This recipe was inspired by a meal I enjoyed at a restaurant recently. I asked our waiter for the recipe, but all he would tell me is that the sauce contained chili sauce over a glaze. It was the perfect combination of sweet and heat, so I tried to duplicate it at home. Using Tabasco Sweet and Spicy gives the fish its slightly sweet flavor. This recipe was featured in an article in the St Louis Post-Dispatch about me and my book, Living the Thin Life. 1 1/2 lbs tilapia fillets
1 tablespoon olive oil
1 tablespoon lime juice
2 tablespoons chili sauce
1 tablespoon Tabasco sauce, Sweet & Spicy variety
1 dash Tabasco sauce, regular
1/2 teaspoon salt (to taste)

Steps:

  • Place fish in a large plastic bag. Add olive oil and marinate for one hour.
  • Remove fish from marinade and salt to taste. Cook on preheated grill for 8-10 minutes.
  • Combine chili sauce and Tabasco Sweet & Spicy sauce. Add a dash of regular Tabasco sauce if desired for more heat.
  • Baste fish with sauce and grill for an additional 5 minutes.

1 lb tilapia fillet
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon cayenne pepper
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon lime juice, about 1 lime
1 tablespoon olive oil
1 avocado
½ cup fresh cilantro, roughly chopped
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon lime juice, about 1 lime
¼ cup yogurt

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a small bowl, mix the chili powder, cumin, cayenne, salt, pepper, and olive oil with the lime juice.
  • Using a basting brush, generously coat each side of the tilapia fillet with the marinade.
  • Bake fish for 12 minutes in a preheated oven until edges begin to crisp and fish is moist and flaky.
  • While fish is baking, prepare the crema.
  • In a blender, combine avocado, cilantro, salt, pepper, lime juice, and yogurt. Blend until mixture is smooth.
  • Serve tilapia topped with avocado crema and freshly chopped cilantro.
  • Enjoy!

Chipotle Fish Tacos are made with a mango-cilantro salsa, and chipotle aioli sauce is served with garlic spiked black beans and Spanish rice. I have run this special in the last restaurant I worked at as a daily special. It always sold out! I hope that you will try this recipe, it is a hit if you enjoy fish tacos!

3 tablespoons chipotle chile powder
1 teaspoon garlic powder
1 tablespoon salt
1 tablespoon cracked black pepper
1 pound tilapia fillets, cut in half lengthwise
¼ cup canola oil
1 mango - peeled, seeded and diced
1 jalapeno pepper, seeded and minced
1 small red onion, finely chopped
1 clove garlic, minced
1 bunch cilantro, chopped
1 tablespoon lime juice
1 tablespoon pureed chipotle peppers in adobo sauce
1 clove garlic, minced
¼ cup mayonnaise
2 (15 ounce) cans black beans, rinsed and drained
2 cloves garlic, minced
1 pinch salt
3 cups hot cooked Spanish rice
8 (6 inch) whole wheat tortillas
1 (8.5 ounce) package coleslaw mix

Steps:

  • Stir together the chipotle chile powder, garlic powder, salt, and cracked black pepper in a shallow bowl. Brush the tilapia fillets with the canola oil, and press into the spice mixture to coat, and set aside. Make the salsa by stirring together the mango, jalapeno, red onion, 1 clove garlic, cilantro, and lime juice in a separate bowl, and set aside. Make the aioli by stirring together the chipotle puree, 1 clove garlic, and mayonnaise in a small bowl, and set aside.
  • Bring the black beans and 2 cloves of garlic to a simmer in a saucepan with a pinch of salt. Cover, and cook over low heat for 20 minutes. Meanwhile, heat a large skillet over medium-high heat, and cook the tilapia until opaque in the center, and crispy on both sides, about 7 minutes. Heat the tortillas in a skillet over medium heat, and keep warm.
  • To serve, place the tortillas on a plate, spoon on some Spanish rice and black beans. Top with some of the coleslaw mix, hot tilapia, and a spoonful of the mango-cilantro salsa. Top with a dollop of chipotle aioli to serve.

2 tilapia fillets
3 tablespoons lime juice, divided
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon chili powder
2 tablespoons olive oil
16 (5 inch) corn tortillas
2 cups tomatillo salsa
1 avocado
½ cup sour cream
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat grill to medium heat and lightly oil the grate.
  • Rub tilapia fillets with 2 tablespoons lime juice and season with salt, black pepper, and chili powder. Brush both sides of each fillet with olive oil.
  • Grill tilapia on preheated grill until fish flakes easily with a fork, about 5 minutes on each side.
  • Heat tortillas on an ungreased skillet over medium-high heat for 10 to 15 seconds. Turn and heat for another 5 to 10 seconds. Fill the heated tortillas with flaked tilapia. Top with tomatillo salsa, avocado, and sour cream. Sprinkle with cilantro and 1 tablespoon lime juice.

I can never seem to be bothered to bake fish, so cooking on the stove top is my preferred method. This is an easy way to dress up tilapia for a quick weeknight dinner.

1 lb skinless tilapia fillet
1 teaspoon red chili powder
1/4 teaspoon seasoning salt (like Lawry's)
black pepper
lime wedge

Steps:

  • Sprinkle chili powder, seasoned salt and black pepper evenly over both sides of fillets.
  • Preheat a large skillet over medium heat. Spray pan generously with cooking spray or pour light coating of vegetable oil.
  • Cook fish about 3-4 minutes on each side, squeezing lime juice over fillets while cooking. Fish is done when it flakes with a fork.
  • Serve with additional lime wedges.

1/2 stick (1/4 cup) unsalted butter, softened
1 tablespoon finely chopped shallot
1 teaspoon finely grated fresh lime zest
2 teaspoons fresh lime juice
1 teaspoon minced fresh Thai or serrano chile (preferably red), including seeds
1/2 teaspoon salt
For fish
6 (5- to 6-oz) pieces skinless tilapia fillet or farm-raised striped bass fillets with skin
1/2 teaspoon salt
2 tablespoons vegetable oil

Steps:

  • Make chile lime butter:
  • Stir together butter, shallot, zest, lime juice, chile, and salt in a bowl.
  • Prepare fish:
  • If using striped bass, score skin in 3 or 4 places with a thin sharp knife to prevent fish from curling (do not cut through flesh). Pat fish dry and sprinkle with salt. Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until just smoking, then sauté 3 pieces of fish, turning over once with a spatula, until golden and just cooked through, 4 to 5 minutes, and transfer to a plate. Sauté remaining fish in remaining tablespoon oil in same manner.
  • Serve each piece of fish with a dollop of chile lime butter.
