teaspoons olive oil. Serve.
