16 frozen fully cooked Italian meatballs (about 1 pound)
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
1/4 teaspoon Italian seasoning
1/4 teaspoon pepper
2 cartons (32 ounces each) chicken stock
2 cups frozen cheese tortellini (about 8 ounces)
3 ounces fresh baby spinach (about 4 cups)
Shredded Parmesan cheese, optional

Steps:

  • Place the first 5 ingredients in a 6-qt. stockpot; bring to a boil. Reduce heat; simmer, covered, 10 minutes., Return to a boil. Add tortellini; cook, uncovered, until meatballs are heated through and tortellini are tender, 3-5 minutes, stirring occasionally. Stir in spinach until wilted. Serve immediately. If desired, top with cheese.

3 tablespoons butter, softened
2 teaspoons dry mustard powder

1 (6 ounce) package processed cheese (such as Velveeta®), cubed

Steps:

  • Combine water, macaroni, butter, mustard powder, hot sauce, and salt in a multi-functional pressure cooker. Stir to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.

This soup is a mixture of my mother's recipe and my own adjustments. It is perfect for a cold day and is usually even better the next day. Simply put it back on the stove, add a little water if needed, and warm it up. There is a lot of prep, especially because of making the meatballs homemade, but it is so worth it. My very favorite soup and full of good ingredients! My kids and husband love it too! Serve with Parmesan cheese and toasted bread.

½ pound ground pork
⅛ cup finely chopped onion
½ tablespoon dried parsley

1/4 cup chopped fresh parsley
1 large egg, lightly beaten
1 clove garlic, grated
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
2 carrots, diced
2 stalks celery, diced
1 quart low-sodium chicken broth
1 9-ounce package refrigerated cheese tortellini
4 cups loosely packed baby spinach (about 3 ounces)

Steps:

  • Combine the beef, parmesan, 2 tablespoons parsley, the egg, garlic, 1/2 teaspoon salt, and pepper to taste in a medium bowl; mix with your hands until just combined. Form into 1-inch meatballs; set aside.
  • Heat the olive oil in a pot or Dutch oven over medium-high heat. Add the meatballs and cook, turning, until golden, 3 to 4 minutes; remove to a plate. 1 lb Cheese tortellini
1 ea Onion, diced
1 can (12 oz) Diced tomatoes
1/2 cup Green beans
1/2 cup Carrot, diced
1/2 cup Kale, chopped
2 qts Beef stock
1 tbsp Fresh garlic, minced
2 tbsp Butter
1 tbsp Italian seasoning
1 ea Bay leaf
Grated parmesan cheese (to taste)

Steps:

  • Melt butter in a large pot over medium-high heat.
  • Sauté diced onion and garlic until tender, about 5 minutes.
  • Pour the beef stock into the pot.
  • Add tomatoes, green beans, carrot, kale, Italian seasoning and bay leaf. Bring the mixture to a boil.
  • Reduce heat and stir in Cooked Perfect meatballs and tortellini.
  • Simmer on medium for 5 minutes.

This comforting soup is a one-pot meal-in-a-bowl. The key to its deliciousness is the way in which the pressure cooker makes the soup taste as though it's been simmered for hours when, in fact, it's been only about 30 minutes. (You could also make the slow-cooker version of this recipe, if time is on your side.) Quick-cooking baby spinach works beautifully, but you can choose a different green if you prefer: If you use a heartier green, like chopped kale or chard, give it a few more minutes to get tender before adding the tortellini. If you're planning for leftovers, add only the tortellini you will eat right away. Left in the soup, they will overcook. Be generous with toppings; they make the soup even more delicious.

2 tablespoons tomato paste
4 cups chicken stock or broth
1/4 cup dry white wine
1 (28-ounce) can crushed tomatoes, preferably fire roasted
1 tablespoon balsamic vinegar, preferably aged
6 garlic cloves, finely chopped
Roughly chopped leaves from 3 to 4 sprigs fresh oregano (about 2 tablespoons chopped) or 1 1/2 teaspoons dried oregano
2 teaspoons onion powder
1/2 teaspoon red-pepper flakes
1/2 teaspoon kosher salt, plus more as necessary
1 3/4 to 2 pounds boneless, skinless chicken thighs
5 ounces baby spinach
1 (8- to 10-ounce) package refrigerated cheese tortellini
1 cup grated Parmesan, for serving
Torn or shredded fresh basil, for serving
Black pepper, for serving

Steps:

  • In a 6- or 8-quart electric pressure cooker, whisk together the tomato paste, stock and wine until the paste dissolves. Stir in the tomatoes, vinegar, garlic, oregano, onion powder, red-pepper flakes and salt. (If you are using unsalted stock, add an additional 1/2 teaspoon salt.) Add the chicken thighs and stir to evenly combine all the ingredients. Close the lid and cook on high pressure for 10 minutes.
  • Let the pressure release naturally for 15 minutes, then release remaining pressure manually. Open the lid. Turn on the sauté setting. If you would like a thicker soup (adding Parmesan at the end will thicken the soup as well), remove the chicken with a slotted spoon and allow the soup to bubble until the desired texture is reached, then stir the chicken back in. Stir in the spinach so that it wilts into the soup. Coarsely shred the chicken with two forks, pressing pieces of chicken against the side of the pot to break the thighs apart.
  • Stir in the tortellini and cook until they are al dente and warmed through, about 3 minutes. Taste the soup and add salt if it tastes flat. Ladle the soup into bowls and top with Parmesan, basil and black pepper.

1 medium yellow onion, thinly sliced
1 1/3 cup sliced celery (around 6 to 7 trimmed celery hearts)
8 cups chicken stock or broth
38 to 40 frozen meatballs (around 20 ounces, I use Farmrich Italian)
1 8 ounce bag dried cheese-stuffed tortellini
2 1/2 cups chopped kale or spinach
1 tablespoon minced garlic or 2 garlic cloves, minced
1 1/2 tablespoon lemon juice
1 1/3 teaspoon sugar
1 1/3 teaspoon dried basil
1/2 cup heavy cream

Steps:

  • With the cookers lid off, heat oil on HIGH or "BROWN" until sizzling. Place onion in cooker and saute until translucent, about 5 min. Add celery, chicken stock, meatballs, tortellini, kale, garlic, lemon juice, sugar and basil. Securely lock pressure cooker and set for 5 minutes on HIGH. Perform a QUICK RELEASE to release pressure. Stir in heavy cream and add salt and pepper to taste ( I didn't think it needed any) Serve with crusty rolls and a salad.
