Just in time for Cinco de mayo, this is a very easy dish.

Number Of Ingredients 11

1 lb hambuger meat (ground beef)
1/4 tsp salt and pepper
1/4 tsp chilli powder
1 can(s) cream of mushroom soup
1 can(s) water.
1 small onion diced
1 can(s) rotel (or any brand of tomatoes and green chillis)
1 bag taco or nacho cheese chips
1 lb grated cheddar cheese
1 can(s) sliced black olives
1 medium fresh tomato (diced)

Steps:

  • 1. Brown meat with onions, add seasoning to taste Heat soup,rotel and water in saucepan.
  • 2. In large casserole alternate begining with half each of chips,hamburger, olives soup mixture and cheese and then repeat, LAST FIVE MINUTES OF BAKING ADD FRESH TOMATO' AND A FEW BLACK OLIVES.
  • 3. Bake at 375 degrees for 30 minutes. Can serve with sour cream,guacamole, salsa.

When I wasn't able to get to the market for Cinco de Mayo, I came up with this recipe. You can use fresh corn and bell peppers. There is certainly room for improvements, but I was impressed with the flavors. Serve with a great salad with Salsa Ranch dressing.

1 teaspoon ground cumin
1/2 teaspoon onion powder
1 teaspoon paprika
1 tablespoon chili powder
1 tablespoon salt
1 lb chicken tenders, cut into cubes
3 tablespoons olive oil, divided
1 small red onion, dice
1 cup frozen bell pepper, thawed
2/3 cup frozen corn, thawed
2 garlic cloves, chopped
1 chipotle chile in adobo, chopped sauce reserved
1 tablespoon reserved adobo sauce
3/4 rice
1 1/4 cups chicken broth
3 ounces cream cheese
2 tablespoons sour cream
1/2 cup chunky salsa
1 cup shredded cheddar cheese, divided
1 (6 ounce) box cornbread mix

Steps:

  • Preheat oven to 350°F Lightly coat a 13x9 in baking dish with cooking spray.
  • In a medium bowl combine cumin, onion powder, paprika, salt, and chili powder. Add chicken and toss to coat. Set aside.
  • Heat a 12 inch saute pan over medium high heat and add 2 tbls oil. Saute red onion for 3 minutes. Add corn and bell peppers saute 5 minutes then add garlic. Saute until lightly browned, about 3 minutes more. Remove from pan and set aside.
  • In same pan over medium low heat add chipotle pepper, adobo sauce, remaining olive oil, and rice. Saute rice until sauce and oil are absorbed.
  • Add chicken broth, cream cheese, sour cream, and salsa. Heat to a simmer then add veggie mix. Cook for 5 minutes or until heat through and the cream cheese is incorporated.
  • Prepare corn bread as directed on package. Add 1/4 cup shredded cheese.
  • Add chicken to rice mixture and gently stir. Spoon chicken and rice into baking dish and top with remaining cheese. Spoon corn bread mix over the top of the cheese and spread evenly.
  • Place in oven for 35 minutes or until corn bread, tested with a toothpick comes out clean.

A great mexican dish for any occasion. Use whatever level of salsa your tongue can handle. I first learned how to make this when I was about 14 so anyone can do it and it always tastes phenominal!

6 boneless skinless chicken breast halves
1 (16 ounce) jar salsa
1 cup light sour cream
1/2 cup half-and-half
10 corn tortillas
1 lb cheddar cheese
1/2 cup parmesan cheese

Steps:

  • Half fill a 4-5 quart pan with water and bring to a boil over high heat, turn burner off and carefully add the chicken and cover, let stand about 20 minutes.
  • Preheat oven to 350.
  • Mix together sour cream and half and half in a bowl until well blended, set aside in fridge.
  • Shred the cheddar cheese, set aside.
  • Stack the tortills and cut them into 1 inch strips vertically then cut them in half horizontally, set aside.
  • Make sure chicken is cooked throughout, if not, return to the pan for 10 more minutes.
  • When chicken is done, cut each breast into small bite size pieces.
  • Place half the chicken in a 9x13 in baking pan.
  • Spoon half the jar of salsa over the chicken.
  • Spoon half the sour cream mixture over the chicken, spread around so that the sour cream and salsa coat the chicken and cover the bottom of the pan evenly.
  • Sprinkle half the cheddar cheese over the chicken.
  • Place the tortilla strips evenly over the chicken.
  • Place the remaining chicken on top of the tortillas, then spread remaining salsa and sour cream mixture on top.
  • Sprinkle remaining cheddar cheese over chicken.
  • Top evenly with remaining tortilla strips so that the tortilla strips cover the whole top.
  • Cover pan with foil and fold foil around the edges to seal it.
  • Bake about 40 minutes.
  • Remove from oven, remove the foil and discard, sprinkle Parmesean cheese evenly over the top and place back in the oven for 5 minutes, until cheese is golden.
  • Cool 10 minutes before serving.

1/2 c cornmeal
1 tsp salt
4 c cold water
2 Tbsp butter
1 c sharp cheddar cheese, grated
5 c double-header chili, recipe follows
1 sour cream
2 c romaine lettuce leaves
1 c sharp cheddar cheese, grated
2 plum tomatoes chopped
2 green onions, chopped
1/2 avocado, chopped
1/2 c sliced ripe olives, drained
4 lb boneless beef chuck, cut in 1
6 c chopped onions
1 bottle beer
1/2 c chili powder
6 Tbsp tomato paste
2 Tbsp jalapeno chile peppers, seeded and finely chopped
2 Tbsp minced garlic
2 1/2 tsp salt
1 tsp pepper

Steps:

  • 1. This dish is a hearty chili turned into a party dish by adding a cornmeal layer and a garnish of cut-up veggies.
  • 2. Prep time: 30 minutes plus cooling; Cooking time: 25 minutes
  • 3. Cornmeal layer: whisk cornmeal, salt and water together in large saucepan.
  • 4. Bring to boil over medium-high heat, whisking constantly.
  • 5. Cook until thickened, 1-2 minutes.
  • 6. Remove from heat and stir in butter and cheese until melted.
  • 7. Immediately pour cornmeal mixture into shallow 3-quart casserole.
  • 8. Cool until firm, 30 minutes. (Can be made ahead.)
  • 9. Cover and refrigerate chili and cornmeal layers separately.
  • 10. Assemble casserole, cover and bake in preheatd 375 oven 1 hour or until heated through.
  • 11. Preheat oven to 375.
  • 12. Spread top of casserole with chili.
  • 13. Cover and bake 25 minutes or until heated through.
  • 14. Garnish with toppings. Makes 8 servings.
  • 15. Double-Header Chili: A no-fuss feast that makes 2 meals, with or without beans.
  • 16. Prep time: 10 minutes. Cooking time: 2 to 2-1/2 hours.
  • 17. Preheat oven to 325 and combine all ingredients in heavy dutch oven.
  • 18. Cover tightly and cook 2 to 2-1/2 hours, until meat is very tender.
  • 19. (Can be made ahead. Cover and refrigerate up to 3 days or freeze up to 1 month.)
  • 20. Makes 11 cups.
  • 21. CHILI with BEANS: Combine 5-1/2 cups chili with 1 can (19 ounces) red kidney beans, drained and rinsed, in large saucepan and cook over medium heat until heated through, 10 minutes.
  • 22. Makes 7 cups.
