Whipped Chicken Livers with Shallot Jam image

Silky whipped chicken livers and shallot jam on toast makes a sophisticated appetizer for any dinner party. The recipe comes from chef Bill Taibe of LeFarm in Westport, Connecticut.Also try:Shad Roe with Beets, Bacon, and Balsamic

1 cup raisins
1 cup red wine
1 cup (2 sticks) unsalted butter, cut into small pieces
3 shallots, sliced
4 cups chicken livers, rinsed and patted dry
Coarse salt and freshly ground pepper
1 cup red-wine vinegar
1 cup balsamic vinegar
2 tablespoons saba
Toasted bread, preferably walnut-olive bread, for serving
Shallot Jam
Sea salt

Steps:

  • Place raisins in a medium heatproof bowl. Place red wine in a small saucepan and bring to a boil over high heat. Pour wine over raisins; cover bowl with plastic wrap and let stand until raisins are plump, at least 2 hours. Drain.
  • Heat 2 tablespoons butter in a large skillet over high heat until melted. Add shallots and reduce heat to medium-high. Cook, stirring, until shallots are caramelized, 2 to 3 minutes. Remove shallots from skillet and set aside.
  • Increase heat to high and add 2 tablespoons butter. Add chicken livers and season with salt and pepper; cook until lightly browned, 2 to 3 minutes. Return shallots to skillet along with both vinegars. Cook until liquid is reduced by half. Remove from heat and let cool completely.
  • Transfer chicken liver mixture and cooking liquid to the bowl of a food processor. Add remaining 12 tablespoons butter and process until smooth. Add saba and pulse to combine; strain through a fine mesh sieve. Cover and transfer to refrigerator until chilled.
  • Serve whipped chicken liver on toasted bread with jam. Sprinkle with soaked raisins and sea salt.

1 stick (8 tablespoons) plus 1 tablespoon unsalted butter, softened
1/2 yellow onion, thinly sliced
1 clove garlic, chopped
1/2 teaspoon ground coriander
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground allspice
Kosher salt
8 ounces chicken livers, trimmed
1/4 cup heavy cream
1 tablespoon brandy
1 tablespoon olive oil
1 medium red onion, thinly sliced
1 teaspoon fresh thyme leaves
Kosher salt
1/2 cup dry red wine
3 tablespoons red wine vinegar
3 tablespoons sugar
Toasted baguette slices, for serving

Steps:

  • For the chicken liver pâté: Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the yellow onions and garlic and cook until softened, 5 minutes. Stir in the coriander, pepper, allspice and some salt.
  • Increase the heat to medium high and add the chicken livers. Cook, stirring occasionally, until golden brown on the outside but still pink inside, about 3 minutes. Add the heavy cream. Transfer the mixture to a food processor and puree until smooth.
  • With the motor running, add the remaining 7 tablespoons butter in three batches and process until fully incorporated. Add the brandy and pulse to incorporate. Season with salt.
  • Transfer the pâté to a bowl, cover, and refrigerate until firm, at least 3 hours and up to overnight.
  • For the red onion jam: Heat the olive oil in a medium skillet over medium heat. Add the red onions, thyme and 1/4 teaspoon salt. Cook, stirring occasionally, until softened, about 8 minutes.
  • Add the wine and simmer, stirring occasionally, until most of the wine has evaporated, about 10 minutes. Add the vinegar and sugar and cook, stirring often, until the onions are very tender and the liquid is syrupy, 3 to 4 more minutes.
  • Cool the jam to room temperature, and then refrigerate until ready to serve. Serve warm or room temperature
  • To serve, spread baguette slices with pâté and top with red onion jam.

1 stick plus 2 tablespoons unsalted butter, softened
1 pound chicken livers, trimmed
Salt and freshly ground pepper
1 medium red onion, diced
4 thyme sprigs
Twenty 1/4-inch-thick warm baguette toasts
Extra-virgin olive oil, for brushing
2 garlic cloves, peeled

Steps:

  • In a large skillet, melt 2 tablespoons of the butter. Season the livers with salt and pepper. Cook over high heat until browned, 2 minutes per side. Transfer to a plate. Melt 2 tablespoons of the butter in the skillet. Add the onion and thyme and cook over moderate heat, stirring, until the onion is softened, 10 minutes. Add the livers and cook, stirring, until heated through, 2 minutes; let cool. Discard the thyme. In a food processor, puree the livers and the remaining 6 tablespoons of butter until smooth. Strain through a fine sieve and season well with salt. Press plastic wrap onto the surface and refrigerate until chilled. Brush the warm toasts with oil, rub with garlic and spread the liver mousse on top. Garnish with the Shallot Jam and serve.

Back in 2012, Sam Sifton and Mark Bittman put together a feast for 15. The trick? Get it done in eight hours. Lobster and chopped salad, soubise and root vegetables, and a roasted chicken were all on the menu. And so was this recipe for chicken liver on toast. It may not have been the star of the show that night, but it served a critical purpose: keeping appetites satisfied in the lead-up to the meal. It can be an appetizer, or, paired with a salad, an exemplary light lunch or dinner.

6 tablespoons unsalted butter
1 medium-size red onion, peeled and finely chopped
1 pound chicken livers, cleaned and trimmed
1 dried chipotle, softened in hot water and finely chopped
1 cup dry red wine
Salt and black pepper to taste

Steps:

  • Melt the butter over medium heat in a large sauté pan. Add the onion and cook, stirring often, until it is soft but not brown, about 10 minutes. Add the chicken livers and chipotle and cook until the livers are lightly browned, an additional 10 minutes or so. Add the wine, and cook until there are only a few tablespoons of liquid remaining, about 15 to 20 minutes.
  • Transfer the liver to a food processor and pulse until the sauce is blended and a little lumpy. Season to taste with salt and pepper.
  • Put the mixture into small ramekins and place, covered, in the refrigerator to cool and set.
  • Spread on grilled or toasted peasant bread.

You could serve this chicken pâté as an appetizer at a dinner party, or simply as a light (really!) supper or a sandwich spread. It takes less than a half-hour to prepare, and it will firm up in the refrigerator in a few hours. Simply pack the mixture into a bowl or glass jar, cover and refrigerate.

8 tablespoons unsalted butter, cut into cubes
2 medium shallots, peeled and finely chopped
1 pint fresh chicken livers, approximately 1 pound, trimmed
1 tablespoon fresh thyme leaves, chopped
1/3 cup Madeira or port
3 tablespoons heavy cream, plus more as needed
Kosher salt to taste

Steps:

  • Put a large, heavy sauté pan over medium heat, and melt 4 tablespoons of the butter until it begins to foam. Add the shallots, and sauté them until translucent, being careful not to allow them to brown. Add the livers, thyme and Madeira or port, and bring the heat to high. Cook, occasionally stirring the livers around in the pan with a spoon, until the wine has reduced and the livers are lightly browned but still very soft and pink on the inside, approximately 5 minutes.
  • Remove the pan from the stove, and put its contents into a blender or food processor, along with the cream and the remaining butter. Purée until smooth, adding a little more cream if necessary. Taste and adjust seasoning, adding salt if necessary.
  • Pack the pâté into a glass jar or bowl, then smooth the top with a spatula. Cover with plastic wrap and refrigerate until firm, about two hours or up to five days. Serve with bacon-onion jam and copious amounts of toast.

250g chicken livers
2 shallots , finely chopped
large handful flatleaf parsley , leaves very roughly chopped
1 tbsp capers , rinsed and drained, roughly chopped
2 tbsp olive oil
3 tbsp sherry vinegar
4 slices nice bread , such as sourdough
1 tbsp plain flour
large pinch cayenne pepper

Steps:

  • Pick over the livers, cutting away any fatty bits and sinew, then pat the livers dry. Place the shallot, parsley and capers into a bowl and drizzle with half the olive oil and 1 tbsp of the Sherry vinegar.
  • Toast the bread (preferably on a griddle but a toaster is fine). Toss the livers in the flour and cayenne pepper, and season generously with salt and pepper. Heat the rest of the oil in a frying pan and fry the livers over a really high heat for 4-5 mins until brown and crisp on the outside and cooked, but still a little pink in the middle. Splash remaining vinegar into the pan and bubble down for 1 min.
  • Tip the contents of the pan in with the shallot and parsley, toss everything together, season to taste, then pile onto the toasted bread. Season with a little crunchy sea salt and serve.
