- In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat, cream will then become lumpy and butter-like.

SWEETENED WHIPPED CREAM FRAICHE
This stuff is like heaven in a bowl! The best way to make this fraiche, is to place the cream mixture into a larger bowl with ice, then beat the cream... the trick is to have your whipping cream and sour cream VERY cold. You can place it in the freezer for about 5 minutes until really cold, just watch it does not freeze. Do not use low-fat or fat-free sour cream, only regular full-fat for this. This takes no time to make on a heavy-duty stand mixer fitted with a whisk attachment, if you are using a hand mixer then just be patient, it will take several minutes to achieve the right consistency.

SILKY CREME FRAICHE WHIPPED CREAM
A little créme fraiche adds a pleasant tang to an otherwise plain whipped cream, and the small amount of gelatin brings double the benefits: it makes it silky-smooth and a dream to work with for piping on Martha's Roberta Heart Cakes. It also stabilizes the mixture so it will stay fluffy and scoopable for days.

- Sprinkle gelatin over 1 tablespoon cold water; let stand 5 minutes. Meanwhile, heat 1/4 cup heavy cream in a small pot over medium until bubbling around edges. Stir in gelatin mixture, reduce heat to low, and cook, stirring, until dissolved. Stir mixture into remaining 1 1/4 cups heavy cream. Refrigerate until cold and beginning to set, at least 2 hours or, covered, up to 2 days.
- Add confectioners' sugar to cream mixture and whisk to soft peaks. Whisk in vanilla and crème fraîche. Refrigerate until firm but still silky, at least 1 hour, or, in an airtight container, up to 1 day.
PEAR AND WALNUT UPSIDE-DOWN CAKE WITH WHIPPED CRèME FRAîCHE

- For the cake:
- Preheat the oven to 350°F.
- Cut a half-stick of butter into slices and place it and the brown sugar in the cake pan. Set the pan over a medium-high burner. Stir as the butter and sugar melt together and continue until the mixture gets pale and bubbly, swirly when stirred, and toasty brown, about 2 minutes. Set aside to cool. (Note: If you'd rather not make the caramel in the cake pan, you can use a large skillet instead and simply pour the caramel into the cake pan when done.)
- Arrange the pear wedges in the cake pan in an even patter. Sprinkle the walnuts evenly over the pears.
- In a medium bowl, sift together the flour, baking powder, and salt and set aside.
- Place the remaining 1 1/2 sticks of butter in the bowl of a stand mixer or large bowl. Beat the heck out of the butter using the paddle attachment of a stand mixer or a hand mixer until it gets lighter in both color and consistency. Add the sugar and beat until well blended and fluffy.
- Separate the egg yolks from the whites and set the whites aside in a medium bowl. Stir the yolks into the butter mixture until completely blended (no need to beat, and then stir the vanilla. Add half the dry ingredients and stir until mixed in. Stir in the milk until completely smooth, then the rest of the dry ingredients just until fully incorporated; set aside.
- Using a stand mixer or hand mixer, beat the egg whites until very fluffy. The whites should look shiny with soft peaks-stop whisking before they get dry looking. Gently but thoroughly fold the whipped whites into the batter-all the air that you just whipped in will go out of the whites if you over-mix at this point. Pour the batter over the fruit and gently smooth the top.
- Put the cake in the oven and start checking for doneness in 35 minutes: peek in, give the pan a tiny nudge, and look for jigglyness in the center. If it wobbles and looks soft and crinkled on top, gently close the door and set the timer for 5 more minutes. If it's looking set, slide the rack out and touch the top of the cake with your fingers, testing for bounce-back. If your touch leaves a dent that stays, return the cake to the oven. If it does spring back, the final test is sticking a toothpick into center of the cake. When it comes out moist, but crumb-free, it's done!
- Let the cake cool in the pan for 30 minutes. Run a knife around the edge, invert a plate on top of the pan, and carefully but quickly flip it over. Tap the bottom of the pan if the cake doesn't fall onto the plate on its own. Lift the pan away and replace any pear slices that may have stuck there.
- When ready to serve, combine all the ingredients for the whipped crème fraîche in a large bowl; whip until thick and fluffy, but still soft.
- Slice the cake and serve each wedge with a dollop of whipped crème fraîche.

- Preheat the oven to 350 degrees.
- Grease a 9×13 cake pan with baking spray and line with parchment paper.
- Cream together the room temperature butter and sugar until light and fluffy. Add in the lemon juice and zest.
- Add the room temperature eggs to the butter mixture one at a time until thoroughly incorporated.
- Sift together the flour, salt, baking powder, and baking soda.
- Add the flour mixture, alternating with the room temperature buttermilk, in 3 additions. Scrape the bowl between each addition and incorporate well but do not over-mix.
- Spread the cake batter into the greased pan and bake until a toothpick inserted in the center comes out clean and the top springs back gently when touched, about 40 minutes.
- Let the cake cool and when completely cool, use a biscuit cutter in your desired size to cut out rounds.
- Combine the water, sugar, thyme sprigs, and lemon in a small saucepan and bring to a boil. Simmer 1-2 minutes and then remove from heat.
- Let the syrup infuse and cool, about 30 minutes. Strain the syrup and refrigerate.
- Preheat the oven to 350 degrees and combine the strawberries, vanilla, maple syrup, sugar, and olive oil. Roast the berries until the juices run out and thicken slightly, about 30 minutes.
- Chill the bowl you are using in the freezer for 10 minutes. Beat all of the ingredients until stiff. Refrigerate until ready to use.
- Slice the cake rounds in half to form two layers.
- Generously brush each layer with the thyme syrup.
- Spread the bottom layer with a tablespoon of the strawberry preserves and top with the whipped crème fraîche.
- Top the top layer with whipped crème fraîche, roasted strawberries, and a thyme sprig. Garnish with freeze-dried strawberries, if desired, to add crunch. Serve right away.

- Preheat oven to 350°F. Butter a 9-inch round cake pan and line bottom with parchment; butter parchment. In a medium bowl, whisk together flour, baking powder, and salt.
