- Heat oven to 375°F.
- Cook shells al dente according to package directions.
- Cook onion and red bell pepper in butter until tender, about 5 minutes. Stir in salt and chili powder.
- In a large bowl combine soup, onion mixture, milk and 2 cups cheddar cheese and parmesan cheese. Mix well. Stir in chicken, pasta and green chiles.
- Spread into a 9x13 casserole dish. Top with remaining cheese.
- Bake 30-35 minutes or until hot and bubbly.

TRIPLE CHEESY CHICKEN CASSEROLE
I made this cheesy chicken casserole recipe by accident, but it turned into a very happy accident! I thought I was adding sour cream but wasn't paying any attention and ended up adding cream cheese. I will never make it with sour cream again it was so good!

- Preheat the oven to 400 degrees F (200 degrees C).
- Mix cream of chicken soup, cream cheese, mozzarella cheese, Cheddar cheese, and mayonnaise together. Mix well and add chicken; make sure cream cheese is fully incorporated. Put into a 9x13-inch glass baking dish. Crush crackers and sprinkle evenly over top of chicken. Dot margarine evenly over crushed up crackers.
- Bake in the preheated oven until the top is browned and casserole is bubbling, 30 to 45 minutes.

This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

- Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
- Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. - Bring water, chicken broth, and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes.
- While rice is cooking, preheat the oven to 375 degrees F (190 degrees C).
- Place shredded chicken in a large casserole dish. Add soup, water chestnuts, Cheddar cheese, broccoli, mushrooms, cayenne, salt, and pepper. Stir well, then spread the top so it's even.
- Bake in the preheated oven until nicely browned and bubbly, 30 to 45 minutes.

My 18 year old daughter was bored and came up with this particular recipe. I'm sure there are plenty of similar recipes out there, but this Mama's proud of her little girl's creativity.

Steps:
- 1. Preheat oven to 350*
- 2. Boil chicken breasts, adding soul (sp?) seasoning to taste. Remove chicken and cube after cooled a bit.
- 3. Simmer cream of mushroom soup in med. saucepan over med. heat. Add milk and stir until smooth. Add 2 cp. of shredded chedder cheese and stir until smooth. Note: See step 7
- 4. Meanwhile, cook and drain pasta.
- 5. Completely drain veg-all.
- 6. Pour soup mixture into lg. bowl. Add veg-all, stirring until well mixed. Add cooked pasta, again stirring until well mixed.
- 7. Pour mixture into 9x13 glass casserole dish. Sprinkle remaining cheese on top. Note: you may add all the cheese to the soup mixture rather than sprinkling it on top.
- 8. Cook at 350* for approx. 30 minutes.
