This is a recipe I developed from lots of trial and error. I just kept experimenting with my bread maker. This same dough makes beautiful dinner rolls as well.

Number Of Ingredients 6

1 1/3 cups milk
2 tablespoons butter or 2 tablespoons margarine
4 tablespoons sugar
2 teaspoons salt
4 cups flour
1 tablespoon yeast

Steps:

  • Place ingredients in bread maker following your manufacturers guidelines.
  • Personally I only mix it up in the bread maker. When it is done proofing I turn it out onto a floured surface shape it and place it in a greased (cooking spray) loaf pan. Let rise for approx 1 hour, til doubled. I bake for 30 minutes at 350 degrees.

I tinkered & messed with this recipe until I got it right. It bakes up high and light and just..well..Beautiful! I dont have good luck baking my bread in my machine, so I just make the dough in it and bake it in my regular oven. I hope you enjoy it! I do live at high altitude (6,000ft), which might have some effect on this.

2 teaspoons salt
1/4 cup sugar
2 tablespoons dry milk
3 1/4 cups all-purpose flour
1/2 cup wheat flour
1 1/3 cups warm water
2 tablespoons extra virgin olive oil
1 teaspoon lemon juice
1 package active dry yeast (I use Red Star)

Steps:

  • Measure ingredients into your ABM in the order your manufacturere recommends.
  • Set on light or medium setting to your preference.
  • You can also make just dough with your ABM and bake in your oven or freeze the dough after the first rise in any shape you like.
  • Bake in a conventional oven at 350 degrees for 25-35 minutes.

This is my mother's bread recipe. She made it so often that she never had to look at any recipe - she knew it by "feel". She finally wrote it down and we are so glad she did since she passed away in 1980 at the age of 45. This recipe is pretty much in her own words - it is a guideline for all kinds of yeast bread items. Several variations follow the main recipe. Be sure to read it through before trying them out. She was a beautiful woman and a wonderful mother. Not a day goes by that I don't think of her. Whenever I make yeast bread, I think of her. I love you, Momma!

1 1/2 cups milk, scalded
1 cup sugar
2 (1/4 ounce) packages yeast
4 eggs
1 cup butter
1/2 teaspoon salt
6 cups flour

Steps:

  • Put the warm milk in a pan large enough to hold all ingredients.
  • Add sugar and yeast; stir until dissolved.
  • Stir in 3 cups of flour, mix well.
  • Cover and let rise until full of bubbles - (about 45 minutes).
  • Add eggs (beaten until light), salt, and butter to the mixture.
  • Blend well, and add remaining flour.
  • Cover and let rise (about 1 1/2 hours).
  • "Now the dough is ready to use and what finger paints are to a child, this bread recipe can be for you. Your imagination can run riot and the things you can do will amaze you" (Quoting directly from her instructions).
  • Flour your breadboard or counter where you intend to knead the bread and put your dough on it.
  • The theory is that the more you knead the dough, the better the bread will be. But don't let it run away with you. Quite a small amount of kneading will result in excellent dough (Bread or rolls) My theory is the more you knead the dough (need the dough$$), the poorer you are. Ha! Seriously, it doesn't make that much difference whether you knead it half a day or about 5 minutes. It turns out real good at 5 - 10 minutes.
  • FROM THIS POINT, YOU DECIDE WHAT TO MAKE WITH YOUR DOUGH AND GO FROM THERE.
  • TO MAKE BASIC BREAD LOAVES: After you've kneaded the dough the final time, take about half as much as your loaf pan holds. Roll it roughly into the shape of a pie. Starting at any edge roll it up. Tuck up the ends under so that the roll now fits your loaf pan. The rolled "seam" should be on the bottom of the pan. Bake at 325 for 1 hour. This recipe should make 2 loaves.
  • Don't stop now! Here are some variations you can easily do!.
  • TO MAKE COFFEE CAKE recipe: Anyway, after you've kneaded the dough, you take half as much dough as your bread pan holds and roll out about the size of a pie pan. Spread butter (about 1/2 stick) over entire top. Sprinkle with sugar and cinnamon (about 1/2 cup sugar - 1 teaspoon cinnamon). I have used apple pie spices instead and it came out fine. Roll up very tightly and tuck ends in if they are too long for your pan. Put in a warm place and let rise to double its original size - about an hour. Bake at 325 degrees F. for 1 hour.
  • TO MAKE PARKERHOUSE ROLLS, When making Parkerhouse rolls, remembering that your rolls will be twice the size of your original dough! Butter your muffin tins well and put 3 equal siaed rolls of your dough in each tin. Let rise to double in size. Bake at 375 degrees F. for about 25 minutes or until golden brown. Will make about 2 doz. rolls.
  • TO MAKE BUTTERFLAKE ROLLS: Roll dough very thin, cut small rounds and put about 5 in each muffin tin, endways. Let these also rise to double in size before baking at 375 degrees F for about 25 minutes or until golden brown. Makes about 2 dozen.
  • YOU CAN ALSO MAKE SOME VERY GOOD PECAN ROLLS: Substitute brown sugar for the white sugar in the original recipe. Butter 2 muffin tins. In the bottom of each muffin cup add these ingredients: 1 heaping teaspoon of Light Brown Sugar, 1 to 2 teaspoons of chopped nuts or 3 pecan halves. After the final rising, shape your dough into a long roll or into two 1 foot rolls. Cut the roll into 1" slices and place each slice into a muffin cup. Let them rise until double in size and bake them at 375 degrees F. for about 2 to 30 minutes. Turn them upside down onto Aluminum foil or wax paper to cool.

1 1/3 c warm water
2 1/4 tsp bread machine yeast
2 2/3 Tbsp shortening
2 2/3 Tbsp sugar
1 1/3 tsp salt
3 1/3 c all purpose flour

Steps:

  • 1. Place ingredients in your bread machine according to directions.
  • 2. You can either bake it in your bread machine or set it on your dough cycle.
  • 3. If you use your dough cycle (which I prefer), remove your dough from the ABM and place on a lightly floured board.
  • 4. Knead the bread a few times to remove the air bubbles and then form the dough into a loaf. Place the loaf in a 9x5-inch bread pan that has been sprayed with Wilton Bake Easy (or use a similar baking spray). Let rise till doubled in size (this won't take very long so watch closely).
  • 5. Bake in a preheated 350 degree oven for approximately 35 minutes (you should have a hollow sound when you tap your bread).
  • 6. Remove from the oven and let cool in pan for 10 minutes. Then remove from the pan and finish cooling on a wire rack. Slice and enjoy.

SMALL ULTRA-LIGHT HEALTHY FRENCH BREAD LOAF (ABM) BREAD MACHINE



Small Ultra-Light Healthy French Bread Loaf (Abm) Bread Machine image

This carefully adapted bread machine recipe makes a superb, wonderfully light and open-textured French style loaf, but smaller than most - ideal for one or two people. This recipe is also much lower calorie and lower fat than most and is sugar-free, lactose-free and egg-free. The small size is perfect if, like me, you live alone and adore fresh baked bread but find most bread machine loaves are just too big unless you eat nothing but bread all day or you don't mind it a bit stale / defrosted. This is my favourite loaf and I make it a lot. A couple of things I've learned from the various modifications I've experimented with are: Don't use water COLD and straight from the tap if possible - do let it warm up to room temperature before using for this loaf. French loaves are made differently to other breads and this is quite important. I used to use filtered tap water, but found that any cheap bottled spring water makes sufficient improvements in taste that its worth using if you have it to hand. I almost always add Vitamin C Powder (you get it from Pharmacy) as it is a recognised major flour improver and additionally helps the bread keep fresh for longer. Original recipe called for 15g butter but I 've found this is vastly excessive unless you care for the buttery richness. I do in my scones and shortbread - not in my white bread. Have personally found that 9g of (firm) baking margarine gives wonderful taste and texture. Commercially, vegetable oil is used for French bread and I like it just fine with oil - at least for health purposes - it becomes more savoury too. 1/2 a tablespoon is plenty. If you are looking for a small, exceedingly healthy white loaf with wonderfully light and moist texture then do give this a run - I'm sure you'll be delighted!

210 ml water (At room temperature. Bottled spring water preferred but room-temperature tap water ok too)
1/4 teaspoon vitamin C powder (a.k.a. Ascorbic Acid powder, optional but strongly recommended)
1/2 tablespoon vegetable oil (about 3g) or 9 g butter
1 teaspoon salt (About 4g or 5g of Standard Table Salt. Preferably Lo-Salt or other Reduced-Sodium equivalent)
300 g strong white flour
2/3 teaspoon bread machine yeast (About 3g, standard bread machine yeast, if using sachets, not quite a full sachet)

Steps:

  • Remove pan from Bread machine and place on a electronic kitchen scale, and zero scale.
  • Weigh 210ml (210ml water weighs 210g) and rest of ingredients carefully into the pan, in the order listed (if you have the time, do have a read through of the notes :).
  • Select French Loaf cycle (or Wholewheat/Wholemeal cycle if no French Loaf cycle available) and select crust/firmness if necessary required for your machine. (I feel that this loaf benefits from a fairly firm crust - as long as it's not burnt!).
  • Start Machine.
  • Notes:.
  • Time listed is for the actual baking part of my machine's French Bread cycle. They vary by manufacturer.
  • I took this recipe originally from a machine which had a 6-hour French loaf cycle but my machine makes a French loaf in 4 hours. My mum's does it in 2 3/4 hours. I've found that the results are pretty consistent regardless of machine, although you occasionally need to increase/decrease amount of yeast to marry the recipe to the 'rise' component of your machine's cycle.
  • My machine has an un-overrideable 20 minute pre-heat before it does anything whatsoever whenever I use this cycle, so I need to take the following precautions so that the yeast doesn't make contact with any liquid before kneading starts which I recommend to you:.
  • When pouring the water do try to pour gently trying to avoid slashing up sides.
  • When adding the flour, do try to cover the water completely if possible.
  • When adding the yeast, if necessary/inclined try making a dip (or 'well') in the top of the flour and carefully pouring the yeast into the dip/well.
  • If using yeast in sachet form it's worth measuring it onto a teaspoon first and holding some of the sachet (depending on sachet size).
  • Here in Europe most of our cooking is weight-based rather than volume based.
  • A set of electronic kitchen scales with 1 gram graduations can be quite cheap if you hunt around and more than any other cooking and baking they really come into their own when it comes to bread-making, although I usually still use spoon measures for salt and yeast, and for liquid oil when I use it. Gives bomb-proof results, every single time!

  • When cycle is complete, remove dough and roll into a 12"x15" rectangle on a lightly floured board.

  • Fold ends under.
  • Place seam side down on greased baking sheet that has been dusted with cornmeal.
  • Cover loosely with plastic wrap and let rise for 45 minutes.
  • Make 4 diagonal cuts with a sharp knife across top of bread.
  • Bake at 375° for 25 minutes.
  • Beat egg white and water; remove bread from oven and brush with egg wash.
  • Return to oven and bake an additional 5 minutes.
