CHICKEN AND BARLEY SALAD image

This wholesome chicken and barley salad is a little different, but very tasty. The pearl barley is chewy, nutty and full of nutrients, while the peanut dressing add some extra pizzazz!

Number Of Ingredients 17

1/4 cup apple cider vinegar ((60ml))
1/4 cup olive oil ((60ml))
3 Tbsp peanut butter
3 Tbsp soy sauce
1 Tbsp sugar
2 tsp sesame oil
600 g chicken tenderloins ((1lb 5oz))
2 1/4 cups water ((560ml))
2 tsp chicken stock powder
3/4 cup pearl barley ((150g))
1/4 small red cabbage
2 spring onions
1 apple
1 carrot
2 Tbsp sesame seeds
100 g salad greens ((3.5oz))
1/2 cup roasted, salted cashews ((70g))

Steps:

  • MAKE DRESSINGCombine all dressing ingredients in a large jar and shake until smooth. Season to taste with salt and pepper.
  • MARINATE CHICKENPlace chicken in a shallow dish and season with a little salt and pepper. Pour approximately half of the dressing over the chicken and leave to marinate. Reserve rest of dressing for salad.
  • COOK BARLEYBring water to the boil in a medium-sized saucepan. Stir in stock powder and barley, cover with a lid and reduce heat to low. Cook for 40 minutes, until barley is tender.
  • MAKE SALADMeanwhile, shred cabbage and finely slice spring onions. Core and thinly slice apple. Peel carrot and cut into matchsticks.
  • TOAST SESAME SEEDS & COOK CHICKENHeat a large frying pan on medium-high. Add sesame seeds and cook for a couple of minutes, stirring, until toasted. Remove from pan and set aside. Add chicken to pan and cook for approximately 4 minutes each side, until browned and cooked through. Remove onto a board, cover with foil and leave to rest.
  • SERVEDrain barley well. Divide salad greens between serving plates or bowls and top with cabbage, spring onions, apple and carrot. Spoon barley over the top. Add chicken, then drizzle with reserved dressing. Finish with a sprinkle of sesame seeds and cashews.

Coarse salt and ground pepper
1 cup barley
2 bunches scallions, cut into thirds crosswise and white ends halved
2 1/2 cups fresh corn kernels (from 3 ears corn) or frozen corn
3 tablespoons extra-virgin olive oil
1 pint grape tomatoes, halved
1/4 cup fresh parsley leaves
Reserved cooked chicken breast from Buttermilk Chicken with Cornbread and Cucumber-Celery Salad, shredded
1 tablespoon plus 2 teaspoons fresh lime juice
5 ounces baby spinach

Steps:

  • In a medium pot of boiling salted water, cook barley according to package instructions. Drain and let cool.
  • Meanwhile, preheat oven to 450 degrees. Place scallions and corn on a rimmed baking sheet. Toss with 1 tablespoon oil and season with salt and pepper. Roast until vegetables are tender, about 25 minutes, stirring halfway through.
  • In a large bowl, combine barley, roasted vegetables, tomatoes, parsley, chicken, 1 tablespoon oil, and 1 tablespoon lime juice; season with salt and pepper. In a medium bowl, toss spinach with 1 tablespoon oil and 2 teaspoons lime juice; season with salt and pepper. Serve spinach with chicken-barley mixture.

2 (6 ounce) skinless chicken breasts, boneless
1/8 teaspoon kosher salt
1 teaspoon olive oil
4 cups chicken broth, DIVIDED
1 cup pearl barley, uncooked
2 cups cucumbers, seeded cubed
1 cup grape tomatoes, halved
1/2 cup yellow bell pepper, cubed
1/3 cup reduced-fat feta cheese
1/4 cup kalamata olive, pitted chopped
3 tablespoons light extra virgin olive oil
1 teaspoon lemon rind, grated
2 tablespoons fresh lemon juice
1 tablespoon fresh basil, minced
1 teaspoon fresh thyme, minced
1 teaspoon red wine vinegar
1/2 teaspoon kosher salt
3 garlic cloves, minced

Steps:

  • To prepare salad, sprinkle chicken with 1/8 teaspoon salt.
  • Heat 1 teaspoon oil in a nonstick skillet over medium-high heat.
  • Add chicken; cook 2 minutes on each side or until browned.
  • Add 1 cup broth; cover, reduce heat, and simmer 10 minutes or until done.
  • Cool; shred chicken.
  • Discard broth.
  • Bring 3 cups broth to a boil in a large saucepan; add barley.
  • Cover, reduce heat, and simmer 35 minutes or until liquid is absorbed.
  • Fluff with a fork.
  • Cool.
  • Combine chicken, barley, cucumber, and next 4 ingredients (through olives) in a large bowl.
  • To prepare dressing, combine 3 tablespoons oil, rind, and remaining ingredients; stir well.
  • Add to barley mixture; toss well.
  • Cover and chill.

Wonderful salad/main dish that we often go for on a hot summer evening. Serve with crusty bread and a glass of wine :) The olive oil accounts for 20% of calories in this recipe - for a lighter version you can substitute some of the olive oil with lemon juice. UPDATE June 28 - I agree with both reviewers - the recipe is better with less oil. I am reducing the oil and increasing the lemon in the recipe - so pleae note that the new version reflects this change

2/3 cup pearl barley
1 1/2 cups green beans, chopped, trimmed
1 cup cherry tomatoes, halved

1 tablespoon Dijon mustard

  • CHICKEN: Marinate chicken using 2 TBSP (not all) of vinaigrette. Coat for 10 min and up to 8 hours if you want to prepare ahead. Grill chicken until done and cut into bite size pieces.
  • SALAD: Cook barley in boiling water for 10 min; add green beans and cook until tender crisp and barley is tender for approx 10 minute (barley should cook 20 min total).
  • Drain and toss with remaining vinaigrette.
  • Add chicken cubes, tomatoes, onion and fresh basil. Toss to combine.

6 cups water
1 medium onion, quartered
1 bunch fresh lemon thyme
1 finger chile or other spicy chile, halved lengthwise and seeded
1 tablespoon whole black peppercorns
2 garlic cloves, crushed
12 ounces boneless, skinless chicken breasts
1 cup pearl barley
4 scallions, thinly sliced diagonally
1/4 cup plus 1 tablespoon fig-balsamic or aged balsamic vinegar
2 tablespoons extra-virgin olive oil
2 teaspoons coarse salt
1 teaspoon freshly ground pepper
1 pound fresh Black Mission figs, quartered

Steps:

  • Bring water, onion, thyme, chile, peppercorns, and garlic to a gentle simmer in a medium pot. Add chicken, and simmer until cooked through, about 8 minutes. Transfer chicken to a plate, and let cool slightly.
  • Bring poaching liquid to a boil, and cook until reduced to 3 1/2 cups, about 10 minutes. Strain through a fine sieve into a medium saucepan, pressing on solids to extract liquid. Discard solids.
  • Bring liquid to a boil. Add barley, and simmer until liquid is absorbed and barley is tender, 30 to 40 minutes. Transfer to a large bowl, and let cool.
  • Shred chicken into bite-size pieces. Toss with barley, scallions, vinegar, oil, salt, and pepper. Gently stir in figs, and serve immediately.

I've just discovered barley (apart from boiled in soups) so am on the lookout for new recipes using it. This one comes from the Taste site and looks good! I've "estimated" 60 minutes prep including cooking the barley and chicken (at the same time!) and then called it a no cook recipe.

1 cup pearl barley
400 g boneless skinless chicken breasts
1 tablespoon whole black peppercorn
1 onion, halved
4 green onions, trimmed, white part only thinly sliced
1/2 cup sweet red pepper strips
75 g baby rocket
2 tablespoons pine nuts, toasted
2 tablespoons lemon juice
2 teaspoons olive oil
2 teaspoons ground cumin
1 teaspoon honey

Steps:

  • Place barley in a bowl. Cover with warm water. Set aside for 30 minutes. Drain. Transfer to a large saucepan. Add 6 cups cold water. Bring to the boil over high heat. Reduce heat to low. Simmer for 25 to 30 minutes or until tender. Rinse under cold water. Drain. Transfer to a large bowl.
  • Meanwhile, place chicken, peppercorns and brown onion in a large saucepan. Add 5 cups cold water. Partially cover. Bring to the boil over high heat. Reduce heat to low. Simmer for 5 to 7 minutes or until just cooked through. Remove from heat. Set aside for 5 minutes. Remove chicken from onion mixture. Set aside to cool slightly. Discard onion mixture. Shred chicken.
  • Add chicken to barley. Add green onion, bell pepper strips, rocket and pine nuts. Season with pepper.
  • Make dressing: Place lemon juice, oil, cumin and honey in a screw-top jar. Secure lid. Shake to combine. Pour over chicken mixture. Toss to combine. Serve.
