SPARKLING PEACH BELLINIS

3 medium peaches, halved
1 tablespoon honey
1 can (11.3 ounces) peach nectar, chilled
2 bottles (750 ml each) champagne or sparkling grape juice, chilled

Steps:

  • Line a baking sheet with a large piece of heavy-duty foil (about 18x12 in.). Place peach halves, cut sides up, on foil; drizzle with honey. Fold foil over peaches and seal. , Bake at 375° for 25-30 minutes or until tender. Cool completely; remove and discard peels. In a food processor, process peaches until smooth., Transfer peach puree to a pitcher. Add the nectar and 1 bottle of champagne; stir until combined. Pour into 12 champagne flutes or wine glasses; top with remaining champagne. Serve immediately.

1 1/3 cups lemon juice
1 (64 ounce) bottle peach nectar, chilled
1 bottle Brut champagne, chilled

Steps:

  • Pour 2 tsp lemon juice and 1/4 cup (2oz) chilled peach nectar into one champagne flute.
  • Top with 1/2 (4oz) cup chilled champagne and serve.

One 46-ounce bottle pineapple juice
1 cup sweetened coconut drink, such as Silk or Coconut Dream
1 cup orange juice
24 maraschino cherries
12 pineapple spears
Prosecco or sparkling water, for topping

Steps:

  • Mix the pineapple juice, coconut drink and orange juice in a large pitcher and refrigerate until well chilled. Thread a cherry, pineapple spear and a second cherry on each of 12 decorative cocktail toothpicks; refrigerate until ready to serve.
  • To serve: Fill a champagne flute one-third of the way with the pineapple juice mixture and top up with prosecco or sparkling water. Garnish with a pineapple cherry spear.

4 cups chilled prosecco

Steps:

  • Place raspberries in a blender; cover and process until pureed. Press through a fine-mesh strainer into a bowl; discard seeds. Stir in lemon juice and vanilla., Fill each champagne flute with 2 tablespoons raspberry mixture; top with prosecco. If desired, garnish with mint and fresh raspberries.

3 ripe peaches
2 tablespoons fresh lemon juice
1 bottle (750 ml) chilled sparkling wine, such as Champagne or Prosecco

Steps:

  • Bring a large pot of water to a boil. Prepare an ice-water bath. Score a shallow X in the bottom of each peach with a knife, then place in boiling water 1 minute. With a slotted spoon, transfer peaches to ice-water bath; let cool 1 minute. Peel peaches and remove pits.
  • Puree peaches and lemon juice in a blender until smooth. Divide among six champagne flutes (about 2 tablespoons each). Top with sparkling wine, stir once, and serve.
