CHOCOLATE PEPPERMINT BLOSSOMS
My mom makes these cookies at Christmas time, and they are one of my husband's favorite all-time cookies

Steps:
- Preheat oven to 350°F.
- Cream butter and sugar.
- Add eggs and vanilla and mix well until fluffy.
- Add flour, cocoa, baking soda, and salt. Mix well.
- Refrigerate for about 1 hour until easy to handle.
- Form into 1-inch diameter balls.
- Bake 8-10 minutes until bottoms are firm.
- Remove from oven. Press a kiss into each cookie.
- Transfer cookie sheet immediately to the refrigerator (or kisses will melt) and refrigerate until cool.

- In a mixing bowl, combine the flour (measure this & cocoa powder by spooning into measuring cup and leveling off), cocoa powder, baking powder, and salt. Set aside.
- Cream butter and both sugars together in the bowl of a stand mixer until fluffy. Mix in the egg, egg yolk, and vanilla until smooth. Add the dry ingredients a little at a time while mixing on slow until combined. Mix in the milk until smooth and dough comes together (I only use 1 tablespoon). (If you chose to use a total of 3/4 cup butter and your dough it difficult to roll, refrigerate for 1-2 hours.)
- Roll dough into 1 inch balls (about 1 tablespoon) and then roll in the 1/4 cup sugar. Place 2 inches apart on a baking sheet (preferably lined with a Silpat mat). Bake for 10 minutes.

- Preheat oven to 350°. Mix together the cake mix, eggs and butter. The less mixing the better, and since the butter is melted, you can just use a large spoon to easily mix the cookie dough.
- Use a cookie scoop to scoop out 1 Tablespoon sized balls and then use your hands to make them completely round. If you want to coat them in granulated sugar, you can, but you definitely don't have to. I like the look of the sugar, but it is very subtle and doesn't affect the taste much either.
- Place the cookie dough balls on a baking sheet and bake for 8-9 minutes or until the tops just begin to crack a little bit. As soon as you pull the cookies out of the oven, barely press a Hershey's kiss into the middle of each one. Let cool completely.
