Chocolate Chip Oatmeal Shortbread Cookies are delicate, flaky & buttery. This easy recipe uses 6 basic ingredients that you probably already have on hand!

6 1/4 ounces all-purpose flour ((approximately 1 1/4 cup) )
1/2 teaspoon kosher salt
6 ounces unsalted butter, cubed and at room temperature
2 ounces confectioners' sugar ((scant 1/2 cup) )
1 teaspoon pure vanilla extract
3/4 cup old-fashioned rolled oats
1 cup semi-sweet or bittersweet chocolate chips

Steps:

  • In a small bowl, whisk together the flour and salt. Set aside.
  • In a stand mixer fitted with the paddle attachment, cream the butter and sugar on medium-high speed for 3-5 minutes, until light and fluffy. Turn the mixer speed down to low. Add the vanilla, followed by the flour mixture and the oatmeal. Once the ingredients are incorporated, turn off the machine and scrape down the sides. With the mixer on low speed, slowly add the chocolate chip. Once they've been added, turn off the mixture and stir the dough a few times with a spatula to make sure the chips are evenly incorporated.
  • Line a baking sheet with parchment paper. Using a 1-tablespoon cookie scoop, portion out the dough evenly onto the baking sheet. Once all of the dough has been portioned out, use the palm of your hand to flatten the cookies into discs. Chill the dough for 30 minutes.
  • Preheat the oven to 350 degrees F. The cookies won't spread out too much, but space them out by approximately 1 inch. Bake for 10-15 minutes or until lightly golden on top. Allow to cool to room temperature.

Use this perfect oatmeal cookie as the base for other add-ins such as raisins, dried cranberries, and nuts. Cinnamon and a touch of molasses add that little something extra. These are the best oatmeal chocolate chip cookies!

1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
1 teaspoon ground cinnamon (optional)
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
1 cup (200g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
2 large eggs, at room temperature
1 Tablespoon unsulphured or dark molasses*
2 teaspoons pure vanilla extract
3 cups (240g) old-fashioned whole rolled oats
1 and 3/4 cups semi-sweet chocolate chips*

Steps:

  • Whisk the flour, cinnamon, baking soda, and salt together in a medium bowl. Set aside.
  • In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed until smooth, about 1 minute. Add the brown sugar and granulated sugar and beat on medium-high speed until creamed, about 2 minutes. Add the eggs, molasses, and vanilla and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, beat in the oats and both types of chocolate chips. Dough will be thick and sticky. Cover and chill the dough for at least 45 minutes in the refrigerator (and up to 4 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.
  • Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • Use a large cookie scoop to scoop the cookie dough, about 3 Tablespoons of dough per cookie, and place 4 inches apart on the baking sheets. Bake for 13-14 minutes or until lightly browned on the sides. The centers will look very soft.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. While the cookies are still warm, I like to press a few more chocolate chips into the tops- this is only for looks!
  • Cookies stay fresh covered at room temperature for up to 1 week.

Steps:

  • Heat oven to 350°F. In large bowl, stir brown sugar and butter until blended. Stir in vanilla and egg until light and fluffy. Stir in oats, flour, baking soda and salt; stir in chocolate chips and nuts.
  • Onto ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
  • Bake 10 to 12 minutes or until golden brown. Cool slightly; remove from cookie sheet to wire rack.

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).

1/2 cup unsalted butter (1 stick), softened to room temperature
1/4 cup sugar
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon salt
1 cup all-purpose flour
1/3 cup mini chocolate chips

Steps:

  • Preheat the oven to 300 degrees F. Cream the butter with the sugar using a handheld mixer. Mix in the rosemary, salt, and flour, 1/4 cup at a time. Sprinkle in the chocolate chips, and stir by hand until well-distributed. Gather the dough into a ball. (If the dough begins to soften or feel greasy, chill the dough for 15 minutes.)
  • Roll the dough out into a rectangle of 1/2-inch thickness and cut into rectangles about 1/2-inch by 2-inches. Place the dough pieces on a cold ungreased baking sheet. Prick the tops with a fork. Bake the shortbread until the dough starts to turn a golden color, about 25 minutes. Remove the shortbread from the baking sheet and let cool completely on a rack.

Mixing by hand turns out cookies that are crisp at the edges and tender in the centers. These can be mixed and baked in under an hour, but the dough balls also can be packed in an airtight container and refrigerated for up to 3 days, or frozen for up to a month. You can bake them from ice-cold, though they'll need a few more minutes to turn golden brown.

Steps:
