1 1/3 ounces dark chocolate (60% to 70% cacao), finely chopped
24 mini pretzels

Steps:

  • Line a baking sheet with wax or parchment paper. Put the chocolate in a small microwave-safe bowl and microwave 30 seconds. Stir, then microwave 30 more seconds. Stir until the chocolate is melted and smooth. Dip each pretzel halfway into the chocolate, then place on the wax paper. Refrigerate until set, about 15 minutes.

2 cups heavy cream
1 3/4 cups granulated sugar
1 1/4 cups light corn syrup
1/2 cup light brown sugar
6 tablespoons unsalted butter
1 1/2 tablespoons finely ground espresso powder
1 teaspoon vanilla extract
1/2 teaspoon sea salt
2 cups dark chocolate chips, melted
Chocolate wafer cookie crumbles, for garnish

Steps:

  • Lightly spray the bottom and sides of a 9-inch square baking pan with cooking spray. Line the pan with parchment paper, leaving an overhang; lightly spray the parchment with cooking spray. Set aside. Prepare a large heatproof bowl of cold water that will accommodate the bottom of a large heavy saucepan.
  • Place the cream, granulated sugar, corn syrup, brown sugar, butter and espresso powder in a large, heavy saucepan. Bring the mixture to a light boil over medium-high heat, stirring until the sugars have dissolved and the butter is melted. Reduce the heat to medium and cook, stirring occasionally, until the caramel is thick and bubbling and reaches a temperature of 245 degrees F on a candy thermometer.
  • Remove the saucepan from the heat and immediately stir in the vanilla and salt. Cool the caramel to room temperature by placing the bottom of the pan in the prepared water bath.
  • Pour the caramel into the prepared baking pan and let stand, uncovered, until set, at least 8 hours.
  • Lift the caramel out of the pan using the parchment overhang, and slice into 1-inch cubes.
  • To finish, dip the bottom half of each caramel into the melted chocolate. Top with cookie crumbles. Set aside until set, about 30 minutes

2 pounds good-quality bittersweet chocolate, chopped into bean-size pieces (by hand or in a food processor)
Pretzels, graham crackers, dried fruit or anything, for dipping

Steps:

  • Melt 1 1/2 pounds chocolate in top of a double boiler (or clean metal bowl set over simmering water). Remove chocolate from heat when it reaches between 110 and 115 degrees F on a candy thermometer.
  • To bring into tempering range, add remaining chocolate to the mixture and stir constantly with a rubber spatula until the thermometer registers 82 to 84 degrees. Put chocolate back over the hot water and bring temperature to between 88 and 91 degrees. Be careful not to let the temperature fall too far or you will have to gently re-warm the mixture; if the temperature rises above 91 degrees in the tempering step, you will have to start the process over.
  • Once tempered, use immediately for dipping. Store tempered chocolate at room temperature.

  • Prepare: Preheat oven to 375ºF (190ºC). If using a madeleine pan that is not non-stick, brush the pan with melted butter or spray liberally with cooking spray then coat the pan cavities with sifted cocoa powder. Turn the pan over and tap out the excess cocoa powder. Repeat this a second time to ensure the madeleines do not stick. If using a nonstick pan, you can skip this step. Set pan aside
  • Combine Dry Ingredients: Lay out a large piece of parchment paper on your counter. Using a sifter or fine-mesh strainer, sift together the flour, cocoa powder, and baking powder. Repeat the sifting of these ingredients to ensure they are well blended. To do this, place your sifter or fine-mesh strainer over a large bowl, pick up the parchment paper by the long edges and fold in half over the sifter/strainer, so the dry ingredients are now sifted into the bowl. Set aside
  • Whisk Wet Ingredients: Add eggs, sugar, and vanilla to the bowl of a stand mixer fitted with the whisk attachment. Start out on low speed, gradually increasing to medium speed as the ingredients begin to combine. Whisk at medium speed for 2 minutes, stopping to scrape the sides and bottom of the bowl with a spatula. Turn the mixer on and bring to full speed, whisking for 8-10 minutes until the mixture is very light in color and the ribbon stage has been achieved. This means that when you lift the whisk out and form a shape with the batter, the shape remains present for 3 seconds. If you are in doubt about whether or not ribbon stage has been achieved, keep whisking for another minute or two. It’s very difficult to over whisk, so keep going until you’re sure ribbon stage has been achieved.
  • Fold in Dry Ingredients & Melted Butter: Carefully fold in ⅓ of the dry ingredients to the egg/sugar mixture. Once it’s incorporated, fold in half the melted, cooled butter. Repeat this by folding in ⅓ of the flour, followed by the second half of the butter and finishing by folding in the final ⅓ of the flour. Don’t overwork the batter, but make sure no flour streaks present in the batter.
