3 tablespoons cooking oil
1 pinch salt
1 pinch pepper
1/4 cup white wine
1/2 shallot, minced
1 bay leaf
1 pinch saffron
1/4 cup heavy cream
salt and pepper

Steps:

  • salt and pepper salmon
  • Heat up saute pan to med high heat
  • Note make sure to use pan with no melting attachments
  • pre heat oven 400°F.
  • add oil to pan
  • then place fish sear till 1/4 of the side is cooked
  • flip over and place in the over 6 min
  • for the sauce
  • in a small sauce pot add wine, shallots bay leaf and pinch of saffron
  • Reduce till almost dry discard bay leaf
  • add heavy cream, stir and reduce til slightly thick
  • salt and pepper to taste.

This salmon recipe is melt-in-your-mouth delicious! Fillets or steaks of marinated salmon are pan-fried, searing in the flavors and omega-3 goodness of the fish. The salmon is then served with a tangy Thai lemongrass-honey sauce that marries perfectly with salmon's natural flavors.

4 salmon fillets (or two larger fillets, enough for 4)
1 -3 tablespoon canola oil (for frying, or other vegetable oil)
1/2 cup rice vinegar
1/4 cup honey
4 garlic cloves, minced
1 fresh red chili, minced or 1/2 teaspoon cayenne pepper
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon soy sauce
1 tablespoon minced lemongrass
handful fresh coriander or flat leaf parsley

Steps:

  • To make the marinade/sauce, place all marinade ingredients together in a saucepan over medium-high heat. Stir as you bring the sauce to a boil.
  • Reduce heat to medium and allow to simmer for 10 minutes, uncovered. The sauce will gradually thicken (the smell of the vinegar is rather pungent as it cooks). When marinade/sauce has thickened, place in the refrigerator or freezer to cool for 5 minutes.
  • Place salmon fillets in a flat-bottomed pan or casserole dish (so that fillets aren't piled on top of each other). When the sauce/marinade has cooled (warm instead of hot), spoon 2 tablespoons over each fillet, 1 per side, slathering it over the flesh (reserve the remaining sauce for later). Marinate in the refrigerator 10 minutes or up to 24 hours.
  • Place a frying pan or wok on medium-high heat, allowing it to warm up for at least 1 minute before adding the oil (this will help prevent the fish from sticking).
  • When pan is hot, add 1-2 tablespoons oil, lifting and turning the pan to distribute evenly. Now place fillets in the pan.
  • Allow salmon to fry at least 2 minutes undisturbed before turning. If you turn the fish too soon, it will stick. Instead, allow it to "sear", and it will come freely away from the bottom of the pan.
  • Fry the fish 3-5 minutes per side, depending on the thickness of the fish. Salmon is done when inner flesh is no longer transparent. For faster cooking, cover fish while it's frying.
  • To serve: arrange on a serving platter or plates. Spoon a little of the sauce over each fillet. Place the rest in a side dish and serve as a dipping sauce (it can be re-heated or served at room temperature).

12 -16 ounces salmon fillets (6-8 oz per person, thin filets are better because they will cook more evenly)
2/3-1 cup mango juice (1/3 - 1/2 cup per person, either puree your own from fresh mangoes or Goya mango juice will do just)
scallion, chopped (for garnish, approximately a small handful per fillet)
olive oil (small amount for cooking)

Steps:

  • The skin will stick to the pan, so if it comes off easily, trim the skin off the salmon filets before cooking.
  • Otherwise, just wait for it to come off during the cooking process.
  • Heat enough oil to coat the pan, and then add the salmon fillets.
  • Pour approximately 1/3 the mango juice over the filets, then after a few minutes (3-5 depending on how thick the fillet is), flip over and add another 1/3 of the mango juice to the pan.
  • Cook the fillet until no longer pink, then remove from the pan.
  • Sprinkle with chives and serve with rice.

2 large avocados, cut and peeled
3 tablespoons freshly squeezed lime juice (can substitute lemon)
3 -4 tablespoons light olive oil (light refers to flavor and color, not calories)
1 tablespoon shallots or 1 tablespoon green onion, minced
1 tablespoon parsley, minced
1 teaspoon Dijon mustard (or to taste)
salt and pepper, to taste
1 -1 1/2 lb salmon fillet
grapeseed oil or canola oil

Steps:

  • Put avocado pieces and lime juice into a food processor or blender and pulse until blended.
  • Slowly add olive oil, pulsing, until you reach desired consistency of sauce.
  • Add minced shallots (or green onions) and parsley, pulse just until combined.
  • Remove to a bowl, add mustard, salt and pepper to taste.
  • Coat the bottom of a sauté pan with oil, heat on medium high until almost smoking.
  • Season both sides of the salmon fillets with salt and pepper, carefully lay the salmon into the pan, skin side down.

If you desire to tone it down a notch, cut the amount of cayenne pepper in half. I served each filet atop one serving of "Black Beans and Rice".

1 serving Vegetable cooking spray
1 large red pepper, chopped
1 clove garlic, minced
1 ½ cups V8 V-Fusion® Peach Mango Juice
1 mango, peeled, seeded and chopped
¼ cup honey
2 tablespoons cornstarch
1 tablespoon lime juice
¼ teaspoon cracked black pepper
4 cups fresh baby spinach
2 tablespoons chopped fresh cilantro leaves
2 cups cooked regular brown rice

Steps:

  • Season the salmon as desired.
  • Spray a 12-inch skillet with the cooking spray and heat over medium-high heat for 1 minute. Add the salmon, skin-side up and cook for about 5 minutes or until it's well browned. 1/2 cup sweet sake
1/2 cup soy sauce
1 tablespoon sugar
1 tablespoon grapeseed oil
2 scallions, chopped
2 garlic cloves, minced

sesame seeds
2 cups cooked rice (Basmati works well)

Steps:

  • Prepare tare sauce. Combine ingredients in a saucepan. Heat to a boil, then reduce heat to a simmer. Cook about 30 minutes, or until sauce is reduced to half its original quantity, stirring occasionally.
  • Allow tare sauce to cool completely.
  • Once sauce is cool, use it to marinade the salmon steaks for up to 1 hour.
  • Add grapeseed oil to a large skillet or wok over moderately high heat. Add green onion; cook for one minute. Remove with a slotted spoon.
  • Add salmon to skillet. Cook salmon about 1 minute per side.

  • Serve salmon on a bed of rice. Drizzle each salmon steak with tare sauce. Sprinkle green onion and sesame seeds on top.
