CHICKEN STIR-FRY
A quick and easy dish to prepare, this chicken stir-fry is packed with veggies. Try adding bean sprouts, bamboo shoots, snap peas, or any of your favorite vegetables. Serve it with white or brown rice, or noodles.

Steps:
- Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender, and liquid has been absorbed, 20 to 25 minutes.
- Combine soy sauce, brown sugar, and corn starch in a small bowl; stir until smooth. Mix ginger, garlic, and red pepper into sauce; coat chicken with marinade and refrigerate for at least 15 minutes.
- Heat 1 tablespoon sesame oil in a large skillet over medium-high heat. Cook and stir bell pepper, water chestnuts, broccoli, carrots, and onion until just tender, about 5 minutes. Remove vegetables from skillet and keep warm.
- Remove chicken from marinade, reserving liquid. Heat 1 tablespoon sesame oil in skillet over medium-high heat. Cook and stir chicken until slightly pink on the inside, about 2 minutes per side; return vegetables and reserved marinade to skillet. Bring to a boil; cook and stir until chicken is no longer pink in the middle and vegetables are tender, 5 to 7 minutes. Serve over rice.

GRILLED BUTTERFLIED CHICKEN

- Prepare a grill for high heat. Wrap 2 bricks with foil.
- Remove the backbone of the chicken with kitchen shears. Place the chicken skin-side up and flatten the breastbone by pressing down hard with your hands or a cast-iron pan. Brush the chicken all over with oil, and sprinkle with salt and pepper.
- Place the chicken on the grill skin-side down. Place the prepared bricks on top to keep the chicken flat. Cook, covered, for 30 minutes. Flip the chicken and cook, covered, until an instant-read thermometer registers 165 degrees in the thickest part of the thigh, 15 to 30 minutes more.
CHICKEN ON THE FLY
My pork chops didn't thaw in time for dinner, thankfully I have canned chicken on hand for nights such as this. I started with a recipe on another website(Tyson)and I ended up creating my own casserole. I hope you enjoy as much as my family has.

Steps:
- 1. Pre-heat oven to 350 grease pan, and put half the pkg of noodles in pan then place half of the chicken and half of the veggies. Repeat noodles, chicken, and veggies. (if you wish put some of the cheese with this mixture)
- 2. Mix all other ingredients and pour over the noodles, chicken, & veggies.
- 3. Bake for 45 minutes to an hour.

Steps:
- 1. Mix bread crumbs, salt and pepper in a plastic bag. Shake the chicken pieces in the bag till coated with bread crumbs.
- 2. Heat 2 tbsp. oil in a frying pan. Saute chicken until browned, turning at least twice, about 10 min.
- 3. Remove chicken and pour broth into pan. Stir with wooden spoon until brown bits come loose.
- 4. Place chicken breasts in a 9X12 in. casserole dish. add mushrooms and artichokes. pour broth over chicken-it will turn into gravy while cooking.
- 5. Bake uncovered at 350 for 45 min. Five min. before removing from oven, sprinkle with parmesan.
- 6. A half hour before serving, boil pasta according to package directions.
KOREAN GRILLED CHICKEN

- Whisk together the soy, vinegar, honey, chili paste, ginger and garlic in a bowl and divide the mixture in half. Add 1 half to a large baking dish, then add the chicken, turning to coat. Cover and let the meat marinate in the refrigerator for at least 4 hours or up to 8 hours. Add the green onions, sesame oil, black pepper and sesame seeds to the remaining half of the mixture. Reserve it as a dipping sauce for the finished chicken.
- Light a grill, making sure to include a zone of indirect heat.
- Remove the chicken from the marinade and put it over the charcoal, skin side down. Grill until the skin is golden brown and crisp, about 10 minutes. Relocate the chicken to the indirect heat zone, lower the cover and grill until cooked through. Remove the chicken from the grill to a cutting board and carve. Arrange the chicken on a serving platter and serve wrapped in tortillas, if desired, with dipping sauce on the side.
BUTTERFLIED CHICKEN
Steps:
- Mix the chopped rosemary, garlic, lemon zest, lemon juice, 1 tablespoon olive oil, 2 teaspoons salt and 1/2 teaspoon pepper together in a small bowl to make a paste.
- Place the chickens on a sheet pan, skin side up, and loosen the skin from the meat with your fingers. Place 1/2 of the paste under the skin of each chicken. Rub any remaining paste on the outside and underside of the chickens.
- Turn the chicken skin side down and scatter the lemon slices and sprigs of rosemary over each chicken. Season with salt and pepper. Roll each chicken up, cover with plastic wrap and refrigerate for at least 1 hour.
- Heat a grill with coals. Spread the coals out in 1 dense layer and brush the grill with oil. Unroll the chickens, place them on the grill and cook for 12 minutes on each side.
ROSEMARY BRICKED GRILLED CHICKEN
Steps:
- Whisk together the oil, lemon juice, garlic and rosemary in a large baking dish. Add the chickens and turn to coat. Cover and marinate in the refrigerator for at least 1 hour, or up to 4 hours.
- Preheat the grill to medium. Wrap 4 bricks in aluminum foil and set aside. Remove the chickens from the marinade, blot off excess oil, and season with salt and pepper on both sides. Place the chickens on the grill, skin-side down, and place 2 bricks on top of each chicken. Grill the chicken for 8 to 10 minutes, then turn over, and return the bricks to the chickens. Close the cover and continue cooking for 8 to 10 minutes or until cooked through. Let rest for 10 minutes and cut into quarters. Serve with lemon wedges.

- Place the chicken with the breasts facing up. Use a sharp kitchen shears to cut along one side of the backbone from end to end. Cut along the other side of the backbone, completely removing about about 1 inch wide portion of the spine. Turn the chicken over and use your hands to press down firmly, flattening the chicken until you hear the crack of the breastbone. Optionally, you can tuck the wings.
- Lay the butterflied chicken on a parchment or foil lined sheet pan. Pat it dry with a few paper towels, then rub it all over with 2 Tablespoons of oil and seasonings, using your fingers to rub it under the skin too. Let the chicken marinate in the seasonings for at least 30 minutes, but you can marinate the chicken for up to 24 hours in the refrigerator.
- Preheat the oven to 450 degrees Fahrenheit. Meanwhile, wash the vegetables. Remove the large stems from the Brussels sprouts and cut into halves. Cut the potatoes into quarters. Cut the lemon into quarters. Transfer the vegetables to a bowl, and toss with the remaining oil and season them lightly with salt and pepper. Spread the vegetables and lemon pieces on the sheet pan.
- Set the sheet pan in the oven and roast for 40 minutes, using a meat thermometer to test the internal temperature has reached 165 F at the thickest part of the thigh. Allow the chicken to rest for about 5 minutes before slicing.
