- Cook macaroni according to package directions. Meanwhile, in a Dutch oven, combine the milk, butter, dressing mix and seasonings; heat through. Stir in Monterey Jack and Colby cheeses until melted. Stir in sour cream., Drain macaroni; stir into cheese sauce with the Saltines. Sprinkle with Parmesan cheese.

Chicken Ranch Macaroni and Cheese is a pile of ranch-seasoned cheesy elbow macaroni topped with ranch seasoned chicken and crumbled bacon.

Steps:
- In a large mixing bowl, combine chicken and ranch seasoning. Toss to coat evenly.
- Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken in batches. Cook 1-2 minutes on each side (or until golden brown and internal temperature is 165°F). Remove from heat and tent with aluminum foil to keep warm.
- Wipe out the skillet to use for the macaroni and cheese.
- In the skillet, melt the butter over medium heat.
- Add the flour and whisk constantly for 1-2 minutes (or until the mixture turns light brown).
- Remove from heat and gradually pour in the warm milk, whisking constantly.
- Return the pan to the heat and whisk another 3-5 minutes, or until thickened.
- Add the salt, garlic powder, and ranch seasoning. Stir to combine and remove from heat.
- Add the cheeses, stirring to melt.
- Pour the cooked noodles over the top of the sauce. Stir to combine.
- Season with salt and pepper, and top with the chicken, bacon, and chopped parsley.

- Pre-heat oven to 350 degrees.
- Cook macaroni according to package.
- Butter bottom of casserole pan.
- Pour about 1" of milk into bottom of pan.
- Cut cheese into small cubes (1-2") and mix with noodles in pan (I like to pour a layer of noodles, layer chunks of cheese, then pour the rest of noodles on top. Scatter the rest of the cheese chunks throughout the noodles).
- Layer the shredded cheese on top of the casserole.
- Bake in oven until cheese is melted and slightly browned for about 30 minutes.

- Cook macaroni 10 minutes in boiling salted water.
- Coat microwave safe casserole dish with melted butter.
- Put cheese cubes, milk, and pepper in butter-coated, 2-quart casserole dish and microwave six minutes on medium power or until cheese is melted. Stir until it creates cheese sauce.
- Add cooked macaroni to the cheese sauce. Stir until all macaroni shells are coated with cheese sauce.
- Slice cheddar cheese into approximately 3/8" slices and insert slices into macaroni and cheese sauce mixture.
- Bake at 350 degrees for 35 minutes or until browned.

- Preheat oven to 350°. In a 6-qt. stockpot, cook macaroni according to package directions for al dente; drain and return to pot., Meanwhile, in a medium saucepan, melt butter over medium heat. Stir in flour, salt and pepper until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Stir in cheeses until blended. - Place a pot of water on to boil and once boiling, salt the water and cook the gemelli to just under done, still a bit chewy. Drain and set aside.
- While water comes to a boil, melt butter in a small sauce pan over medium low and once melted, add flour and cook for 3-4 minutes until the raw flour smell is gone and it starts to smell a bit nutty. Remove from heat and set aside.
