80g butter
100g jumbo rolled oats
100g normal oats
60g light spelt flour , plus extra for dusting
1 tsp sea salt
1 tsp baking powder
½ tsp golden caster sugar
1 tbsp caraway seeds
stilton & damson jam, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Gently melt the butter. Combine the oats, spelt flour, salt, baking powder, sugar and seeds in a bowl. Pour in the melted butter and stir to combine, coating all of the oats. Add up to 80ml boiling water, a little at a time, until you have a dough that holds together.
  • Lightly dust a work surface with flour and turn out the dough, rolling out to 0.5cm thickness. Using a 5cm round cutter, cut out your biscuits and place on a lined baking tray. Bake for 20-25 mins until crisp and golden, then remove from the oven and cool on a wire rack. Can be made one day ahead and kept in an airtight container. To serve, spread with butter and top with stilton and a dollop of damson jam.

Oatcakes are a traditional teatime item in Nova Scotia. They are equally good with a cup of coffee anytime.

2 cups rolled oats/traditional oatmeal (not quick-cooking or instant)
1 cup all-purpose flour
3/4 cup brown sugar
1 1/4 teaspoons fine sea salt
1/4 teaspoon baking soda
3/4 cup shortening or butter
1/4 cup very hot or boiling water

Steps:

  • Preheat an oven to 375 F. In a large bowl, combine the oats, flour, sugar, salt, and baking soda. Add the shortening or butter and use 2 knives, a large fork, or your fingers to work the fat into the dry ingredients.
  • Pour in the hot water and stir until everything comes together into a thick, sticky dough.
  • You can roll the dough out on a well-floured surface, cut it into shapes, and set them on a large baking sheet. Or keep things simple and simply press the dough into an even 1/4-inch layer on a baking sheet. Score this large "cake" into smaller pieces: Use a knife to cut the dough into squares or rectangles or whatever shapes you like, but don't bother to separate the pieces; the pieces will bake back together but be easy to cut or break along that original cut line.
  • Bake until golden, about 12 minutes. You can take them out now for chewier oatcakes or reduce the oven temperature to 325 F and bake until lightly browned, about 10 more minutes, for crisper oatcakes.
  • When they have finished baking, if you've cut them into shapes, let them cool; if you've scored them, cut them apart while warm so they cool into squares (or rectangles or triangles or whatever you've cut them into).
  • Serve and enjoy.

2 Cups Oatmeal
1 Cup Flour
1/2 tsp Salt
1/2 Cup Vegetable Oil or Butter
1/4 tsp Baking Soda
1/2 Cup Brown Sugar
1/4 Cup Hot Water

Steps:

  • Preheat oven to 400 degrees and line baking sheet with parchment paper.
  • Dissolve baking soda in hot water (add a little more water if needed).
  • Combine dry ingredients with butter, then add dissolved baking soda.
  • Mold into a dough ball, then press it out onto a baking sheet. You can roll it out with a dough pin to make it thin as you want it to be (I recommend about 1/4 inch thick.)
  • Cover and chill for 10-15 minutes to firm up the dough, then remove the oatcakes and score down the middle and across to make 8-10 squares (you'll use these lines for clean cuts after it's done baking).
  • Bake for 12-15 minutes until they are golden brown. They should be crisp and crunchy, not chewy.
  • Separate the cakes along the score lines with a thin knife and then allow them to cool.
  • Enjoy with your favorite coffee or tea or add them to your day pack for some quick energy during a hike or a long road trip.

  • Preheat oven to 350 degrees F ( 175 degrees C). Grease and flour the bottom and sides of an 8 inch round cake pan with 1 tablespoon softened butter or margarine.

  • Cream 1/2 cup butter or margarine and sugar together. Mix in caraway seeds and egg. Add flour mixture and milk, beating well. Pour batter into prepared cake pan.

2 tsp caraway seeds
200g rolled porridge oats
50g wholemeal flour, plus extra for dusting
6 thyme sprigs, leaves picked
50g softened butter, cubed

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and line a large baking tray with baking parchment. Toast the caraway seeds in a dry frying pan over a medium heat for 1-2 mins until they release their aroma. Grind half of the seeds to a rough powder using a pestle and mortar or spice grinder.
  • Mix the caraway, oats, flour and thyme together in a large heatproof bowl until well-combined. Use your fingertips to rub the butter into the mixture until evenly distributed. Pour in 100ml boiling water and beat roughly with a wooden spoon until the mixture comes together and there are no visible clumps of butter remaining. Add a little more water if needed to bring the dough together - you don't want the dough to be too wet, as this will result in a tough oatcake.
  • Roll the dough out on a lightly dusted work surface to a 5mm thickness. Using a crinkle-edged cookie cutter, stamp out 25 x 6cm oatcakes. Alternatively, cut into 5cm squares. Re-roll the off-cuts to make more, if you can.
  • Transfer to the prepared tray and bake for 15-20 mins until crisp and there are no patches of wet dough visible. Leave to cool on the tray for 5 mins, then transfer to a wire rack to cool completely. Will keep in an airtight container for up to two weeks. Refresh in a hot oven for 2-3 mins to crisp before serving, if needed.

170g golden caster sugar
170g butter , softened
3 large eggs
½ tsp vanilla extract
170g self-raising flour
45g ground almonds
4 tbsp milk
4 tsp caraway seeds
1 tbsp demerara sugar
1 tbsp flaked almonds

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a 2lb/900g loaf tin with baking parchment.
  • Beat the caster sugar and butter using an electric whisk or wooden spoon. Whisk in the eggs and vanilla, then gently stir in the flour, ground almonds, milk and caraway seeds.
  • Pour the mixture into the tin. Sprinkle over the demerara sugar and flaked almonds, then bake for 1 hr or until a skewer poked into the cake comes out clean. Remove from the tin and leave to cool on a wire rack.

225g oats
60g wholemeal flour, plus extra for dusting
1 tsp salt
½ tsp sugar
½ tsp bicarbonate of soda
60g butter

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Mix together the oats, flour, salt, sugar and bicarbonate of soda. Add the butter, then rub together until it's the consistency of large breadcrumbs.
  • Gradually pour in 60-90ml water from a recently boiled kettle, stirring until it forms a thick dough.
  • Sprinkle some extra flour on a work surface and roll out the dough to about ½cm thickness. Use a cookie cutter to cut out about 16 rounds (the final number of oatcakes depends on the size of cutter you use).
  • Place the oatcakes on a baking tray and bake for 20 mins or until golden.
