Steps:
- In a bowl, cream butter and sugar. Add egg yolk and almond extract; mix well. Combine the flour, cornflakes and salt; gradually add to creamed mixture and mix well. Stir in chips. Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Coat bottom of glass with cooking spray, then dip in sugar. Flatten cookies with prepared glass, redipping in sugar as needed. Bake at 375° for 10-12 minutes or until the cookies are golden brown around the edges. Remove to wire racks to cool.

Steps:
- Heat oven to 375*F.
- Combine butter flavored crisco, brown sugar, milk, and cherry extract in large bowl.
- Beat at medium speed until well blended.
- Beat egg into creamed mixture.
- Combine flour, salt, and baking soda.
- Mix into creamed mixture just until blended.
- Stir in cherry chips and almonds.
- Drop rounded tablespoons of dough 3-inches apart on an ungreased baking sheet.
- Bake at 375*F.
- for 8-10 minutes for chewy cookies, or 11-13 minutes for crisp cookies.
- DO NOT OVERBAKE.
- Cool 2 minutes on baking sheet.
- Remove cookies to racks to cool completely.

CHERRY CHIP COOKIES
Steps:
- Preheat the oven to 350°F, and line a large baking sheet with parchment paper.
- In a large mixing bowl, add cream cheese. Beat with a hand mixer until smooth and creamy. Add the egg and mix on medium until combined, scraping down the sides of the bowl as needed.
- Slowly add the sugar cookie mix to the bowl, and continue to mix on medium until all ingredients are incorporated.
- Gently fold in the cherry chips.
- Using a 2 tablespoon scoop, add the dough to the lined baking sheet, leaving 2 inches on each side to allow for spreading.
- Bake 8-12 minutes, or until golden brown.
- Allow the cookies to cool slightly before serving.

- Preheat oven to 300 degrees F (150 degrees C).
- Combine margarine, confectioner's sugar and vanilla. Beat until fluffy. Add flour, baking soda and oats. Mix well. Stir in cherry flavored chips (other flavors work well, too!).
- Drop by rounded teaspoonful onto ungreased cookie sheets and flatten slightly with fingers. Bake for 12 minutes. Remove immediately from cookie sheets and onto wire racks to cool.

- Preheat oven to 350°. In a large bowl, beat butter, confectioners' sugar and salt until blended. Beat in cherry juice, extract and, if desired, food coloring. Gradually beat in flour. Stir in cherries., Shape dough into 1-in. balls. Place 1 in. apart on greased baking sheets. , Bake 8-10 minutes or until bottoms are light brown. - Heat oven to 190C/fan 170C/gas 5. Beat the butter, sugars and egg until smooth, then mix in the flour, chocolates and cherry pieces and ½ tsp salt. Spoon onto non-stick baking sheets in large rough blobs - you'll get 20 out of this mix. Make sure they are well spaced as the cookies grow substantially as they bake. The raw dough can be frozen.
- Bake for 12-14 mins until just golden, but still quite pale and soft in the middle. If baking from frozen, give them a few mins more. Cool on the sheets for 5 mins, then lift onto racks with a fish slice and leave to cool completely.

- Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside. In a large bowl, sift together flour and baking soda.
- In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and both sugars on medium speed until light and fluffy, 2 to 3 minutes, scraping down the sides of the bowl once or twice during mixing. Add the egg; mix on high speed to combine. Add the vanilla; mix to combine. Scrape down the sides of the bowl.
- Add flour mixture to egg mixture, and mix on low speed until well combined. Add the oats, cherries, chocolate, and toffee pieces; mix to combine after each addition.
- Spoon a heaping tablespoon of dough onto a lined baking sheet. Repeat, spacing 2 inches apart.
- Bake cookies until golden brown, 14 to 16 minutes, rotating baking sheet halfway through. Transfer to a wire rack to cool. Store in an airtight container up to 2 days.
