CRISPY BAKED ONION RINGS



Crispy Baked Onion Rings image

Ditch the deep fryer in favor of this quick and easy recipe for crispy, baked onion rings!

Number Of Ingredients 6

2 large Vidalia onions
3/4 cup all-purpose flour
4 large egg whites
2 Tablespoons mayonnaise
1 cup Italian-style breadcrumbs (See Kelly's Note)
Cooking spray

Steps:

  • Preheat the oven to 425°F. Grease a large baking sheet with cooking spray.
  • Slice the onions into 1/2-inch wide rings then place the rings in a bowl of water.
  • In a medium bowl, whisk together the flour, 1 teaspoon salt and 1/4 teaspoon pepper. In a second medium bowl, whisk together the egg whites and the mayonnaise. Add the breadcrumbs to a third medium bowl.
  • Remove each onion ring from the water, shaking off any excess and then placing it immediately into the flour, tossing until it's thoroughly coated, then dip the onion ring into the egg white mixture until it's thoroughly coated and then into the breadcrumbs, pressing them firmly onto all sides of the onion ring. Place the onion ring on the prepared baking sheet and repeat the coating process with the remaining onion rings.
  • Throughly spray the onion rings with cooking spray (this is optional, but it helps them brown more evenly). Bake the onion rings for 10 minutes then flip them once and bake an additional 5 minutes until they're golden brown and crispy. Serve immediately with your favorite dipping sauce.

1 large sweet onion, sliced into 1/2-inch rounds
1 cup nonfat buttermilk
1/4 cup cornstarch
1/3 cup all purpose flour
3/4 cup yellow cornmeal
1/4 finely grated Parmesan cheese
1 Tablespoon Miss Brown's House Seasoning (recipe follows)
Olive oil cooking spray
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees F. Line two baking sheets with parchment paper. Lightly spray the parchment paper with olive oil cooking spray.
  • Stir together the buttermilk and cornstarch in a shallow bowl.
  • Stir together the flour, cornmeal, Parmesan cheese and House seasoning in a baking dish.
  • Coat the onion slices by placing each slice into the buttermilk mixture allow excess to drip before coating in the seasoned cornmeal. Then place the coated rings in a single layer on the baking sheets. Repeat until all onion rings are coated. Give the onion rings a light spray with non-stick baking spray. Bake until golden brown, about 20-25 minutes flipping once halfway through and serve hot.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

OVEN FRIED ONION RINGS

2 cups all-purpose flour
2 teaspoons smoked paprika
4 teaspoons kosher salt
2 cups buttermilk
4 eggs
3 cups panko breadcrumbs
4 tablespoons olive oil
2 large yellow sweet onions, such as Maui, sliced 1/4-to-1/2-inch thick

Steps:

  • Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
  • In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
  • In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
  • Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
  • Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.

Steps:

  • Cut onions into 1/2-in. slices; separate into rings and place in a bowl. Cover with ice water; soak for 30 minutes. Drain., In a small bowl, beat egg whites until foamy. In another bowl, combine the bread crumbs, thyme, salt, paprika and pepper. Divide the crumb mixture among three large resealable plastic bags. Dip a third of the onions in the egg whites; add a few rings at a time to crumb mixture and shake to coat. 2 vidalia onions (approximately 1 pound)
1/2 cup all-purpose flour, plus 2 tbsp
2 tablespoons cornstarch
1 cup plain almond milk, very cold
1 teaspoon apple cider vinegar
1 cup whole wheat bread crumbs
1 teaspoon kosher salt (or 1/2 tsp. table salt)
2 teaspoons olive oil

Steps:

  • Slice the onions into 3/4 inch thick rings. Separate the rings and place in a bowl. Cover with the kitchen towel.
  • Preheat oven to 450 degrees farenheit. Line a rimmed 12 x 18 inch baking sheet with parchment paper sprayed with cooking spray and set aside.
  • Get two bowls for the batter and the breading. Into one bowl, place flour and cornstarch. Add about half of the almond milk and stir vigorously with a fork to dissolve. Add the rest of the almond milk and the apple cider vinegar, stirring to incorporate. Set aside.
  • In the other bowl, mix the breadcrumbs and salt. Drizzle in the olive oil and mix well.
  • Arrange your bowls and pan from left to right as they will be used.
  • Dip each onion ring into the batter, tapping any excess off, then transfer into the bread crumbs and use your "dry" hand to sprinkling a handful of crumbs over the inside and outside of the onions so that each is covered thoroughly.
  • Carefully transfer each onion ring to the baking sheet, creating only a single layer per sheet.
  • Spray the onion rings lightly with nonstick cooking spray and bake for 8 minutes, Flip carefully and bake for another 6-8 minutes. The rings should be varying shades of brown, and crisp. Taste one to check for doneness. Serve immediately.

  • Preheat the oven to 450 degrees. Coat a baking sheet lightly with cooking spray and set aside.
  • Place the potato chips in a food processor and process into fine crumbs, about 20 seconds. Transfer to a shallow bowl, stir in the cayenne, and set aside. In another bowl, combine the buttermilk, 2 tablespoons of the flour, the salt and the pepper and set aside.
  • Slice the onions into 1/2-inch-thick rounds and separate into rings, keeping only the large, whole rings (reserve the rest of the onions for other uses.).

1/4 cup plain breadcrumbs
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
2 medium onions, cut cross ways into 3/16-inch rings
2 tablespoons 1% low-fat milk
1/2 teaspoon salt
pepper

Steps:

  • Preheat oven to 350 degrees.
  • Spray a cookie sheet with lite olive oil or other veggie oil.
  • Mix bread crumbs, oregano & cayenne (mix these ingredients on a sheet of wax paper it will make the next step easier).
  • Dip onion rings into the milk and allow the excess to drip back into the bowl.
  • Dip into the crumb mixture.
  • They won't be fully coated, don't worry they will still have a crunch (especially with Panko crumbs).
  • Place onion rings in a single layer on the cookie sheet.
  • Bake onion rings until the crumbs are golden and the onions are soft (approx 30 minutes).
  • Sprinkle with salt & pepper and then serve.
