Bacon & Cheese Egg Bites image

These Bacon & Cheese Egg Bites are quick, easy and oh so tasty! They can be made ahead for on-the-go breakfasts or to feed a hungry crowd.

7 large eggs
1/2 teaspoon kosher salt
1/4 cup milk
1-1/2 cups shredded monterey jack & cheddar cheese, divided
3/4 cup real cooked bacon bits

Steps:

  • Preheat oven to 350°F. Spray a 24-cup mini muffin pan with non-stick cooking spray and set aside.
  • In a large bowl, whisk together the eggs until smooth. Add the salt, milk, 1 cup cheese and bacon bits and mix until well combined.
  • Spoon the mixture into the mini muffin cups, filling each one 2/3 full. Sprinkle remaining 1/2 cup cheese evenly over filled muffin cups.
  • Bake for 23-25 minutes or until the tops and edges start to turn golden. Let set in pan 5 minutes before gently lifting each one out with a table knife.

7 slices bacon
28 fancy toothpicks
28 cherry tomatoes
3 leaves romaine lettuce, cut into 28 (1 1/2-inch) pieces
1/2 cup Original Bisquick™ mix
1 lb ground beef
1 egg
1/4 cup mayonnaise
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
2 oz Cheddar cheese, cut into 1/4-inch cubes (about 1/2 cup)

Steps:

  • In 10-inch nonstick skillet, cook bacon over medium heat, turning often, until browned but not overly crisp. Drain on paper towels. Discard all but 1 tablespoon drippings. Cut each bacon slice into 4 pieces.
  • On each toothpick, thread 1 tomato half, 1 bacon piece and 1 lettuce piece; set aside.
  • In large bowl, mix remaining ingredients except cheese. Fold in cheese. Shape tablespoonfuls of mixture into meatballs; flatten slightly to resemble hamburgers.
  • In same skillet, heat bacon drippings over medium-high heat. Cook burgers in drippings 2 to 3 minutes on each side or until meat is no longer pink. Insert 1 toothpick in each burger; serve immediately.

1 (3 ounce) package cream cheese, softened
1/4 bacon, pieces (1/4 cup fried crisp and crumbled)
2 tablespoons minced onions
1/8 teaspoon ground black pepper
1 (8 ounce) package refrigerated crescent dinner rolls

Steps:

  • Preheat oven to 350°F.
  • Combine cream cheese, bacon, onion and pepper in a bowl.
  • Separate crescent rolls into two rectangles. Pinch seams together. Spread half of cheese mixture on each of the rectangles. Roll up, starting at longest side, and seal. Cut each roll into 16 slices. Place slices, cut side down, on a baking sheet.
  • Bake for 15 minutes or until golden-brown. Serve warm.

4 ounces cream cheese, softened
1 large egg
1 tablespoon 2% milk
1/3 cup real bacon bits
1/4 cup shredded Swiss cheese
1 tablespoon dried minced onion
1 large plum tomato, seeded and finely chopped, divided
1 tube (10.2 ounces) large refrigerated flaky biscuits

Steps:

  • In a small bowl, beat the cream cheese, egg and milk until smooth. Stir in the bacon, cheese, onion and half of the tomato; set aside., Cut each biscuit into four pieces; press each piece into a greased miniature muffin cup. Fill with cream cheese mixture; top with remaining tomato., Bake at 375° for 14-16 minutes or until a knife inserted in the center comes out clean.

  • Preheat your oven to 375 degrees. Prepare a rimmed baking sheet with tinfoil and a wire rack. Coat your wire rack lightly with cooking spray and set aside.
  • Using your handheld or stand mixer blend cream cheese and cheddar cheese together until smooth. Add crisp bacon, green onions, garlic, and jalapenos or hot sauce if using. Continue to whip until incorporated. Taste mixture just to make sure you don't want to add more of anything else, like ht sauce for example.
  • Grab a rolling pin or a large round jar and place it at your workstation. First you must cut all of the crusts off of your bread slices. I usually give the crusts to our birds. Regardless of what you do with them we will not need the crusts for this recipe!
  • Using one slice of bread at a time roll out the slice as thin as you can get it. I usually end up with each slice being about 1/8 of an inch thick. Next, spread two or three spoonfuls of the cream cheese mixture on top of each slice . Choose and edge and roll the slice up, jellyroll style, as tightly as possible. Repeat this process with all of your slices.
