Toe's Best Salsa image

This is the best homemade salsa recipe I've ever made. If you love restaurant-style salsa, look no further!

1 white onion, chopped
2 (15 ounce) cans tomato sauce
2 jalapeno peppers
1 serrano pepper
4 cloves garlic
1 lime, juiced
½ teaspoon salt
1 pinch ground black pepper
½ bunch cilantro

Steps:

  • Place the onion in a bowl, and set aside. In a blender, place tomato sauce, jalapeno peppers, serrano pepper, garlic, lime juice, salt, and pepper. Blend well. Place the cilantro into the blender, and pulse several times to chop the cilantro. Do not over blend. Pour the tomato sauce mixture into the bowl with the onion, stir well to combine, and refrigerate at least 1 hour to blend flavors before serving.

Another of my favorites, also out of a newspaper years ago. This is fantastic on steaks cooked on the grill, and as a dressing on baked potatoes. Use your imagination!!! I'm sure this would be just as good with other vegies, and chicken or fish.

3 green onions, thinly sliced
1 1/2 cups grape tomatoes, quartered
3/4 cup blue cheese, crumbled
1/4 cup walnuts, chopped and toasted
1 tablespoon olive oil
1 tablespoon fresh chives, minced

Steps:

  • Combine all the above ingredients in a medium bowl with a fork until ingredients are evenly coated with olive oil.
  • Use to top steak, baked potatoes, whatever!
  • Roquefort cheese is also a fine choice for this salsa.
  • Cooking time is the time it takes to toast the walnuts in the oven. Very quick to put together.

8 1/2-inch-thick slices crusty bread
4 large garlic cloves, halved
3 tablespoons plus 1/3 cup extra-virgin olive oil
1 cup currant or grape tomatoes or halved cherry or pear tomatoes
1/2 cup chopped green onions
10 medium heirloom tomatoes of assorted colors, cored, thinly sliced
1 small red onion, sliced paper-thin
3 celery stalks, sliced thin on diagonal
1 1/2 cups coarsely crumbled blue cheese

Steps:

  • Prepare barbecue (medium-high heat). Rub bread with cut garlic halves; brush bread with 3 tablespoons oil. Combine remaining 1/3 cup oil, currant tomatoes, and green onions in medium bowl; toss to coat. Season with salt and pepper.
  • Overlap tomato slices in concentric circles on platter, alternating colors. Scatter onion and celery slices over tomatoes. Sprinkle with salt and pepper. Spoon tomato and green onion mixture over. Sprinkle with crumbled cheese.
  • Grill bread until golden, about 2 minutes per side. Cut each slice diagonally in half; serve with salad.

pastry dough
250 g plain flour
75 g butter
1 egg
75 ml water, lukewarm
1 pinch salt
1 white onion
1/2 leek, finely diced
1 clove garlic, chopped
3 tablespoons olive oil
250 g ground chicken
1 egg
parsley
chervil
sage
2 tablespoons cream
salt and pepper
1 sourdough bread roll, without crust
150 g blue cheese
4 roma tomatoes or 4 any ripe tomatoes
1 tablespoon balsamic vinegar
1 tablespoon olive oil

Steps:

  • Preheat oven to 200 degrees C.
  • To make the pastry- mix the flour and butter.
  • Add th egg, water and salt.
  • Knead to a dough and rest in a cool place.
  • To make the filling- saute the onion, leek and garlic lightly in olive oil and allow to cool.
  • Combine the chicken mince, egg, herbs and cream, salt and pepper and bread in a food processor and blend.
  • Add to the leek mixture.
  • Cut cheese into small cubes and add to the mixture.
  • Mix well.
  • Roll out the pastry and line a 6 hole muffin tray.
  • Fill with the mixture and re-roll the remaining pastry to fit on the top.
  • Bake until golden brown, about 20 minutes.
  • To make the salsa- dip tomatoes in boiling water for 2 seconds.
  • Peel away skin and blend 2 tomatoes.
  • Chop the remaining ones into cubes.
  • Place in a saucepan, over a moderate heat with the blended tomatoes.
  • Add vinegar and oil.
  • Serve alongside the little pies.

2 (12 ounce) beef sirloin strip steaks, about 1 1/2 inches thick
1 teaspoon salt
fresh ground black pepper
3 green onions, thinly sliced
1 1/2 cups grape tomatoes, quartered
3/4 cup crumbled blue cheese
1/4 cup chopped toasted walnuts
1 tablespoon olive oil
1 tablespoon minced fresh chives
1 whole chives (to garnish) (optional)

Steps:

  • Prepare grill or grillpan for high heat. Season steaks with 1/2 teaspoons of the salt and pepper to taste. Grill until brown on one side, 5 minutes. Turn; grill to desired doneness, about 5 more minutes for medium. Let steak rest 5 minutes.
  • Meanwhile, combine green onions, tomatoes, cheese, walnuts, olive oil, minced chives and remaining 1/2 teaspoons of salt in a medium bowl with a fork until ingredients are evenly coated with olive oil. Serve steak, splitting each steak into 2 servings, topped with salsa and whole chives.
