16 ounces dried black-eyed peas
1 cup chopped celery
1 cup chopped onion
1 cup chopped carrots or 1 cup chopped bell pepper (may mix)
5 cloves garlic, minced
1 -2 bay leaf
1 lb andouille sausages or 1 lb kielbasa, cut into chunks
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 tablespoon cajun spices or 1 tablespoon spice essence
49 1/2 ounces chicken broth (large can)
cayenne pepper sauce or Tabasco sauce, to taste

Steps:

  • Sort peas and soak in plenty of water overnight.
  • Before cooking, drain and rinse.
  • Place all ingredients into crock pot and cook on low for 8-10 hours or until peas are nicely tender.
  • Remove bay leaves before serving.
  • Serve with additional tabasco, if desired.

2 tablespoons jalapenos, finely chopped
1 garlic clove, minced
1 pinch black pepper, freshly ground
2 beef bouillon cubes
3 cups swiss cheese or 3 cups cheddar cheese, grated
1 cup onion, chopped
2 cups tomatoes, chopped
1 pinch salt
3 cups water
4 (15 7/8 ounce) cans black-eyed peas, drained

Steps:

  • Saute bacon in large saucepan until lightly browned.
  • Add onion, jalapenos, tomatoes, garlic, salt and pepper to bacon drippings; saute 5 minutes.
  • Add water and bouillon, dissolving the cubes in the mixture.
  • Add peas to bouillon mixture.
  • Add cheese and simmer gently until cheese is melted.

2 slices thick-cut bacon, sliced
5 cloves garlic, peeled
5 dried red chiles, broken up
2 bay leaves
1 pound dried black-eyed peas
1 quart low-sodium chicken stock
2 tomatoes, quartered
1/4 bunch fresh thyme, leaves removed
Kosher salt and freshly ground black pepper
1 lemon, juiced
4 green onions, chopped
1/4 cup chopped fresh cilantro leaves

Steps:

  • In a large pot over medium heat, add bacon and render until crisp. Remove the bacon to the paper towel-lined plate. To the same pot with rendered bacon fat, add the garlic, chiles, bay leaves, and dried peas and stir to combine. Pour in the chicken stock and add the tomatoes. Simmer over medium-low heat for 1 hour until peas are tender.
  • Transfer about 1 to 2 cups of the peas to a blender and puree until smooth. Place the blended peas back into the pot and stir to incorporate. Add the thyme leaves and season with salt and pepper, to taste. Continue to cook for another 15 minutes. Place in a serving dish and dress the peas with the lemon juice, green onions, cilantro and bacon before serving

1 pound bulk pork sausage
1 pound ground beef
1 large onion, diced
4 cups water
3 (15 ounce) cans black-eyed peas, drained
1 (28 ounce) can diced tomatoes
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), undrained
1 teaspoon Worcestershire sauce
¾ teaspoon garlic salt
½ teaspoon salt
1 (4 ounce) can chopped green chilies
4 teaspoons molasses
4 beef bouillon cubes
¼ teaspoon ground black pepper
¼ teaspoon ground cumin

Steps:

  • In a large Dutch oven, cook and stir the pork sausage and ground beef with the onion over medium heat until the meat is no longer pink, 10 to 12 minutes; drain off excess fat. Pour in the water, and stir in black-eyed peas, diced tomatoes, tomatoes with green chiles, Worcestershire sauce, garlic salt, salt, canned green chilies, molasses, beef bouillon cubes, black pepper, and cumin until thoroughly mixed.
  • Bring the soup to a boil, reduce heat to a simmer, cover, and simmer for 45 minutes.

2 tablespoons olive oil
2 3/4 cups finely chopped onions
1 tablespoon minced garlic
2 15-ounce cans black-eyed peas, drained
2 1/4 cups low-salt chicken broth
2 8-ounce cans tomato sauce
2 1/2 teaspoons dried oregano
Large pinch of cayenne pepper
1 teaspoon red wine vinegar
Freshly grated Parmesan cheese

Steps:

  • Heat olive oil in heavy large pot over medium heat. Add onions and garlic and sauté until onions are golden and tender, about 8 minutes. Add black-eyed peas, chicken broth, tomato sauce, oregano and cayenne pepper and bring to simmer. Simmer 15 minutes to blend flavors. Mix in vinegar. Season to taste with salt and pepper. (Can be prepared up to 1 day ahead. Cover and refrigerate. Bring to simmer before serving.)
  • Ladle soup into bowls. Sprinkle with Parmesan cheese and serve.

1/2 teaspoon Italian seasoning

1 pound dried black-eyed peas
1/2 pound bacon strips, cooked and crumbled
1 tablespoon butter
1 large onion, chopped
1 garlic clove, minced
1/2 teaspoon dried thyme
Salt to taste
Fresh thyme leaves and additional cooked and crumbled bacon, optional

Steps:

  • Rinse and sort black-eyed peas. Place peas and bacon in a Dutch oven; add water to cover. Bring to a boil; boil 2 minutes. Remove from heat; let soak, covered, 1 hour. Do not drain., In a cast-iron or other heavy skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer. Stir in thyme., Stir into pea mixture. Bring to a boil; reduce heat. Simmer, covered, until peas are tender, stirring occasionally, 30-40 minutes. Sprinkle with salt to taste. 1 medium onion, chopped
2 jalapenos, seeded and chopped
1 can stewed tomatoes
1 clove garlic, chopped

2 teaspoons beef bouillon granules
5 cans black-eyed peas (I like Trappey's brand)
3 cups grated cheddar cheese

  • Saute onion, jalepenos, garlic and salt and pepper in 1 tbls.

I loved this soup so I got some of the ingredients from an old manager but he couldn't give me the whole recipe. I put it all together and added a few ingredients, peaked and tuned and "voila"...ummm ummm...

4 can(s) black-eyed peas
2 can(s) tomatoes and chiles
3 can(s) tomatoes, canned with juice
1 onions, small white chopped
3 slice bacon, uncooked or ham
2 can(s) beef broth
2 tsp cruched red pepper or adjust to tatse
2 Tbsp chili powder
2 Tbsp zatarain's creole seasoning
1 Tbsp garlic pepper

Steps:

  • 1. Combine all the ingredients into 1 large pot, stir, well, cover and cook on medium heat 2 to 4 hours or until peas are soft and well seasoned.. If you follow this recipe it is very spicy. But you can replace 1 can of the Rotel tomatoes for a can of chopped tomatoes an omit the crushed red pepper. Cook 2 to 4 hours or until peas are soft and well seasoned. This soup is great year round with a piece hot piping hot cornbread. ENJOY
