CHOCOLATE CHIP TEA COOKIES
A buttery shortbread-style cookie loaded with mini chocolate chips.

Steps:
- Preheat oven to 350 degrees F. Line two baking sheets with parchment paper; set aside.
- Beat the butter, sugar and salt with an electric mixer on medium speed until fluffy. Add the vanilla and mix well. Reduce the mixer speed to low and gradually add the flour until just combined. Using a rubber spatula, stir in the miniature chocolate chips.
- Shape into 1-inch balls (a small cookie scoop is perfect for this) and place 2 inches apart on the prepared cookie sheets. Bake for 10-12 minutes, or until set but still pale in color. Allow to cool on the sheets for 5 minutes, then remove to wire racks to cool completely. Store in an airtight container at room temperature for up to 2 weeks.

TEA COOKIES I
This recipe makes 30 to 35 cookies. They are delicious, can't eat just one.

Steps:
- Beat together the butter and confectioners' sugar till creamy. Add vanilla.
- Mix the dry ingredients, stir into creamy mixture. Blend well.
- Add the nuts, mix well, roll the dough out into two balls. Wrap in plastic wrap and chill for at least 1 hour in the refrigerator.
- Flatten dough out and cut into 15 or 20 equal size pieces, shape into balls. Place on ungreased cookie sheet.
- Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes till firm but not brown. While still warm roll into confectioners' sugar, let cool and roll again.

CHOCOLATE CHERRY TEA COOKIES
These are very buttery, melt in your mouth cherry-chocolate cookie. They remind me of the Snowballs that I make at Christmas time for my husband. They are certainly dressed for the occasion. This recipe came from a small Christmas cookie magazine by Betty Crocker.

- Drain cherries before chopping. I use a small chopper like the one for nuts to chop them up. It makes it easier. Drain off excess juice once again after chopping.
- Heat oven to 400 F. IN large bowl, beat butter with electric mixer on medium speed until fluffy. Gradually beat in 1/2 cup powdered sugar until light and fluffy. Stir in almond extract. In medium bowl, mix flour and salt. On low speed, beat flour mixture into butter mixture until well blended. Stir in cherries.
- Shape dough into 1-inch balls & place on parchment paper to bake.
- Bake 9 to 11 minutes or until edges just begin to brown. Cool slightly. Measure 1/2 cup powdered sugar into small bowl. Roll each cookie in powdered sugar. Place on cooling rack to cool completely.
- Melt chocolate chips in microwave for 30 seconds. Stir and heat for another 30 seconds. Stir and then use a fork to drizzle chocolate on top of cookies.
MATCHA GREEN TEA CHOCOLATE CHIP COOKIES
Fun twist to the original chocolate chip cookie.

- Preheat oven to 325 degrees F (165 degrees C). Grease baking sheets or line with parchment paper.
- Sift flour, matcha, baking soda, and salt together in a bowl. Beat brown sugar, butter, and white sugar together in a large bowl using an electric mixer until blended; beat in vanilla extract, egg, and egg yolk until light and creamy.
- Mix flour mixture into creamed butter mixture until dough is just blended; fold in chocolate chips using a wooden spoon. Drop cookie dough, 1 heaping tablespoon per cookie, onto the prepared baking sheet 2 to 3 inches apart.
- Bake in the preheated oven until edges are lightly browned, 8 to 10 minutes. Cool cookies on the baking sheet for 2 to 3 minutes before transferring to a wire rack to cool completely.
