TENDER HOMEMADE SOUR CREAM BISCUITS (NO-FAIL RECIPE)
I've tried biscuit recipes for most of my life. Some work, some don't. Some are ok, but this one is GOOD. And it's an easy NO-FAIL recipe. I haven't even tried another one in years. I've been making these for a very long time now, and cannot remember where it came from. :/ But if you love homemade biscuits and have never had very...

Steps:
- 1. In medium-sized bowl, whisk first 4 ingredients til well mixed.
- 2. Add sour cream in spoonfuls on top, add oil and mix til all is just moistened with a spoon. Switch to using your hands turning the dough to get all the last of the dry stuff on the bottom of the bowl. Knead 8 times on floured surface.
- 3. Roll thick to only about an 8" circle. Just a few passes with your (floured) rolling pin. Cut out 6 biscuits with a biscuit cutter or a floured glass. Get 2 more out of the last of the dough. (Bunch it back together, knead it just a bit, pat or roll it and cut.) Pitch any last little tidbit if any left. I place mine on my old round metal pizza pan covered with foil and sprayed with butter-flavored Pam. But a cookie sheet will work just fine.
- 4. Place little pats of butter on top, or spread it a little if the butter is VERY soft and doesn't deflate the biscuits while doing so. Bake in hot, preheated 425 oven for 12-15 minutes (ovens vary) or til golden brown on top. Remove from oven and butter tops again with other half of butter. Serve warm with more butter and homemade jam or honey. Makes 8 tall sour cream biscuits.
7-UP SOUR CREAM BISCUITS
I saw this super-easy recipe floating around Facebook and had to give it a try. The biscuits are surprisingly delicious & don't taste like Bisquick! I'm only adding the recipe here so I can find it again in the future when it's time to add it to a Family Favorites cookbook. =^..^=

Steps:
- 1. Mist a 13 x 9" baking dish with cooking spray. Add the stick of butter & place in a cold oven. Preheat oven to 425 degrees F.
- 2. In a large bowl, add the Bisquick, sour cream, and 7-Up. Stir together until well-blended. The dough will be soft & sticky at this point.
- 3. Sprinkle a little more Bisquick on a clean counter and spoon out the dough on it. Dust a little more Bisquick over the dough, then on your hands. Knead & fold over the dough maybe 8 or 10 times, adding a little more Bisquick, if needed, until dough can be patted out.
- 4. Dip a biscuit cutter (or a glass) into some Bisquick and cut out the biscuits.
- 5. When the butter has melted, remove the pan from the oven.
- 6. Take each biscuit in turn and put it in the melted butter, then turn it over so both sides are buttered. Continue until all biscuits are in the baking dish.
- 7. Bake at 425 degrees F. for about 12-15 minutes, or until browned on top & bottom. Check early the first time you make them since all ovens are different!
- 8. Although I put butter on this biscuit for the photo, it didn't need it! The melted butter from the recipe is plenty.

I'm also thinking of cutting back the melted butter (maybe 3/4 of the stick?) and adding some sugar to the baking mix in Step #2 to make Sweet Biscuits for Strawberry Shortcakes. What do you think? =^..^=

- Preheat the oven to 400 degrees F. Spray an 8x8 baking pan with non-stick cooking spray, if needed.
- Crack egg in a bowl and beat with a fork. Add the sour cream and sugar. Grate the cold butter into the mixing bowl. Add in the remaining dry ingredients and stir just until mixed. Dough will be sticky.
- Lightly flour a counter top and use a rubber scraper to scrape the dough out from the bowl. Sprinkle some additional flour on top and lightly knead a few times. Shape it into a mound and pat dough out to 1" thickness. I just use my hands!
- Spray biscuit cutters with non-stick spray. If you don't have cutters, you can use the open end of a cup, canning jar rings or simply cut them with a knife and form balls. Cut dough to form 9 biscuits. If you have leftover dough, divide it up, pat each piece flat and place it on the underside of each of the 9 biscuits.
