BANANA CREAM PIE I
Banana Cream Pie is one of the yummiest things on earth and this is a great one.

Steps:
- In a saucepan, combine the sugar, flour, and salt. Add milk in gradually while stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from the burner.
- Stir a small quantity of the hot mixture into the beaten egg yolks, and immediately add egg yolk mixture to the rest of the hot mixture. Cook for 2 more minutes; remember to keep stirring. Remove the mixture from the stove, and add butter and vanilla. Stir until the whole thing has a smooth consistency.
- Slice bananas into the cooled baked pastry shell. Top with pudding mixture.
- Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes. Chill for an hour.

Steps:
- Brown pie shell to lightly brown. Remove from oven.
- Puree 3 bananas and place in mixing bowl with the ricotta cheese, cream cheese, eggs, light cream, ground cinnamon, ginger, and honey. Mix and blend well.
- Slice 3 bananas into thin rounds and place slices into pie crust and pour banana and cheese filling over sliced bananas.
- Preheat oven to 350. Bake for 45 minutes or until browned. Shut oven off, leave pie in oven with door open for 5 to 10 minutes to settle.
- Serve warm or chilled with whipped cream topping.
- Variation: Add 1/2 cup chopped walnuts to top of pie before baking. Press walnuts into pie. Bake till golden.

- Melt 75g of the chocolate in the microwave in 30 second bursts. Whizz the biscuits in a food processor into crumbs. Pour the melted chocolate onto the biscuit crumbs and whizz again. Spread the biscuit mixture across the base and up the sides of a 16-18cm shallow pie or cake tin, then put in the fridge to set
- Sprinkle the butterscotch pudding powder into the milk and whisk together until smooth. Slice the bananas. Take the tin out of the fridge and spread the salted caramel sauce over the base. Cover the caramel with the banana slices. The pudding will have started to thicken, so give it a brief whisk, then spoon it over the bananas. Put in the fridge for 5-10 mins to set. Melt the remaining chocolate and drizzle over the pie to serve.

- 1. Prepare pie filling mix with 2 1/4c milk as directed on package for pie. Measure 1 cup filling; set aside. Pour a thin layer of the remaining filling into pie shell. Set aside half of 1 banana. Slice 1 1/2 bananas and arrange slices on filling in shell. Top with remaining filling. Fold whipped topping into measured filling; spead carefully over filling in shell. Chill 3 hours. Garnish with additional whipped topping and reserved banana sliced.

- For the pie dough, sift the wheat flour on a clean work surface. Make a well in the middle add the cubed cold butter and rub the flour and butter between your fingers to incorporate. Add the water, knead everything in a ball and then flaten it into a disc. Wrap in cling film and refrigerate for 30min.
- Scatter some flour on your work surface and roll out the dough to fit and line your pie mold. Blind bake, with parchment with some dry beans for 15min at 350ºF/180ºC. Remove the parchment and bake for another 5minutes. Remove and set aside.
- Melt the white chocolate in bain marie. Brush the par-cooked pie crust with some of the white chocolate.
- In a pot, heat the milk with the 1/4C 2Tbsp (75g) sugar and vanilla extract to a simmer. In a bowl whisk the egg yolks with the cornstarch. Pour some of the hot milk over the eggs and mix. Repeat this 2 times to prevent the eggs form curdling. Pour the mix back in the pot and sowly bring the heat up until the mixture starts to thicken. Remove and let cool slightly. Add the butter and white chocolate and incorporate.
