CHOCOLATE CHERRY TEA COOKIES

These are very buttery, melt in your mouth cherry-chocolate cookie. They remind me of the Snowballs that I make at Christmas time for my husband. They are certainly dressed for the occasion. This recipe came from a small Christmas cookie magazine by Betty Crocker.

1 cup(s) butter, softened
1/2 cup(s) powdered sugar
1/2 teaspoon(s) almond extract
2 cup(s) all-purpose flour
1/4 teaspoon(s) salt
1 cup(s) candied cherries, finely chopped
AFTER BAKING
1/2 cup(s) powdered sugar
1/2 cup(s) dark chocolate chips

Steps:

  • Drain cherries before chopping. I use a small chopper like the one for nuts to chop them up. It makes it easier. Drain off excess juice once again after chopping.
  • Heat oven to 400 F. IN large bowl, beat butter with electric mixer on medium speed until fluffy. Gradually beat in 1/2 cup powdered sugar until light and fluffy. Stir in almond extract. In medium bowl, mix flour and salt. On low speed, beat flour mixture into butter mixture until well blended. Stir in cherries.
  • Shape dough into 1-inch balls & place on parchment paper to bake.
  • Bake 9 to 11 minutes or until edges just begin to brown. Cool slightly. Measure 1/2 cup powdered sugar into small bowl. Roll each cookie in powdered sugar. Place on cooling rack to cool completely.
  • Melt chocolate chips in microwave for 30 seconds. Stir and heat for another 30 seconds. Stir and then use a fork to drizzle chocolate on top of cookies.

1 cup powdered sugar
1 cup butter or margarine, softened
2 teaspoons maraschino cherry liquid
1/2 teaspoon almond extract
3 or 4 drops red food color
2 1/4 cups Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/2 cup drained maraschino cherries, chopped
1/2 cup white vanilla baking chips

Steps:

  • Heat oven to 350°F. In large bowl, beat powdered sugar, butter, cherry liquid, almond extract and food color with electric mixer on medium speed until blended. On low speed, beat in flour and salt. Stir in cherries.
  • Shape dough into 1-inch balls. On ungreased cookie sheets, place balls 2 inches apart.
  • Bake 8 to 10 minutes or until edges are light golden brown. Remove from cookie sheets to cooling racks. Cool 20 to 30 minutes.
  • In 1-quart resealable freezer plastic bag, place baking chips; seal bag. Microwave on High 35 to 50 seconds, squeezing chips in bag every 15 seconds, until chips are melted and smooth. Cut small tip from bottom corner of bag; drizzle melted chips over cookies.

3 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups packed brown sugar
1 cup butter-flavored shortening
2 large eggs
½ cup milk
½ teaspoon vanilla extract
½ teaspoon almond extract
2 cups maraschino cherries, chopped
2 cups milk chocolate chunks

Steps:

  • Combine flour, baking soda, and salt in a bowl.
  • Beat brown sugar, shortening, and eggs in a large bowl with an electric mixer until well combined. Mix in milk, vanilla, and almond extract. Add flour mixture gradually, beating well after each addition. Stir in cherries and chocolate chunks.
  • Place dough in the refrigerator for 1 hour.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Drop heaping tablespoons of dough 2 inches apart onto ungreased baking sheets.
  • Bake in the preheated oven until the edges are golden, 8 to 10 minutes, switching racks halfway through.

2 ¼ cups unbleached all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
½ cup butter flavored shortening (such as Crisco®)
½ cup white sugar
¾ cup brown sugar
2 eggs
1 ½ teaspoons vanilla extract
1 ½ teaspoons almond extract
1 cup dried tart cherries
¾ cup chopped walnuts
½ cup chopped pecans
1 (12 ounce) bag semi-sweet chocolate chunks (such as SACO®)

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets. Whisk together the flour, baking soda, and salt; set aside.
  • Beat the unsalted butter, butter flavored shortening, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time; beat in the vanilla extract and almond extract with the last egg. Mix in the flour mixture until just incorporated. Fold in the cherries, walnuts, pecans, and chocolate chunks, mixing just enough to evenly combine. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake in the preheated oven until browned around the edges, 11 to 13 minutes. Cool on cookie sheet for 2 minutes; remove cookies to a wire rack to cool completely.

200g unsalted butter , at room temperature
85g light muscovado sugar
85g golden caster sugar
1 egg
225g self-raising flour
50g plain chocolate , 50-70% cocoa, roughly chopped
50g white chocolate , roughly chopped
85g natural colour glacé cherry , roughly chopped

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Beat the butter, sugars and egg until smooth, then mix in the flour, chocolates and cherry pieces and ½ tsp salt. Spoon onto non-stick baking sheets in large rough blobs - you'll get 20 out of this mix. Make sure they are well spaced as the cookies grow substantially as they bake. The raw dough can be frozen.
  • Bake for 12-14 mins until just golden, but still quite pale and soft in the middle. If baking from frozen, give them a few mins more. Cool on the sheets for 5 mins, then lift onto racks with a fish slice and leave to cool completely.

These are the kind of cookies that make you want to cozy up under a warm blanket with a cup of tea and a good book. Packed full of warming spices, they have soft, chewy centers and crisp edges, and are punctuated by melty puddles of milk chocolate and tart dried cherries. They come together quickly too; no need to soften butter or chill dough. Feel free to substitute dark chocolate for a more deeply chocolaty cookie, but in either case, use chopped bar chocolate and not chips for the meltiest, tastiest bites. You can also substitute dried cranberries for the cherries.

1/2 cup/100 grams turbinado sugar
3/4 cup/150 grams granulated sugar
6 tablespoons/85 grams unsalted butter, melted and warm
2 tablespoons grapeseed or other neutral oil
2 tablespoons Dutch-process cocoa powder
2 1/4 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg

3/4 teaspoon fine salt
1/4 cup/75 grams unsulfured molasses
1 large egg
1 3/4 cups/225 grams all-purpose flour
1 3/4 teaspoons baking soda
1 cup/140 grams roughly chopped milk chocolate bar
1/2 cup/75 grams dried cherries or cranberries, roughly chopped

Steps:

  • Place racks in the top and bottom thirds of the oven and heat oven to 325 degrees. Line 2 sheet pans with parchment paper. Put the turbinado sugar in a shallow bowl and set aside.
  • To a large bowl, add the granulated sugar, butter, oil, cocoa powder, ginger, cinnamon, nutmeg, cloves, and salt, and whisk to combine.
  • Add the molasses and egg to the bowl, and whisk until smooth. Add the flour and baking soda, and stir with a rubber spatula until a few streaks of flour remain.
  • Add the chopped chocolate and cherries, and stir until well-combined and the flour is completely incorporated and no longer streaky.
  • Portion the cookies into 24 balls that are roughly 2 tablespoons/35 grams each, roll them in the turbinado sugar, and place them on the prepared baking sheets, 12 cookies per sheet.
  • Bake the cookies for 15 to 17 minutes, rotating the sheets from front to back and top to bottom halfway through, until crackly on top but still quite soft in the center. Cool the cookies completely on the baking sheets, then store in an airtight container at room temperature for up to 4 days.

  • First, make sure you have enough room in the freezer/refrigerator because you’ll need to quickly chill the baked cookies with the Hershey’s Kiss on top in step 4.
  • Using a handheld or stand mixer with a paddle attachment, beat the butter on high speed until creamy, about 1 minute. Switch mixer to medium speed and add the the sugar, vanilla and almond extracts. Scrape down the sides and the bottom of the bowl as needed. With the mixer running on high, slowly drizzle in 1 Tablespoon of the cherry juice. Beat for 1 minute on high. Turn the mixer off and pour the flour into the wet ingredients. Turn the mixer on low and slowly beat until a very soft dough is formed, then, with the mixer still running on low, add the chopped cherries. Beat just until the cherries are disbursed in the dough. Press the dough down to compact it and tightly cover with plastic wrap to chill until firm, at least 4 hours (and up to 3 days). If the cookie dough is not sufficiently chilled, your cookies will spread all over the cookie sheet.
  • Preheat oven to 350F degrees. Line two baking sheets with parchment paper or silicone baking mats (silicone mats preferred to reduce spreading). Shape the cookie dough into balls. Mine were about 1 Tablespoon of dough per ball. Make sure they’re nice and smooth. If you find that the balls of dough are sticky and/or have gotten a little soft after rolling- place the balls of dough back into the refrigerator to firm up. You absolutely DO NOT want soft dough.
  • Bake for 11-12 minutes, or until very lightly browned on the edges. The cookies will puff up and spread slightly. Do not overbake. In fact, I only baked mine for 10 minutes. I prefer them a little soft. Allow the cookies to cool on the baking sheet for 5 minutes then gently press a Hershey’s Kiss into each cookie and quickly stick the baking sheet in the freezer or fridge so the warm cookie does not completely melt the chocolate. Let the Hershey’s Kiss set on the cookies in the freezer/refrigerator for about 15 minutes.
