CAMBODIAN MANOR KHO TO HU (CARAMELIZED PINEAPPLE AND TOFU)
Caramelized pineapple and tofu is delicious and very easy to cook. Feel free to add red bell peppers, or other vegetables.

Steps:
- Place tofu between paper towels and press with cast iron frying pan or something heavy for about 10 minutes to get rid of excess moisture.
- Cut into bite size pieces(about 1").
- Dredge in cornstarch to coat, shaking off excess. Fry in oil till lightly browned and crispy, about 10 minutes.
- If using canned chunk pineapple, drain juice.
- Put pineapple, garlic, vegetarian oyster sauce and water in a small pot.
- Add sugar, salt, black pepper and green onion. Stir well.
- Cook on medium heat till the water is reduced and vegetables coated. Add tofu and stir to coat.
- Top with cilantro.
- Serve hot with rice.
SWEET COCONUT RICE WITH CARAMELIZED PINEAPPLE
This is very similar to a rice pudding, which is always popular in my family. Add cocunt and pineapple and it's even better.

Steps:
- In a 2-quart pan, combine sweetened condensed milk, coconut milk, and flaked coconut; bring to a boil.
- Reduce heat to low, stirring once or twice; simmer for 5 minutes.
- Add glutinous rice and stir until it is evenly moistened.
- Remove pan from heat and cover.
- Caramelized Pineapple: Cut crown from pineapple, then cut off shell.
- Cut pineapple lengthwise into quarters.
- rim off core and cut each quarter into 3 wedges.
- Place in a large bowl, sprinkle with brown sugar, and toss to evenly coat.
- Spread pineapple on a foil-lined rimmed baking sheet.
- Preheat broiler.
- Broil pineapple 3 to 4 inches from heat, turning once, until sugar melts but does not burn, about 2 minutes.
- To serve, scoop rice into bowls and serve with pineapple wedges.
- Garnish with toasted coconut and mint.

COCONUT-GRILLED PINEAPPLE
A great side dish to chicken or fish. Also perfect as a dessert; feel free to add scoop of ice cream. I have actually cooked these on high heat in a frying pan with great results as well! Note that the calorie is less that what's posted, as you will not use up all of the milk or sugar. Recipe revised from How to Grill by Steven Raichlen.

Steps:
- Cut off the top and the bottom of the pineapple.
- Stand pineapple up and cut off the skin, cutting downward in strips from top to bottom. Make sure you slice deep enough to remove the brown "eyes".
- Place pineapple on it's side and cut crosswise into 1/2 inch thick slices (rounds). You will get between 8 and 12 rounds from a pineapple, depending on it's size.
- Using a melon baller, remove the fibrous core from the center of each slice.
- Shake the coconut milk can well, then pour into a wide, shallow bowl.
- Place the sugar and cinnamon in another wides, shallow bowl. Stir to mix.
- Preheat grill to high. Brush and oil the grill grate.
- Dip each pineapple slice first into the coconut milk, then the sugar mixture, shaking off the excess between each dipping.
- Arrange the slices on the hot grates and grill until nicely browned on both sides, about 4-6 minutes per side.
- Transfer grilled fruit to a serving platter and garnish with mint leaves.
- Serve hot or cold, with or without a scoop of ice cream.
TAU HU KHO (TOFU IN CARAMEL SAUCE)
This recipe is from a Vietnamese restaurant in Zhuhai, Guangdong, China. Acquired while doing TESL training in Zhuhai. Serve with cooked rice and stir-fried spinach with garlic.

Steps:
- Cut tofu into 2x3 inch, 1/2 inch thick slices and pat dry.
- Place sugar in frying pan over medium-high heat, shake often until sugar is melted and tan colored, 2-3 minutes. Add 1/2 cup water (mixture will bubble furiously) and stir until caramelized sugar has dissolved.
- Stir in soy sauce, shallots and garlic, stir often until sauce is boiling. Reduce to simmer.
- Lay tofu slices in single layer in sauce and simmer uncovered for 10 minutes. With a wide spatula, turn pieces over.
- Simmer for 3-4 minutes longer and then transfer tofu to serving dish. Pour sauce over tofu and sprinkle with green onions and pepper.

- Shallow fry the tofu and set aside.
- Heat the oil in a thick based saucepan.
- Add the ginger, chilies, cardamom pods and garlic and sauté.
- Add the garam masala, coriander, cumin and turmeric and lightly fry.
- Add the salt, tofu, pineapple, rambutan and pineapple juice and simmer for 10 minutes.
- Add the coconut milk.
- Serve with rice when cooked.
