3 apples (choose a crisp and firm variety, like Gala apples, peeled.)
3 tablespoons butter
2 tablespoons honey (up to 3 tablespoons)
1 teaspoon ground cinnamon
12 phyllo cups (homemade or store-bought)
3/4 cup warm apple sauce (homemade or store-bought)

Steps:

  • Cut apples in slices, then cut slices in half widthwise.
  • In a skillet, melt butter over high heat. Add apples and cook for about 2 minutes, browning apples on each side. Reduce to low heat, add honey and cinnamon. Stir well to cover apples.
  • Cook for 3-5 minutes until the apples are caramelized and tender. Set aside in a bowl.
  • Fill each phyllo cups with 1 tablespoon warm applesauce. Top with caramelized apples and serve immediately (or the applesauce will make the bottoms soggy).

Phyllo is neither the culinary bully nor nutrition nightmare that it is commonly thought to be. Quick hands and a good pastry brush or nonstick cooking spray are all you need to make delicious pastries. You can use muffin tins for the tart shells or make a single tart in a 6-inch cake pan.

3 sheets of phyllo, thawed if frozen
2 teaspoons plus 1 tablespoon sugar
2 McIntosh or other firm apples, peeled and cut into 1/2-inch wedges
1 tablespoon fresh lemon juice
1/4 cup apple juice
1 tablespoon butter, plus 2 teaspoons melted butter, for brushing phyllo
1 tablespoon Cognac or apple juice
Pinch of ground ginger
Pinch of cinnamon
Finely chopped crystallized ginger

Steps:

  • Preheat the oven to 350 degrees. On a work surface,stack the phyllo sheets and cut out four 7-inch squares (12 total), discarding the scraps. Stack the squares between 2 sheets of wax paper and cover with a kitchen towel.
  • Spray the countertop and 4 individual ring molds with nonstick cooking spray. Lay a square of phyllo on the counter and sprinkle with some of the 2 teaspoons of sugar; lay a second square on top, brush with the melted butter, and sprinkle with sugar. Cover with a third layer and sprinkle with sugar.
  • Work the phyllo into the ring mold as you would a handkerchief into a pocket, letting the edges overhang. Repeat with the remaining phyllo. Place the molds on a parchment-lined baking sheet and bake for 10 to 12 minutes, or until golden brown. Carefully transfer the phyllo shells to a rack.
  • Combine the apples, lemon juice, and apple juice and set aside. In a nonstick skillet, melt the butter over medium heat. Add 1 tablespoon sugar and caramelize for 3 minutes, or until golden brown. Remove from the heat, add the Cognac, and stir with a wooden spoon. Return the pan to the heat, add the spices and apple mixture, and cook, stirring occasionally, until the apples are tender, about 5 minutes.
  • Divide the apples among the shells and sprinkle with crystallized ginger.

1/2 cup granulated sugar, plus more for sprinkling
1/2 teaspoon kosher salt, plus more for sprinkling
1 stick salted butter
2 teaspoons apple cider vinegar
2 pounds Golden Delicious apples (about 4 large apples), peeled and cut into 3/4-inch pieces
3 tablespoons finely crushed gingersnaps (about 4 cookies)
1/2 teaspoon ground cinnamon
6 sheets frozen phyllo dough, thawed
1/2 cup cold heavy cream
Confectioners' sugar, for dusting

Steps:

  • Make the caramel: Combine the granulated sugar, 1/3 cup water and the salt in a large skillet over medium heat, stirring just until the sugar dissolves. Cook, gently swirling the skillet occasionally but not stirring, until amber, 8 to 10 minutes. Brush any sugar crystals off the side of the skillet with a wet pastry brush. Remove from the heat and whisk in 3 tablespoons butter and the vinegar (the mixture will bubble).
  • Add the apples and cook, stirring occasionally, until soft, about 12 minutes. Strain the apples and transfer to a bowl; set the caramel aside. Toss 1 tablespoon gingersnap crumbs and the cinnamon with the apples; let cool completely.
  • Melt the remaining 5 tablespoons butter in a small saucepan over medium-low heat. Let cool, then skim off the foam and discard. Spoon the melted butter into a bowl, leaving any solids in the pan.
  • Position a rack in the lower third of the oven and preheat to 375 degrees F. Line a baking sheet with parchment paper. Place a sheet of phyllo on a clean kitchen towel or piece of parchment with a long side in front of you. (Keep the remaining phyllo covered with a damp towel.) Lightly brush the phyllo with some of the melted butter and sprinkle with granulated sugar. Layer another sheet of phyllo on top; brush with more butter and sprinkle with more sugar. Repeat with the remaining 4 sheets of phyllo. Sprinkle the remaining 2 tablespoons gingersnap crumbs on top.
  • Spoon the apple filling onto the phyllo in a strip along the bottom edge, leaving a 1-inch border. Use the towel or parchment to help roll the phyllo into a log, starting at the bottom edge. Place seam-side down on the prepared baking sheet. Brush with more butter and sprinkle with more granulated sugar. Make a few slits on top with a knife to vent. Bake until golden brown, 30 to 35 minutes.
  • Beat the heavy cream in a bowl with a mixer on medium speed until soft peaks form, then gently fold in some of the reserved caramel (you may need to whisk the caramel first to loosen). Dust the strudel with confectioners' sugar and cut into pieces. Serve with the caramel whipped cream and more caramel; sprinkle with salt.

3 large baking apples, such as Granny Smith, peeled, cored, and finely chopped
1/2 cup Smucker's® Sundae Syrup™ Caramel Flavored Syrup
1/2 cup toffee bits
16 sheets phyllo pastry (available in the freezer section of many grocery stores)
Vanilla ice cream (optional)

Steps:

  • HEAT oven to 375 degrees F. Spray a baking sheet with no-stick cooking spray.
  • COMBINE apples, caramel syrup and toffee bits; set aside.
  • LAY phyllo pastry sheets flat under a sheet of plastic wrap. Place a slightly damp kitchen towel over the plastic wrap. Removing one sheet of pastry at a time, spray completely with cooking spray. Top with another sheet of phyllo pastry; spray with cooking spray. Repeat until four sheets of phyllo are stacked.
  • CUT the stacked pastry into 2 equal rectangles. Place 1/3 cup apple mixture 1 inch from a short edge of the dough. Fold long edges in about 1/2-inch, then roll, beginning with filling end, until a cylinder (egg-roll shape) is formed. Repeat with other half of dough. Repeat with remaining sheets of phyllo and apple filling.
  • PLACE each roll on prepared baking sheet. Spray tops of each roll with cooking spray. Bake 12 to 15 minutes or until pastries are golden brown. Let stand 5 minutes before serving.
  • PLACE 2 rolls on each of 4 dessert plates; drizzle with caramel sundae syrup and serve with vanilla ice cream, if desired.

When I was searching for a recipe to make homemade caramel apples for the very first time, a close friend gave me this amazing and fairly easy recipe. My family and friends loved these delicious treats! Sprinkle with nuts or whatever you desire while the caramel is still warm (work quickly, the caramel sets VERY fast).

8 large tart apples
8 wooden chopsticks for handles
1 cup butter
2 cups packed brown sugar
1 cup light corn syrup
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract

Steps:

  • Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
  • Line a baking sheet with parchment paper.
  • Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Cook until a candy thermometer reads 248 degrees F (120 degrees C), 25 to 30 minutes; stir constantly to prevent burning. A teaspoon of the syrup, dropped in a glass of cold water, should form a firm ball. Remove caramel from heat and stir in vanilla extract.
  • Working quickly, dip each apple into the hot caramel to completely coat the apple and about 1/2 inch of the wooden handle. Sprinkle apples with any desired toppings while still hot. Let caramel apples cool on the parchment paper. Use caution, caramel is very hot.

1 cup sugar
1 cup water
6 firm tart apples, peeled, cored and halved lengthwise
12 phyllo pastry sheets
1/4 cup butter, melted (1/2 stick)
cinnamon
sweetened whipped cream

Steps:

  • Melt 6 tablespoons butter in heavy large skillet over medium heat.
  • Add sugar and water and bring to a boil.
  • Reduce heat and simmer, stirring constantly, until sugar dissolves.
  • Add apples and cook until tender, turning often, 20 to 30 minutes.
  • Remove apples, allowing excess syrup to drip back into pan; transfer to rack to cool.
  • Reserve syrup in skillet.
  • Preheat oven to 350 degrees.
  • Place 1 phyllo sheet on surface (keep remainder covered to prevent drying) and brush with melted butter; fold in half crosswise and brush with butter.
  • Arrange one apple half cut side down at one short side.
  • Fold long sides over apple, then roll up, enclosing apple.
  • Arrange seam side down on baking sheet.
  • Repeat with remaining apples.
  • Brush phyllo with remaining melted butter; bake until golden brown and crisp, about 15 minutes.
  • Boil reserved syrup over medium-high heat until slightly thickened and amber in color.
  • Spoon syrup over phyllo and sprinkle with cinnamon.
  • Garnish with whiped cream and serve.

8 Gala apples (3 1/2 lb), peeled, cored, and cut into 1/4-inch wedges
1 teaspoon fresh lemon juice
1 teaspoon cinnamon
1 stick (1/2 cup) unsalted butter, melted
1/2 cup honey
1/2 cup granulated sugar
1/2 cup confectioners sugar
10 (17- by 12-inch) phyllo sheets (from 1 package), thawed if frozen
Accompaniment: vanilla ice cream or whipped cream

a 9- to 9 1/2-inch (24-cm) springform pan

Steps:

  • Put oven racks in upper and lower thirds of oven and preheat oven to 375°F.
  • Reserve 2 tablespoons almonds and evenly spread remaining almonds on a baking sheet, then toast in upper third of oven until golden, 5 to 8 minutes. Remove from oven.
  • Increase oven temperature to 400°F. 3Toss apple wedges with lemon juice and 1/4 teaspoon cinnamon in a large bowl.
  • Cook 1 tablespoon butter with honey and granulated sugar in a deep 12-inch heavy skillet over moderately high heat, stirring constantly and carefully with a wooden spoon (mixture will foam), until mixture is deep golden, about 6 minutes.
  • Carefully add apples (caramel will harden, then liquefy), stirring gently from bottom of skillet to coat apples with caramel, and cook, uncovered, stirring occasionally, until apples are tender, about 10 minutes. Drain apples in a colander set over a large bowl, reserving caramel. Transfer apples to another bowl and stir in toasted almonds. Pour caramel through a fine-mesh sieve into a 2-quart heavy saucepan and discard any solids. Simmer briskly until liquid is reduced to a thick glaze (about 1/3 cup), 5 to 10 minutes. Keep slightly warm or at room temperature.
  • Stir together confectioners sugar and remaining 3/4 teaspoon cinnamon and transfer to a fine-mesh sieve or a sifter.
  • Brush springform pan with some of remaining butter. Cover stack of phyllo with plastic wrap and a dampened kitchen towel. Keeping remaining phyllo covered, lay 1 sheet on a work surface and brush with butter, then dust lightly with cinnamon sugar. Lift buttered phyllo and gently fit into pan with ends overhanging. Rotate pan slightly, then butter and sugar another sheet and place in pan. (Sheets should not align.) Repeat with 7 more sheets, rotating pan each time so overhang of sheets covers entire rim.
  • Spread apple mixture evenly in phyllo shell and smooth top.
  • Brush remaining sheet phyllo with butter and dust with some of cinnamon sugar and lay over filling, gently crumpling sheet slightly to fit in pan. Bring edges of overhanging bottom sheets up and over filling and top sheet to enclose. (Phyllo should look rustic, but avoid tall peaks, as they can burn.) Brush top with remaining butter and sprinkle with reserved almonds. Sift cinnamon sugar generously over pastis and bake in lower third of oven until top is golden brown, 30 to 40 minutes.
  • Increase oven temperature to 425°F and continue baking until top is deep golden brown and shiny, about 15 minutes. (Some edges may get very dark). Cool pastis in pan on a rack 5 minutes. Remove side of pan carefully and cool pastis 5 minutes. Transfer to a platter and cut into wedges with a serrated knife. Serve warm or at room temperature with caramel sauce.

  • Preheat oven to 375°. In a large saucepan, combine the first 6 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until apples are tender, stirring occasionally. Cool completely., Unfold puff pastry onto a large sheet of parchment; roll into a 16x12-in. rectangle. Transfer parchment and pastry to a baking sheet, placing a short side of the rectangle facing you. Using a slotted spoon, arrange apples on bottom half of pastry to within 1 in. of edges. Drizzle apples with caramel topping. Roll up jelly-roll style, starting with the bottom side. Pinch seams to seal, and tuck ends under. , In a small bowl, whisk egg with water; brush over pastry. Sprinkle with coarse sugar. Cut slits in top. Bake 25-30 minutes or until golden brown. If desired, serve with whipped cream and additional caramel topping.
