1 cup water
¼ cup soy sauce
5 teaspoons packed brown sugar
1 tablespoon honey, or more to taste
½ teaspoon ground ginger
¼ teaspoon garlic powder
2 tablespoons cornstarch
¼ cup cold water

Steps:

  • Combine 1 cup water, soy sauce, brown sugar, honey, ginger, and garlic powder in a saucepan over medium heat. Cook until nearly heated through, about 1 minute.
  • Mix cornstarch and 1/4 cold water together in a cup; stir until dissolved. Add to the saucepan. Cook and stir sauce until thickened, 5 to 7 minutes.

1/2 cup mirin (Japanese cooking wine)
1/2 cup sugar
1 pinch ginger
2 tablespoons honey
1 teaspoon salt
1 minced garlic clove

Steps:

  • Heat all ingredients in a pot.
  • Bring to a boil, then reduce heat and simmer to thicken the sauce. (about 15 minutes).
  • Remove from heat and cool.
  • This sauce can be stored in an air-tight jar in the refrigerator.

1/2 cup soy sauce
1/2 cup mirin
2 tablespoons sugar (to taste)
Optional: 1 teaspoon ginger root (chopped)
Optional: 1 teaspoon garlic (chopped)

Steps:

  • Gather the ingredients.
  • In a small saucepan, combine soy sauce, mirin, and sugar. Add more sugar, if desired.
  • If you are using the optional fresh ginger root and/or garlic, slice or chop the ginger and garlic and add it to the other ingredients. Over medium-high, heat skillet while stirring the mixture well.
  • Lower heat to medium and bring sauce to a boil, then turn down the heat to low. Simmer sauce for a few minutes until it reduces slightly.
  • Remove pan from heat and allow teriyaki sauce to cool.
  • If you added ginger root or garlic to the sauce, strain the sauce to remove the ginger and garlic pieces using a strainer.

1 Granny Smith apple, cored and chopped

Steps:

  • In a saucepan, combine soy sauce, mirin, orange juice, pineapple, Granny Smith apple, garlic, ginger, and half of the sugar; bring to a boil. Reduce heat, and simmer 20 minutes. Adjust sweetness to taste with remaining sugar. Strain through a fine mesh sieve; cool.

1/4 cup soy sauce
1 cup water
1 teaspoon fresh ginger
2 medium fresh garlic cloves
1/3 cup packed brown sugar
2 tablespoons honey
2 tablespoons cornstarch
1/4 cup cold water
1 tablespoon sesame seeds (optional)
1/4 teaspoon togarishi pepper (optional)

Steps:

  • Mix all but sesame seeds. togarishi, cornstarch and 1/4c water in a sauce pan and begin heating.
  • Mix cornstarch and cold water in a cup and dissolve. Add to sauce in pan.
  • Heat until sauce thickens to desired thickness.
  • Add togarishi and sesame seeds (can substitute dash of ground red pepper if togarishi unavailable - they have several blends of togarishi at most Asian Markets and all Japanese Grocers). Leave out togarishi/peppers if desired.
  • Add water to thin if too thick.
