Chocolate Balls image

This is a peanut butter and graham cracker, chocolate covered treat. My mother made these to send to friends and relatives at Christmas time.

Number Of Ingredients 6

1 cup peanut butter
¾ cup confectioners' sugar
1 cup graham cracker crumbs
2 cups semisweet chocolate chips
3 (1 ounce) squares semisweet chocolate, chopped
1 tablespoon shortening

Steps:

  • In a medium bowl, mix together the peanut butter and confectioners' sugar until smooth. Stir in graham cracker crumbs until well blended. Form the dough into 1 inch balls by rolling in your hands, or by using a cookie scoop.
  • Melt the semisweet chocolate chips, semisweet chocolate squares, and the shortening in the top half of a double boiler. Use a fork to dip the balls into the melted chocolate, and place on wax paper to cool until set.

I'll play with this recipe, add the wine to instruction, maybe even dip in white and dark chocolate coating and sprinkle with colorful candy sprinkles. Number Of Ingredients 6

6 oz semi-sweet chocolate chips
2.5 c vanilla wafer crumbs
1/3 c sweet red wine
1/4 c honey
2 c ground walnuts
granulated sugar

Steps:

  • 1. Heat chocolate chips and honey in 3-quart saucepan over low heat, stirring constantly, until chocolate is melted.
  • 2. Remove from heat.
  • 3. Stir in vanilla wafers, walnuts and wine and shape into 1-inch balls; roll in sugar.
  • 4. Store Chocolate-Wine Balls in tightly covered cookie jar or metal can.
  • 5. Let stand several days to blend flavors. Flavor improves with age up to 4 weeks.

Cocoa-laden no-bake chocolate balls laced with a bold red wine make a delicious and pretty Valentine's Day treat. They're even tastier the next day. These make a nice centerpiece when served in a decorative wine glass.

3 ¼ cups crushed vanilla wafers
¾ cup confectioners' sugar
¼ cup unsweetened cocoa powder
3 tablespoons corn syrup
½ cup full-bodied red wine (Cabernet Sauvignon, Cotes du Rhone, Zinfandel, Shiraz or Barolo)
1 cup red decorator sugar

Steps:

  • In a large bowl, combine the vanilla wafers, confectioners' sugar, cocoa powder, corn syrup and red wine. Mix with a sturdy spoon or your hands until it becomes a uniform dough. Shape into 1 inch balls and roll in red decorator sugar. Store in a covered container in the refrigerator. Allow to come to room temperature before serving.

  • In a small saucepan over low heat, warm the cream just until it begins to boil. Remove cream from heat and add in chopped chocolate. Allow the mixture to sit, untouched, for two minutes, then whisk smooth. Stir in the vanilla and butter and vigorously whisk until smooth and shiny. Finally, whisk in the wine until completely combined.
  • Fill a medium pot one-third full with water and bring it to a low simmer over medium heat. Place a heatproof bowl that will fit on top of the pan snugly, but will not touch the simmering water, on top of the pan. Reduce the heat to low and add two-thirds of the chopped chocolate into the bowl over the pot. Heat until the chocolate is completely melted, stirring occasionally with a rubber spatula. Once the chocolate is completely melted, remove the pan from the heat - keeping the bowl on top of the pan - and stir in the reserved chocolate.
  • Before you begin, make sure you have enough room in your refrigerator for both baking sheets; the truffles must chill before being dipped in the chocolate coating.
