Ingredients

1 cup semi-sweet chocolate chips
4 tablespoons butter
2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup toasted, finely chopped walnuts
2 eggs
3/4 cup milk
1/2 cup seedless raspberry jam
1 teaspoon vanilla

Steps:

Preheat oven to 350°F.
Spray 9X5-inch loaf pan with nonstick cooking spray; set aside.
Melt chocolate chips and butter in small saucepan over low heat.
Combine flour, sugar, baking soda, baking powder and salt in large bowl.
Add walnuts; mix well.
Lightly beat eggs in medium bowl with wire whisk.
Add milk, spreadable fruit and vanilla; beat until well blended.
Add chocolate and milk mixtures to flour mixture.
Stir just until moistened.
Pour into prepared pan.

Bake 50 to 60 minutes or until toothpick inserted into center comes out clean.
Cool in pan on wire rack 10 minutes.
Remove from pan and cool completely on wire rack.

In a mixer fitted with the paddle attachment, beat together butter and sugar on medium speed for 3-4 minutes until light and fluffy. Scrape down the sides and bottom of the bowl occasionally. Add eggs, one at a time, beating well after each addition. Beat in vanilla extract and lemon zest, if using. On low speed, beat in flour mixture in 3 additions, alternating with the buttermilk/sour cream in 2 additions, starting and ending with the flour. Do not overmix. Fold in raspberries and white chocolate.
Scrape batter into prepared pan and smooth the top. Bake for 45-60 minutes or until a skewer inserted into the center of the cake comes out clean. If the top is browning too fast while baking, cover pan loosely with aluminum foil. Allow cake to cool completely at room temperature.
