Our vegetarian tray bake packs in plenty of seasonal veg and salty halloumi for a vibrant summer dinner ready in 30 minutes

4 courgettes, cut into small chunks
1 red onion, cut into slim wedges
3 large cloves garlic, skins left on
3 tbsp olive oil
300g cherry tomatoes
250g halloumi, sliced
¼ tsp cumin seeds
a few pinches dried chilli flakes (optional)
flatbreads, to serve
hummus and hot sauce, to serve

Steps:

  • Heat the oven to 200C/fan 180C/gas 6. Toss the courgettes, onion and garlic with the olive oil, and tip into a large, shallow baking dish. Season well and roast for 10 minutes.
  • Stir in the cherry tomatoes and sit the halloumi slices on top. Sprinkle over the cumin seeds and chilli flakes, if using. Cook for another 15 minutes until the tomatoes start to burst and release juice, and the halloumi is turning golden.
  • Squeeze the garlic cloves out of their skins and mash into the oil and juices in the baking dish, stirring it in. Spoon everything onto plates and serve with soft flatbreads and hummus or hot sauce, if you like.

Roasted roots & halloumi traybake with courgette tangles image

The kids' favourite dinners are always the traybakes - we cannot get enough of them in our family! Our trick for keeping it fresh is to combine roasted ingredients with fresh ones and to top them with a good sauce or pesto, giving a mix of temperatures as well as textures. We use a spiraliser to create the vegetable tangles but a julienne peeler will also do the trick.

800 g mixed root veg, (potatoes, carrots, parsnips, beetroots)
2 red peppers
1 small broccoli, or cauliflower
olive oil
250 g halloumi cheese
1 courgette, (or 1 cucumber, 2 carrots or 2 beetroots)
1 large eating apple
100 g lamb's lettuce, or spinach
4 tablespoons quality green pesto

Steps:

  • Preheat the oven to 200ºC/400ºF/gas 6.
  • Scrub the root veg and cut into bite-sized pieces along with the peppers, discarding the seeds. Cut the broccoli or cauliflower into florets.
  • Spread the veg out in a large roasting tray, drizzle with 3 tablespoons of oil, season with sea salt and black pepper and toss well to coat. Roast for 20 minutes, or until the vegetables are tender and coloured.
  • Cut the halloumi into 2cm pieces and scatter over the veg. Switch the oven to grill, increase the temperature and grill for 5 to 10 minutes, or until the cheese is soft and golden.
  • Spiralise the courgette (or other chosen vegetables), then core and finely slice the apple. Combine the apple with the roasted veggies, then stir through the courgetti and spinach.
  • Mix the pesto with 2 tablespoons of oil and drizzle over to serve.

750g baby new potatoes , halved
2 medium red onions , quartered and broken up into large pieces
4 tbsp olive oil
400g can chickpeas , drained
1 large red pepper , sliced into strips
½ romanesco broccoli or cauliflower (about 400g), cut into small florets
250g mixed colour cherry tomatoes
4 garlic cloves , peeled
250g pack reduced fat halloumi , thinly sliced
small bunch basil , leaves torn

Steps:

  • Heat oven to 160C/140C fan/gas 3. Put the potatoes in a large roasting tin with the onion. Pour over 2 tbsp olive oil and roast in the oven for about 30 mins.
  • Add the chickpeas, pepper, romanesco, tomatoes and garlic. Drizzle with 2 tbsp oil, then roast for a further 20-25 mins until everything is cooked and browning nicely. Toss together briefly and put the halloumi slices on top. Put it under the grill for 5-10 mins, or until the cheese is melting and browning (keep an eye on it). Scatter over the basil leaves to serve.

Make this all-in-one, meat-free veg and halloumi dinner when you want something simple but hearty. Bursting with flavour, it's sure to be a crowd-pleaser

2 large Romano peppers, quartered
2 courgettes, cut into 1cm rounds
2 red onions, cut into wedges
1 tbsp rapeseed oil
200g cherry tomatoes on the vine
1 tbsp ras el hanout
2 tsp dried oregano
1 tbsp rose harissa
1 preserved lemon, peel thinly sliced, pith removed
400g can chickpeas, drained
220g block of lighter halloumi
½ small bunch of parsley, finely chopped
fat-free yogurt, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Toss the peppers, courgettes and red onion wedges together in a roasting tin along with the rapeseed oil, and roast for 15 mins. Tip in the cherry tomatoes, ras el hanout, oregano, harissa, preserved lemon and chickpeas, and toss to combine. Cut deep slits into the top of the halloumi, about halfway down, in a criss-cross pattern. Nestle the halloumi among the veg in the tin and roast for a further 15-20 mins until the cheese is lightly golden and the veg is tender.
  • Scatter over the parsley, then drizzle over some yogurt just before serving.
