2 blocks fresh firm tofu
2 lb ground pork
1/2 lb cleaned 31/35 tiger shrimp, chopped
2 stalks green onion, chopped
1 T ginger, grated
1 1/2 T garlic, minced
4 oz water chestnuts, chopped
1/2 c oyster sauce
4 shiitake mushrooms, diced
1 t salt
1/2 t pepper
1/2 c flour
1 qt vegetable oil

Steps:

  • Cut cut both blocks of tofu into 8 triangles by cutting down the middle lengthwise, flip on side and then cut diagonally. Make slits in each piece to form pockets. Combine pork, shrimp, green onion, ginger, garlic, water chestnuts, oyster sauce, shiitake mushrooms, salt and pepper. Spoon filling into each triangle. Lightly coat in flour and cook in hot cooking oil until golden brown, about 8 minutes. Place tofu on plate, cover in plastic wrap and steam in a wok with a bamboo steamer for 15-20 minutes or until pork is cooked. For the Sauce: 1-14.5 oz can low sodium chicken broth 3 t sugar 1/4 c soy sauce 1/4 c oyster sauce 5 T cornstarch in 5 t water In a saucepan, bring chicken broth, sugar, soy sauce and oyster sauce to a boil. Add cornstarch water and whisk quickly until thickened. Remove and pour over tofu.

1 piece tofu, crushed (about 8cmx8cmx8cm)
1/2 lb pork, minced
1 egg white
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 stalks spring onions, diced (optional)
2 teaspoons soy sauce
1 teaspoon cornflour or 1 teaspoon flour
1 teaspoon sugar
1 teaspoon sesame oil (or other vegetable oil)
1 pinch pepper

Steps:

  • Marinate the pork with the seasonings for 30 minutes or more.
  • Mix all the ingredients thoroughly and place them flat on a plate.
  • Steam the mixture until they are cooked.
  • It is a good idea to steam it over rice cooker, using a suitable rack to hold in position, when you are cooking the rice.
  • Serve hot.
  • If you want it more salty, add some soy sauce on top to suit your taste.

  • Mince the ground pork and ginger together. Remove the skin from the salted fish and mince it up with the pork and ginger until very well-combined.
  • Cut tofu into 2-inch squares about 3/4-inch thick. Scoop out about 1 teaspoon of tofu from each piece to make room for the meat. In a bowl, stir the excess tofu in with the pork. Add the wine, a pinch of fresh ground white pepper, and salt to the meat mixture. Mix well.
  • Divide the meat among the tofu pieces. Steam the plate of tofu in a wok or steamer for about 10 minutes.
  • While the tofu is steaming, mix 1 tbsp of cornstarch with 1 tbsp of water and set aside. Cut 4 to 6 pieces of the scallion about 3 inches long, and cut lengthwise slits on both ends. Put into a bowl of ice water. The ends curl up nicely and can be used as a garnish. Dice the rest of the scallions and set aside.

  • Prepare your silken tofu by cutting it in half lengthwise and then slicing it crosswise into ½-inch slices. Use your knife or cleaver to transfer each half of the cut tofu to a large heatproof rimmed plate or shallow bowl. The dish should be deep enough to hold the steaming liquid and sauce.
  • Lay the tofu on the plate so the pieces are fanned out evenly, with as much tofu surface area exposed as possible. Sprinkle the salt evenly over the tofu.
  • Next, steam the tofu. Add 4 cups of cold water to a wok, place the tofu on a steaming rack inside, and cover the wok.
  • Turn on the heat to medium-high. The water should boil in about 7 minutes. After it has begun boiling, continue to steam for another 3 minutes––a total of 10 minutes.
