1 cup sun-dried cherries
8 ounces semisweet chocolate
4 teaspoons butter
8 teaspoons sugar
2 ounces finely chopped almonds
2 ounces finely chopped pistachios
6 ounces crushed biscotti
2 teaspoons candied orange peel
1 ounce Grand Marnier
3 egg yolks

Steps:

  • Soak cherries in warm water, about 30 minutes.
  • Drain well.
  • Place chocolate in bowl with butter, over a pot of simmering water until melted.
  • Add sugar, almonds, pistachios, biscotti, drained cherries, orange peel and Grand Marnier.
  • Mix well.
  • Remove from heat and add the egg yolk and mix well.
  • Cool completely.
  • Form salami shape by rolling mixture in a sheet of wax paper.
  • Refrigerate 4 hours or overnight.
  • Slice and serve.

This is a recipe that I used on other fish and decided to try it on salmon. Even my husband likes it and he is not a salmon fan.

¼ cup butter
1 clove garlic, minced
4 (6 ounce) salmon fillets
3 large onions, thinly sliced
1 cup white vinegar
1 cup brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil, and grease the foil with cooking spray.
  • Combine the onions, vinegar and brown sugar in a saucepan over medium heat. Cook, stirring occasionally until the sauce begins to caramelize, about 15 minutes.
  • Melt butter with garlic in a small skillet over medium heat. Lay salmon fillets on the prepared baking sheet, and brush with garlic butter. Pour the onion mixture over the fillets.
  • Bake for 20 to 25 minutes in the preheated oven, until the fish flakes easily. Cooking time may vary with the thickness of your fillets.

Originally from one of the American Diabetes Association cookbooks, I made changes to make it tastier. Deliciously tangy with crunchy sweetness throughout! For a healthier version, use margerine instead of butter and only 1/4 cup walnuts. Also, split the salad into 4 servings.

1 tablespoon butter
2 tablespoons brown sugar
1/2 cup walnuts, chopped
2 tablespoons red wine vinegar
1 tablespoon olive oil
1 teaspoon Dijon mustard
4 cups mixed baby greens

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl combine butter and brown sugar. Microwave on high 30 seconds or until butter and sugar have dissolved.
  • Toss walnuts in the butter/sugar mix. Spread on a cookie sheet and bake 15-20 minutes or until beginning to brown.
  • In salad bowl, make the dressing by combining vinegar, oil, and mustard.
  • Gently toss greens in dressing.
  • Allow walnuts to cool 10-15 minutes, then toss with greens.
  • Serve and enjoy!

1-2 Jars of preserves

Steps:

  • Do not take skin off the salami. Cut in 1/2 lenght wise. Put in glass pyrex dish lasagna pan. Pour 2 jars of preserves over top. Bake in 250 degree oven for 4-5 hours, basting every so often.
