FRITO PIE BAKED POTATO



Frito Pie Baked Potato image

This is a spicy meal meant for singles or couples. It's delicious and a great comfort food! Even though it involves a baked potato, this is not a side dish - it's a full meal. Thanks to Bakers Brothers Deli for the inspiration! For me, this is way too much food, so I usually eat half of it for one meal and half later.

Number Of Ingredients 8

1 large baked potato
1 tablespoon butter (optional) or 1 tablespoon margarine (optional)
1 (15 ounce) can wolf brand chili with beans
1/2 cup Fritos chili cheese corn chips (crushed into large pieces, this is done easiest while still in the bag)
1/4 cup shredded sharp cheddar cheese
1 -2 tablespoon light sour cream
1 -2 tablespoon pickled jalapeno pepper
Tabasco sauce

Steps:

  • In the microwave or oven, bake the large potato (leave the skin on before and after cooking).
  • While baking the potato, heat the chili on the stove top or in the microwave.
  • After cooking the potato until tender, chunk it with a fork removing any brown spots while adding in the butter.
  • Sprinkle the potato with cheese and pour on some of the heated chili. If necessary, heat the smothered potato in the microwave for 30 seconds or so.
  • Mix in the crushed Fritos and top with sour cream, jalapenos, and Tabasco sauce, all to taste.
  • Mix well, eat well, and tell your vegetarian friends and cardiologist that you'll die happy.

When I was working my way through college at a local diner, I learned that they used leftover baked potatoes from the dinner menu that they baked the day before. They always made extra baked potatoes so that they could use them for home fries the next morning. I discovered that this was the 'secret' to having flaky, crispy home fries. Very easy to make.

2 large baking potatoes
2 tablespoons butter
¼ cup chopped onion
salt and ground black pepper to taste

Steps:

  • Scrub the potatoes well and pierce with a fork. Cook on full power in microwave oven for 5 minutes; turn the potatoes over and cook 5 more minutes. Remove the potatoes from the oven and set aside to cool. Thinly slice the cooled potatoes.
  • Cook and stir the butter and onion in a large skillet over medium heat until the onion is translucent, about 5 minutes. Gently place the potatoes into the skillet and fry, carefully flipping the potatoes a few times, until slices are browned around the edges. Sprinkle with salt and pepper.

This is a great recipe to get kids started learning how to cook. Take a day, take a week, teach them new things each day. We used this for our 'at-home' camp week. Taught the kids how to cook one new thing each day for an entire week.

2 pounds baking potatoes, each cut into six wedges
2 tablespoons olive oil
½ teaspoon dried thyme leaves
¼ teaspoon ground black pepper
salt to taste
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange potato wedges on a baking sheet. Drizzle olive oil over the wedges; season with thyme, pepper, and salt. Turn wedges with a spatula to coat with oil and seasonings.
  • Roast potato wedges for 15 minutes, turn, and continue roasting until soft in the center, about 15 minutes more. Transfer wedges to a platter and sprinkle cheese over them.

Homemade Fritos image

The beauty of a Frito is in its simplicity: a little cornmeal, lots of salt, not much else.

Yield 2 to 4 snack-size servings

Number Of Ingredients 4

80 grams (about 1/2 cup) stone-ground or other fine cornmeal (do not use whole grain)
1/2 teaspoon salt, plus more as needed
1 teaspoon olive oil or vegetable oil
Vegetable oil for frying, optional

Steps:

  • Heat oven to 375 degrees. Cut 2 pieces of parchment the same size as a baking sheet and set aside. Bring about 3/4 cup water to a boil.
  • In a small bowl, whisk together the cornmeal and salt. Add 1/3 cup boiling water and mix with a fork until smooth. Add 1 teaspoon oil and mix again. The batter should be thick and slightly runny; if necessary, add more boiling water 1 teaspoon at a time for the desired consistency.
  • Place one sheet of parchment on a work surface, and scrape the batter into the center. Top with the second sheet of parchment and gently roll out the batter to about .33-inch thick. Transfer the parchment and rolled batter to the baking sheet. Remove the top sheet of parchment and score the batter into small rectangles. Bake until golden brown, 12 to 15 minutes. Allow to cool and break apart. Sprinkle with additional salt, if desired, and serve. Or, fry the chips as described below.
  • Set aside a plate lined with a paper towel. Fill a small skillet with about 1.5 inches vegetable oil. Place over medium heat and allow to heat for 1 to 2 minutes. Test with a small piece of a chip; it should sink to the bottom of the pan, sizzle, float to the top and turn pale golden brown in about 30 seconds. Fry half the chips, using a metal strainer to transfer to the paper towel to drain. Repeat with remaining chips. Sprinkle with salt, if desired, and serve.
