1 large onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
3 cans (8 ounces each) no-salt-added tomato sauce
2 cans (6 ounces each) tomato paste
1-1/2 cups water
1/2 cup dry red wine or vegetable broth
2 tablespoons Italian seasoning
2 teaspoons sugar
2 teaspoons dried oregano
FILLING:
1 package (8 ounces) fat-free cream cheese
1-1/4 cups 2% cottage cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/4 cup grated Parmesan cheese
2 large eggs, lightly beaten
1/2 teaspoon salt
1 package (8 ounces) manicotti shells
1 cup shredded part-skim mozzarella cheese

Steps:

  • In a large saucepan, saute onion and garlic in oil until tender. Stir in the tomato sauce, tomato paste, water, wine, Italian seasoning, sugar and oregano. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes, stirring occasionally., Meanwhile, for filling, in a large bowl, beat cream cheese until smooth. Stir in the cottage cheese, spinach, Parmesan cheese, eggs and salt., Stuff cream cheese mixture into uncooked manicotti shells. Spread 1 cup sauce into a 13x9-in. baking dish coated with cooking spay. Arrange manicotti over sauce. Pour remaining sauce over top., Cover and bake at 350° for 50-55 minutes or until pasta is tender. Uncover; sprinkle with mozzarella cheese. Bake 5-10 minutes longer or until cheese is melted.

1 tablespoon canola oil
3 garlic cloves, minced
1-1/2 cups ricotta cheese
1 cup shredded part-skim mozzarella cheese, divided
4 ounces cream cheese, softened
6 tablespoons grated Parmesan cheese, divided
1 teaspoon Italian seasoning
1/2 teaspoon pepper
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
8 manicotti shells, cooked and drained
1 jar (26 ounces) spaghetti sauce

Steps:

  • In a small skillet, saute onion in oil for 3 minutes. Add garlic; cook 1 minute longer. Set aside. , In a large bowl, combine the ricotta, 1/2 cup mozzarella cheese, cream cheese, 4 tablespoons Parmesan cheese, Italian seasoning and pepper; beat until smooth. Stir in onion mixture and spinach. Stuff into the manicotti shells., Pour half of the spaghetti sauce into a greased 13x9-in. baking dish. Arrange shells over sauce; top with remaining sauce., Cover and bake at 350° for 25 minutes. Uncover; sprinkle with remaining mozzarella and Parmesan cheeses. Bake 5-10 minutes longer or until cheese is melted.

Magnificent jumbo pasta shells stuffed to bursting with cheesy spinach filling.

32 jumbo pasta shells
2 cups ricotta cheese
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 cup grated Parmesan cheese
2 tablespoons fennel seed
2 teaspoons dried basil
4 cloves garlic, minced
salt and pepper to taste
3 ½ cups spaghetti sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to boil, gently place pasta shells in boiling water; bring water back to boil. Cook until noodles are just tender; drain well.
  • Squeeze spinach dry. Combine spinach, ricotta, 1/3 cup Parmesan cheese, fennel, basil and garlic in a large mixing bowl. Season with salt and pepper; mix well.
  • Spread 1/2 cup marinara sauce evenly over the bottom of a 9x13 inch baking dish.
  • Fill each pasta shell with the spinach cheese mixture. Arrange the shells, filling side up in the baking dish. Spoon remaining marinara sauce over the shells. Sprinkle remaining Parmesan cheese on top of the shells.
  • Cover the pan loosely with aluminum foil and bake in preheated oven until heated through; about 30 minutes.

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
½ cup minced onion
1 egg
2 teaspoons minced fresh parsley
½ teaspoon pepper

1 ½ cups shredded mozzarella cheese, divided
½ cup grated Parmesan cheese, divided
2 (26 ounce) jars spaghetti sauce

Cheese and Spinach Jumbo Shell

I combined a Stuffed Jumbo Shell recipe with our favorite Manicotti recipe to make this easy cheese and spinach stuffed shell recipe. Don't be scared by the long ingredient list; it goes together quickly. Cottage cheese is an easy substitute for ricotta cheese. You can also use any spaghetti sauce you'd like, including homemade.

1 (12 ounce) package jumbo pasta shells, uncooked
24 ounces small curd cottage cheese (I used lowfat, any kind works)
2 cups shredded mozzarella cheese
1 cup grated parmesan cheese
2 eggs
1 tablespoon parsley
1 tablespoon instant chicken bouillon (dried)
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/2 teaspoon dried thyme leaves
1/4 teaspoon dried basil
1 small onion, chopped finely
1 (10 ounce) package frozen chopped spinach, thawed and drained
26 ounces spaghetti sauce

Steps:

  • Pre-heat oven to 375 degrees.
  • Cook pasta according to package directions; drain.
  • Mix remaining ingredients, except for mozzarella cheese, 1/2 cup of parmesan and sauce, in bowl.
  • Spread about 1/2 cup of sauce on the bottom of a 13x9x2-inch baking dish.
  • Fill each shell with about 1 heaping tablespoon of cottage cheese mixture; layer 1/2 of shells in prepared dish. Spread 1/2 of remaining sauce over the shells; layer remaining filled shells over sauce. Spread remaining sauce over shells.
  • Sprinkle with reserved parmesan cheese and mozzarella.
  • Cover with foil and bake 35 minutes, or until cheese is melted and sauce is bubbly. It will probably take the full time, though, to heat the shells in the middle.

I got this recipe from an old boyfriend and have made it several times and family and friends always want the recipe. A bit different from the usual as it uses cream cheese rather than ricotta. Hope you enjoy!

1 1/2 lbs ground beef
2/3 lb ground Italian sausage
1 medium onion, chopped
1 teaspoon marjoram
1 teaspoon sweet basil
1 teaspoon season salt (I like Nature's Seasoning)
1/4 teaspoon garlic powder (or more if you love garlic I usually add more)
1 lb cream cheese (regular, low fat or no fat, all work well)
manicotti or jumbo pasta shells
32 ounces Italian sauce
1/2 lb shredded Italian cheese, mix (Mozzarella, Fortina, Parmesan)

Steps:

  • Brown meats & onion together. Drain. Add seasonings and cream cheese, not the sauce yet. Prepare manicotti shells or jumbo shells according to package instructions. Stuff pasta with meat mixture (I use a baggie and clip off a corner to fill).Sppon a smal amount of the sauce in the bottom of a baking dish and arrange filled pasta in the dish. Cover with favorite Italian sauce and top with shredded cheese (may cover with foil if you do not like your cheese too brown and remove the last 10 minutes). Bake at 350 degrees for 45 minutes. Freezes well.
