FRIED RING BOLOGNA

Yield 4 to 6 servings as a graze

Number Of Ingredients 4

1 large ring bologna
Butter, for frying
Extra-virgin olive oil, for frying
Crackers, for serving

Steps:

  • Heat a large, preferably cast-iron, pan over medium heat. Remove the casings from the ring bologna and slice on the diagonal 1/2 inch thick. When the pan is hot, add a lump of butter and a spoonful of olive oil, and then add the bologna in one layer, leaving some space between the pieces. Fry until dark pink crusty edges form on both sides. Remove from the pan, keep warm and continue frying the rest of bologna.
  • Serve with crackers.

This was given to my by my good friend Dana who works here as a volunteer at the park. She brought me in some a short while ago and it was so good, I just had to have the recipe. I don't have a pict, but will take one next time I make this.

1 medium bologna ring, get a good quality one
1 c vinegar, white is ok
2 c water
2 Tbsp pickling spice your own, or use this combo below
pickling spice combo:
2 medium bay leaves
1 tsp peppercorns
1/2 tsp mustard seeds
1 tsp minced garlic
1/4 tsp crushed red pepper

Steps:

  • 1. Bring the vinegar,water, and pickling spice to a boil, boil for 5 min.
  • 2. Let cool, then pour over bologna ring.
  • 3. Refrigerate for 5 days before devouring.
  • 4. Serve with crackers, or mini cocktail slices of rye or pumpernickle bread and of course grainey mustard.

8 slices bologna
3 tablespoons butter
1 onion, chopped
4 cups warm mashed potatoes
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 1 1/2 quart baking dish.
  • Heat a skillet over medium-high heat. Fry the bologna slices in the hot skillet until browned on both sides, about 1 minute per side. Drain on a paper towel-lined plate. Wipe excess grease from the skillet, reduce heat to medium, and stir in the butter and onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir the onions into the warm mashed potatoes.
  • Spread half of the mashed potatoes into the prepared baking dish. Layer with half of the fried bologna, and sprinkle with half of the cheese. Repeat with the remaining ingredients.
  • Bake uncovered in the preheated oven until the cheese is bubbly, and the center is hot, about 30 minutes.
