- In a large bowl, combine the flour, sugar and salt; cut in butter until mixture resembles coarse crumbs. Add water and egg yolks; stir until dough forms a ball. , Divide into eight portions; press onto the bottom and up the sides of eight 4-in. tart pans. Bake at 400° for 15-20 minutes or until golden brown. Cool on wire racks., For filling, in a large saucepan, combine the sugar, cornstarch and salt. Stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in peaches and lemon juice., Spoon into tart shells. Chill until serving. Garnish with whipped cream if desired.

EASY PEACH TARTS
Easy Peach Tarts with fresh fruit, creamy topping and flakey crust are what this time of year is all about. These little bites are perfect for a party or playful dessert.

- Heat oven to 375°F. On a floured surface, roll out and cut pastry into 3 1/4-inch-diameter circles. Place on a parchment-lined baking sheet and poke each circle several times with a fork. Beat together egg and 1 tbsp water and brush over each circle; sprinkle with extra sugar. Bake until golden, 10 to 12 min; let cool.
- Peel and cut peaches into 1/4-inch dice. Heat jam in the microwave until just hot and pass through a fine sieve. Gently toss strained jam with peaches.
- In a bowl, stir together the créme faîche and sugar. Spread about a tablespoon onto each pastry round. Top with glazed peaches and sprinkle with pistachios.

CHAMOMILE-PEACH TARTS
Steps:
- Peaches: Bring 6 cups water, sugar, and chamomile blossoms to a boil in a medium pot, stirring until sugar is dissolved. Boil gently until reduced slightly, about 10 minutes. Remove from heat and let cool 1 hour. Strain out solids, then return liquid to pot and return to a simmer. Add peach halves and cover with a parchment round. Let simmer 3 minutes, then remove from heat and let peaches cool completely in liquid. Refrigerate, covered, until chilled, at least 2 hours and up to 2 days.
- Remove peaches from liquid, peel, and cut each half into fifths. Pass liquid through a fine sieve and measure out 1 1/2 cups. Return peaches to remaining liquid. Transfer 1 1/2 cups liquid to a pot; bring to a boil and reduce until syrupy (about 2 tablespoons), about 15 minutes. Let cool completely.
- Crusts: Meanwhile, combine butter and sugar with a mixer on medium speed until smooth, about 3 minutes. Add egg yolks, then flour, salt, and tea; mix until dough just starts to come together. Dividing evenly, press dough evenly into bottom and up sides of two 4-by-13-inch rectangular tart pans with removable bottoms. Refrigerate until firm, about 1 hour.
- Preheat oven to 375 degrees. Bake crusts until golden brown, pressing down centers of tarts if puffing up, about 20 minutes. Let cool completely.
- Filling: Stir together sour cream and sugar in a bowl and spread in bottom of crusts, dividing evenly. Remove peaches from liquid and blot dry. Dividing evenly, arrange peaches over filling; drizzle with reduced syrup. Serve immediately, topped with chamomile flowers.

- Preheat oven to 375 degrees. On a lightly floured surface, roll out dough 1/8 inch thick. Using a 5-inch cutter, cut 12 rounds, re-rolling the dough as needed. Brush off excess flour, and gently fit rounds into 3 1/2-inch tart pans with removable bottoms. Trim edges with scissors, a paring knife, or a rolling pin. Place tart pans on a baking sheet. Chill for 30 minutes.
- Using a slotted spoon, remove peaches from poaching liquid. Reserve poaching liquid for another use. Arrange three peach wedges in each tart shell.
- In a medium bowl, whisk together the egg and sugar until thick and pale yellow. Add the flour and salt, and whisk until smooth. Whisk in the cream and cognac. Spoon custard around peaches in tart shells. Sprinkle lightly with sugar. Bake until the custard is puffed and golden, about 35 minutes. Transfer to wire racks to cool. Serve at room temperature.

PEACH CUSTARD TARTS

- Preheat the oven to 375 degrees F.
- For the crust: Pulse the flour, almonds, sugar and salt in a food processor until the nuts are finely ground. Add the butter and pulse until the mixture looks like coarse meal. Add the ice water and pulse until the dough starts coming together.
- Turn the dough out onto a piece of plastic wrap, pat into a disk and wrap in the plastic. Refrigerate until cold but still malleable, about 15 minutes.
- In the meantime, make your curd filling: Combine the sugar, cornstarch and salt in a saucepan and whisk to combine. Stir in the peach nectar, egg yolks and lemon juice. Bring to a simmer over medium heat. Cook, whisking constantly, until the filling thickens and coats the back of a spoon; this will take 5 to 7 minutes after it comes to a simmer.
- Remove from the heat and stir in the butter, a tablespoon at a time. Strain the filling into a 9-by-13-inch glass baking dish. Cover with a sheet of plastic wrap to prevent a skin from forming and chill completely, about 1 hour.
- While your filling is chilling, lightly spray four 5-inch tart pans with removable bottoms with nonstick cooking spray. Divide your chilled tart dough into 4 pieces, then press into the bottom and up the sides of each prepared pan. Freeze until firm, about 10 minutes. Use a paring knife to trim any excess dough.
- Place the tart shells on a baking sheet, line each shell with parchment and fill with pie weights or dried beans. Bake until golden around the edges, about 20 minutes. Remove the parchment and weights and continue baking until the crusts are golden brown all over, 5 to 10 more minutes. Let cool completely.
- Divide the chilled curd/custard among the tart shells. Put back into the refrigerator while you make the meringue.
- In the meantime, make your meringue: Add the sugar and water to a saucepan over high heat. Bring to a boil, then once at a boil, cook for 4 minutes.
- While your sugar is cooking, put your egg whites, cream of tartar and salt into the bowl of a stand mixer fitted with a whisk attachment and beat on low speed. When the sugar mixture on the stovetop comes to a boil, turn the mixer to high speed.
- When the sugar syrup is ready, turn the mixer to medium-low speed. Pour the syrup in a steady stream in between the side of the bowl and the whisk attachment while the mixer is running. Turn the mixer to high and beat for 2 full minutes. Transfer the meringue to a pastry bag fitted with desired tip.
- Pipe decorative designs with the meringue on the tarts. Use a pastry torch to brown. Garnish with basil leaves and serve.
HONEY-PEACH TART WITH VANILLA ICE CREAM
Steps:
- For Filling:
- Preheat oven to 400°F. Roll out tart crust dough on floured work surface to 13-inch round. Slide 10-inch diameter tart pan bottom or bottom of 10-inch diameter springform pan under dough. Mix 2 tablespoons sugar and flour in small bowl. Sprinkle over tart crust, leaving 2-inch border. Arrange sliced peaches in concentric circles atop sugar mixture in crust, leaving 2-inch border. Drizzle peaches with honey. Gently fold pastry edges up around peaches. Brush edges of crust with melted butter. Sprinkle crust and peaches with 1 tablespoon sugar. Place tart (on tart pan bottom) on heavy large baking sheet with rim. Bake tart until crust is golden and peaches are tender, about 35 minutes. Transfer baking sheet to rack. Using pastry brush, brush any juices from center of tart over peaches and crust. Cool tart 20 minutes.
- For Crust
- Mix flour, powdered sugar and salt in processor. Add butter; process until mixture resembles coarse meal. Mix egg yolks and water in small bowl. Add to flour mixture and process until moist clumps form. Gather dough into ball; flatten into disk for round tart or into square for rectangular tart. Wrap in plastic and refrigerate 1 hour. (Can be prepared 3 days ahead. Keep refrigerated. Let dough soften briefly at room temperature before rolling out.)

Store bought pastry dough makes this dessert a snap to make. Add a scoop of vanilla ice cream on each slice.

- In a bowl, combine the peaches, sugar and flour; toss to mix.
- Add lemon juice and stir to combine.
- On a floured work surface, roll out the puff pastry into a 15-inch round, about 1/4-inch thick.
- Place the pastry on an ungreased baking sheet and spoon the peaches into the center, leaving about 2 inches uncovered around the perimeter.
- The fruit will be stacked high but will reduce in volume as it cooks.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with a silicone baking mat.
- Whisk sugar and Chinese five-spice powder together in a small bowl. Beat egg and water together in another bowl.
- Melt butter in a large skillet over medium heat. When the butter foams, arrange peaches in a single layer in the skillet. - Preheat oven to 375 degrees.
- Place pie crust on a parment paper lined cookie sheet.
- Put the remaining ingredients, except the milk, into a large zip-close bag and shake until peaches are coated.
- "Dump" peach mixture into a mount in the center of the crust and "pat down" so the peaches are about 1 inch from the sides.
- Fold the lip of the pie crust over the edge of the peaches.
- Coat the edge of the crust with milk.
