CREAMY CHEESECAKE BARS
With a very rich, creamy cheesecake filling over a thick nutty crust, it's not difficult to figure out why people love Becky Stone's bars so much! They come from her kitchen in Menomonee Falls, Wisconsin.

- Preheat oven to 350°. In a small bowl, combine the flour, walnuts and brown sugar; cut in butter until crumbly. Set aside 2/3 cup for topping; press remaining crumb mixture into a greased 8-in. square baking dish. Bake 10-12 minutes or until lightly browned., Meanwhile, in a small bowl, beat cream cheese and sugar until light and fluffy. Beat in the egg, milk, lemon juice and vanilla just until blended. Pour over crust; sprinkle with reserved crumb mixture., Bake 15-20 minutes or until filling is set. Cool on a wire rack for 1 hour. Refrigerate at least 2 hours. Cut into bars. Refrigerate leftovers.

Steps:
- Preheat oven to 350 degrees F(175 degrees C).
- To make Pastry: Cream together the butter and brown sugar until light and fluffy. Add in the flour and chopped nuts and stir until mixture becomes crumbly. Set aside 1/4 cup to use as a topping.
- Press pastry mixture into 8-inch square pan and bake for 12 to 15 minutes. Let cool on rack.
- To make Filling: Beat together the white sugar, and cream cheese until smooth. Stir in the egg, milk, lemon juice, and vanilla and mix well. Spread filling mixture over baked crust. Sprinkle reserved mixture on as a topping.
- Bake for 25 to 30 minutes. Let cool on wire rack and refrigerate. Serve with fruit.

BROWN SUGAR CRUST FOR CHEESECAKES
I posted this recipe as Gail's request after an extensive search in Betty Crocker's website, and the result is this excellent crust to use for cheesecakes with fruit fillings or also for fruit pies. Enjoy it.

Steps:
- NOTES: 2/3 cup butter equals about 1 stick + 3 tablespoons aprox. You can also add chopped pecans, walnuts or almonds to the crust ingredients for a special flavor.
- Heat oven to 375°F Grease and flour 13 x 9" baking pan or a 12-inch pizza pan.
- In medium bowl, mix flour and brown sugar. Cut in butter, using fork or pastry blender until crumbly. Press firmly and evenly against bottom and side of pan.
- Bake 10 to 15 minutes or until light brown and cool.

CHEESECAKE BARS WITH BROWN SUGAR CRUST
These are a wonderful (and easy) way to satisfy a cheesecake craving. I like to spoon cherry pie filling over mine too! For more lemon flavor add some grated zest to the cream cheese mixture.

- Preheat oven to 350.
- Cream together butter and brown sugar until smooth.
- stir in flour, and walnuts to create a crumbly mixture.
- reserve 1 cup crust mixture to use as topping and press the rest into bottom of an ungreased 8x8 baking dish. Bake for 9-11 minutes until browned.
- cream together cream cheese and white sugar until smooth. Add the vanilla extract, milk, lemon juice and egg. Mix well and pour over baked crust.
- Add crumb topping and bake for 23-27 minutes until golded brown on top.
- Remove from oven and allow to cool. If desired to with cherry pie filling or other topping.
