½ cup heavy cream
3 tablespoons butter
3 tablespoons brandy

Steps:

  • Melt chocolate, cream, butter or margarine, and brandy together until smooth. Allow to cool a little before spreading liberally over cake.

This ganache makes a super easy frosting that is great for when you have leftover sour cream in the fridge and chocolate chips on hand -- delicious over almond flavored cupcakes!

2 cups semisweet chocolate chips
1 ½ cups sour cream
1 teaspoon vanilla extract

Steps:

  • Place the chocolate chips into a glass or metal bowl, and set over the top of a pan of barely simmering water. Stir occasionally until melted and smooth. Remove from the heat and transfer the chocolate to a medium bowl.
  • Add the sour cream and vanilla; beat with an electric mixture until smooth and creamy. If you let it cool down too much it will set up, so frost your cake while it is still liquid, or reheat before using.

1 cup semisweet chocolate chips

Steps:

  • Pour cream into a microwave-safe bowl; heat in microwave on high until very hot, 1 to 2 minutes. Add chocolate chips to heated cream; whisk until smooth.
  • Place chocolate-cream mixture in the freezer until ganache is cold and starting to thicken, stirring every 5 minutes, about 10 to 12 minutes.
  • Spoon ganache into a resealable plastic bag and refrigerate until completely cooled, 15 to 30 minutes.
  • Cut a corner from the plastic bag and pipe ganache.

9 ounces bittersweet chocolate, chopped
1 cup heavy cream
1 tablespoon dark rum

Steps:

  • Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the rum if desired.
  • Allow the ganache to cool slightly before pouring over a cake. Start at the center of the cake and work outward. For a fluffy frosting or chocolate filling, allow it to cool until thick, then whip with a whisk until light and fluffy.

This should've been posted when I posted my Recipe #160644. I do use this recipe alongside my poundcake, but you can you use this for any cakes, especially if they require layering. I am able to use a type of cream that is called Parave, which means that it is dairy-free (not to mention meat free). This way I can enjoy the cake with its icing at the end of any meal. 15 ounces bittersweet chocolate, broken into bits

Steps:

  • Heat the cream in a medium saucepan over medium high heat to just below a simmer or until it steams and tiny bubbles begin to form around the edges.
  • Remove from heat and add the chocolate piece by piece, stirring as it melts, until blended.
  • Let the mixture cool until it is the consistency of a thick but easily spreadable frosting. This should take only a few minutes.

200g dark chocolate, roughly chopped
300ml double cream
2 tbsp golden caster sugar

Steps:

  • Put the chocolate in a large mixing bowl. Pour the cream into a saucepan with the sugar and bring to a simmer, stirring continuously until the sugar is melted. Bring to the boil, then quickly remove from the heat, pour over the chocolate and whisk until smooth and glossy. Use straight away or leave to cool down a little until thick enough to spread on a cake. Alternatively, leave to cool completely, then beat with an electric whisk until light and fluffy and spread on a cake.
