These are appetizers, very easy and very good!

1 (1 pound) loaf cocktail rye bread
1 cup thousand island dressing
1 ½ pounds deli sliced corned beef
1 (16 ounce) jar sauerkraut, rinsed and well drained
1 pound sliced Swiss cheese

Steps:

  • Preheat the oven's broiler.
  • Arrange cocktail rye slices on a baking sheet. Top each one with about 2 teaspoons of thousand island salad dressing, then fold about 1/2 slice of corned beef to fit the bread, and lay over the dressing. Place a small amount of sauerkraut over the meat, then top with 1/4 slice of the Swiss cheese, or a slice about as big as the bread.
  • Broil for 3 to 5 minutes, until cheese is melted. Serve warm.

If you like reubens - your gonna love these cute little appetizer snacks. I've also made these with the grands biscuits - when more than a snack was needed!

6 ounces corned beef
1/4 cup mayonnaise
3/4 cup shredded swiss cheese
2 (10 count) cans refrigerated biscuits
1/2 cup well-drained sauerkraut
1 egg white, beaten

Steps:

  • In a bowl, mash corned beef with a fork until fairly smooth; Stir in cheese, sauerkraut and mayonnaise mixing well.
  • Separate dough; Stretch and pat a piece of dough into a 4" circle; Place 1 tablespoon corned beef mixture on one side of the circle; Brush the edges of the circle with egg white; Fold dough circle over filling, pressing edges to seal; Crimp the edges with a fork; Place on a lightly greased cookie sheet; Just before baking recrimp edges with a fork to strengthen seals.
  • Bake 400 degrees for 8 to 10 minutes until golden brown.

  • Place a 10" cast-iron skillet in oven; preheat to 425°. Whisk eggs, milk, and 1 tsp. mustard in a medium bowl until smooth. Whisking constantly, gradually add flour, whisking until smooth; season with salt. Stir in half of cheese and ½ tsp. pepper.
  • Carefully remove preheated skillet from oven and add butter; swirl skillet to coat. Drape half of pastrami into skillet (it’s okay if it bends and folds over itself); season with salt and pepper. Pour egg mixture over. Return skillet to oven and bake until Dutch baby is puffed and golden brown, 12–15 minutes.
  • Remove skillet from oven and heat broiler (do not fear the broiler). Drape remaining pastrami over Dutch baby; top with remaining 2 oz. cheese. Broil until cheese is melted, about 3 minutes.
