STIR-FRIED BEEF CURRY

Stir-Fried Beef Curry image

Easy and delicious. Curry is not traditionally a Chinese spice, but it adds a hint of exotic, subtle flavor to this dish. This can be a filling dinner for 2 on it's own or can be served as part of a multi-course Chinese-style dinner. It matches well with vegetables, especially string beans or broccoli.

CURRY STIR-FRY

Curry Stir-Fry image

A great dinner stir-fry that's easily adjustable for how many people you have that night. Increase or decrease the curry powder to meet your tastes. I've also added a few dashes of cayenne pepper for those that like it extra spicy.

STIR-FRIED CURRY BEEF

Stir-Fried Curry Beef image

This stir-fry has only curry powder in common with the stews that are usually labeled curries. Unlike those, this is quick and easy. Serve it over steamed rice. Other cuts of meat you can use here: pork, preferably from the shoulder or leg (fresh ham); lamb, preferably from the shoulder or leg; boneless chicken; shrimp (which will cook much faster).

Yield makes 4 servings

Number Of Ingredients 10

1 pound boneless beef, preferably sirloin, cut into 1/2-inch slices across the grain
1 tablespoon soy sauce
1 tablespoon Shaoxing wine, dry sherry, stock, or water
1 teaspoon sugar
2 tablespoons corn, grapeseed, or other neutral oil
2 garlic cloves, minced
One 1 1/2-inch piece fresh ginger, peeled and minced
1 small onion, sliced
3 tablespoons curry powder, preferably homemade (pages 592-593)
Chopped fresh cilantro leaves for garnish

Steps:

  • Mix the beef with the soy sauce, wine, and sugar. Set aside.
  • Heat the oil in a skillet with a lid over medium-high heat. Add the garlic, ginger, and onion and cook until the onion is softened, about 5 minutes. Stir in the curry powder and cook until fragrant, about 30 seconds.
  • Add the beef and cook, stirring occasionally, until browned. Add 1/4 cup water to the skillet and continue to cook, stirring occasionally, for another 2 minutes or so. Garnish and serve immediately.

THAI STIR-FRY BEEF CURRY

Thai Stir-Fry Beef Curry image

After having my first and most delicious Thai meal, I was on the hunt for recipes to make at home. I found this recipe in a beautiful book called, appropriately, "Beautiful Thailand". As with all curry dishes you will want to adjust the heat to your tastes. I find 1 tablespoon of curry paste to be more than sufficient to clear a sinus cold so you may want to start with 1/2 tablespoon. Have fun!
