Homemade cheese buns with cheddar cheese inside and outside, these are some of the best cheese bread buns I've ever had.

Number Of Ingredients 8

600 g all-purpose flour
1 tablespoon instant yeast
1 ½ teaspoons sugar
3 teaspoons fine sea salt
375 ml water
450 g Cheddar cheese
1 egg
2 tablespoons milk

Steps:

  • Place the flour, instant dry yeast, salt, and sugar in a large bowl or in the bowl of the stand mixer. Mix well.
  • Add the lukewarm water (about 40 degrees Celsius/ 105 degrees Fahrenheit) and the grated cheese needed for the dough. Mix well and knead the dough for about 5 minutes with the hands or about 3 minutes with the stand mixer until smooth and elastic.
  • If you make the dough with fresh or active dry yeast, crumble/sprinkle the yeast in the lukewarm water, add the sugar and stir gently. Let stand for about 5 minutes, then combine with the rest of the ingredients and knead the dough.
  • Place the yeast dough in a bowl, cover with a kitchen towel and let rise in a warm place for about 2 hours or until nicely risen (Note 3).
  • Preheat the oven to 250 degrees Celsius/ 480 degrees Fahrenheit. Line a baking tray with parchment paper.
  • Grate the remaining cheese and place it on a large plate. Mix the egg and the milk in a small bowl.
  • Form a thick sausage and cut the pieces of dough with a scraper or tear the pieces directly from the dough. You will have 12 buns (Note 4).
  • Knead the dough pieces shortly on the lightly floured surface and shape them into balls.
  • Brush each cheese bun with the egg mixture and roll it into the grated cheese.
  • Place on the prepared baking tray. Cover the tray with a clean kitchen towel and let rise lightly for 15 minutes.
  • Place in the oven and bake for 18-20 minutes or until deeply golden and cooked through. Check after about 10-15 minutes. If they are already very golden, cover them loosely with a piece of aluminum foil to prevent the cheese from getting too dark.
  • Remove from the oven and let cool on a wire rack.

2 cups + 1 tablespoon flour ((268 grams))
1/4 teaspoon salt
1 teaspoon sugar
1 tablespoon olive oil
1/2 cup freshly grated Parmesan cheese (divided) ((50 grams))
1 1/2 teaspoons active dry yeast
1/2 cup + 2 tablespoons warm water* (not hot) divided ((148 grams))
1 egg beaten
1/2 cup grated mild Provolone cheese or Medium Cheddar Cheese ((50 grams))
1/4 - 1/2 cup shredded Parmesan, Cheddar etc ((25-50 grams))

Steps:

  • In the bowl of a stand up mixer mix add the flour, salt, sugar, olive oil, 3 tablespoons Parmesan cheese (20 grams) and yeast then add a 1/4 cup of water (58 grams) then start to mix with a fork.
  • Then add the beaten egg, remaining Parmesan cheese and Provolone and remaining water. Combine with a fork just until the dough starts to come together. Then add the dough hook attachment and knead for approximately 5 minutes or until smooth and elastic. (see below for hand kneading instructions). Remove dough to a lightly floured flat surface.
  • Form the dough into a ball, place in lightly oiled medium-sized bowl (make a couple of slashes on top with a knife). Cover well (I use a folded tablecloth) and let rise in a draft free area for 1-2 hours or doubled in bulk. (mine actually sat for 3 hours).
  • Remove the dough from bowl and on a lightly floured flat surface knead dough a couple of minutes, shape into 6 bun shapes, score with a knife and place on a lightly oiled parchment paper lined cookie sheet, cover and let rise for 1 hour.
  • Pre-heat oven to 400° (200° celsius).
  • Brush buns with milk and sprinkle with additional Parmesan cheese or grated Provolone. Bake for approximately 30 minutes. Let cool or eat warm. Enjoy!

1 pound lean ground beef (90% lean)
2 cups pizza sauce or pasta sauce
1 package (3-1/2 ounces) sliced pepperoni, chopped
4 slices American cheese, chopped
12 mini buns, split
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Stir in pizza sauce, pepperoni and American cheese. Cook and stir until cheese is melted, 4-5 minutes., Place buns on a baking sheet, cut sides up. Spoon meat mixture onto buns; top with mozzarella cheese. Bake until cheese is melted, about 5 minutes. If desired, serve with additional warmed pizza sauce.

I've copied this recipe for many people-one of the nice things about it is that it also makes very good breadsticks to take to covered-dish suppers or take to picnics. 5-3/4 to 6-3/4 cups all-purpose flour, divided
3 tablespoons sugar
1-1/2 teaspoons salt
2 packages (1/4 ounce each) active dry yeast
2 tablespoons butter, softened
2 cups warm water (120° to 130°)
1-1/2 cups shredded cheddar cheese
1/4 cup dried minced onion

Steps:

  • In a large bowl, combine 2 cups flour, sugar, salt, yeast and butter. Gradually add hot water. Beat for 2 minutes on medium speed. Add 1 cup flour and beat on high speed 2 minutes. , Stir in cheese, onion and enough of the remaining flour to form a soft dough. Turn out onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down and turn out onto a slightly floured surface. Divide dough into 20 pieces; shape into smooth balls and place on greased baking sheets. Cover and let rise in a warm place until doubled, about 45 minutes. Bake at 400° for 15-20 minutes. Remove from the pans and cool on wire racks.

3 1/2 cups flour (plus more for kneading)
1 1/2 teaspoons salt
2 1/2 cups low-fat cheddar cheese (shredded)

1/2 tablespoon garlic powder
1/2 teaspoon chipotle pepper

1/4 cup olive oil
1/3 cup onion (minced)

Steps:

  • mix yeast, water, and sugar and set aside for 5 min
  • mix flour, onion, and spices.
  • add yeast mix and oil to flour mix all at once and stir until dough forms.
  • knead until smooth and elastic and not too sticky, adding more flour if needed. cover with a dish cloth and leave in a warm place (like your oven that was left on the lowest setting for 5 min but be sure to put an oven mitt under the bowl) for about 30 min or until doubled in size.
  • punch down dough and place on a lightly floured surface. roll out into about a 1/4 inch thick rectangle and sprinkle about 1 1/2 cups of the cheese over top.
  • roll up lengthwise like a jelly roll and cut into 1 1/2 inch slices (these tend to spread sideways rather than up). place into a greased pan, about an inch apart so when they spread they'll be just touching. i used the bottom of a roasting pan since my lasagna pan was a bit too small. return to the warm place until doubled again (probably more like 20 min this time).
  • top with the remaining cheese now that there's enough surface area to put it.
  • bake at 325 for about 30 min or until exposed bread bits are starting to turn a bit golden, cool and pull apart carefully.
