Vietnamese Lemon Grass Chicken Curry image

This recipe has been passed down from my grandmother in Vietnam and makes the best aromatic, slightly spicy chicken curry ever. Fresh lemongrass is the secret! Serve over white or sticky rice and you're in heaven.

2 tablespoons vegetable oil
1 lemon grass, minced
1 (3 pound) whole chicken, cut into pieces
⅔ cup water
1 tablespoon fish sauce
1 ½ tablespoons curry powder
1 tablespoon cornstarch
1 tablespoon chopped cilantro

Steps:

  • Heat the vegetable oil in a skillet over medium heat. Stir in the lemon grass, cooking until fragrant, 3 to 5 minutes. Place the chicken into the skillet. Cook and stir the chicken until no longer pink in the center and the skin is browned, about 10 minutes. Stir in the water, fish sauce, and curry powder. Increase heat to high and bring to a boil. Reduce heat and simmer for 10 to 15 minutes.
  • Mix cornstarch and 2 tablespoons of the curry sauce in a small bowl, until smooth. Stir cornstarch mixture into the skillet and simmer until sauce has thickened, about 5 minutes. Garnish with cilantro before serving.

My Khmer sons both love this soup at our favorite Cambodian restaurant, Chez Sovan, in San Jose, CA. This is my attempt to match the flavors at home. My oldest son's comment on trying the soup was, Mmm so close, make some more! Serve with warm baguette.

4 cups chicken broth
2 lemons, zested and juiced
1 head garlic, minced
1 lime, zested and juiced
10 whole black peppercorns
1 teaspoon soy sauce
1 (1/2 inch) piece fresh ginger, peeled and thinly sliced
4 dashes fish sauce
1 dried red chile pepper
4 stalks lemongrass, trimmed
water
8 ounces cubed cooked chicken
6 green onions, thinly sliced
1 carrot, cut into matchsticks, or to taste
1 cup thinly sliced cabbage, or to taste
1 cup mung bean sprouts, or to taste
2 ounces dried Chinese mushrooms, or to taste
3 tablespoons chopped cilantro
3 tablespoons chopped Thai basil
2 tablespoons chopped mint
4 teaspoons garlic chile paste, or to taste, divided

Steps:

  • Combine chicken broth, lemon juice, lemon zest, garlic, lime juice, lime zest, peppercorns, soy sauce, ginger, fish sauce, and chile pepper in a large pot.
  • Remove tough outer stalks from lemongrass. Halve inner stalks and cut into 3-inch peaches. Place in a resealable plastic bag and pound with a hammer until bruised.
  • Fill bag with water and pour into the pot. Bring soup to a boil; reduce heat and simmer until flavors combine, about 20 minutes. Strain with a small mesh strainer, discarding solids. Pour strained liquid back into the pot.
  • Stir chicken, green onions, carrot, cabbage, mung bean sprouts, Chinese mushrooms, cilantro, Thai basil, and mint into the soup. Simmer over medium heat until carrot is tender, about 10 minutes.
  • Spoon 1 teaspoon garlic chile paste into the bottom of each serving bowl and ladle soup on top.

From Cooking Light....This is one of the most popular dishes in Cambodia. It's a soupy curry that's more aromatic and less spicy than curries found in other parts of Southeast Asia. It uses a substantial amount of fresh ginger and lemongrass for flavor and fragrance. Serve over rice to soak up the sauce.

1/2 cup fresh ginger, thinly sliced peeled
1/4 cup fresh lemongrass, chopped peeled
1 1/2 tablespoons shrimp sauce (such as Lee Kum Kee) or 1 1/2 tablespoons shrimp paste
1 tablespoon rice wine vinegar
1 teaspoon grated lime rind
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon ground turmeric
5 garlic cloves, halved
2 large shallots, peeled and quartered
cooking spray
6 (4 ounce) skinless chicken drumsticks, skinned
6 (4 ounce) skinless chicken thighs, skinned
1 cup reduced-sodium fat-free chicken broth
3/4 cup light coconut milk
1 teaspoon sugar
1 tablespoon fresh lime juice
lime wedge (optional)

Steps:

  • Place first 10 ingredients in a food processor; process until minced, scraping sides of bowl occasionally.
  • Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add ginger mixture; sauté 2 minutes. Add chicken; cook 2 minutes on each side. Add broth, coconut milk, and sugar, scraping pan to loosen browned bits; bring mixture to a boil. Cover, reduce heat, and simmer 45 minutes or until chicken is done.
  • Remove pan from heat. Remove chicken from pan, reserving liquid in pan; cool chicken slightly. Remove the meat from bones, and discard bones. Place pan over medium heat. Stir in chicken and lime juice; cook for 2 minutes or until thoroughly heated. Serve with lime wedges, if desired.
  • Cooking Light does not give prep or cook time. The times listed is my guess.

This Cambodian chicken curry recipe makes one of Southeast Asia's most comforting chicken curries. While it has a depth of flavour that comes from dried spices and fresh aromatic ingredients, it has a richness thanks to a liberal use of coconut cream and milk, and a gentleness due to the mild red chillies.

1 tbsp coriander seeds
1 tsp cumin seeds
2 tbsp lemongrass stalks (finely chopped after discarding the tough outside layers)
1 tbsp galangal (peeled and finely chopped)
1 tsp kaffir lime zest
4 pieces dried medium red chillies (soaked and chopped, deseeded for a milder paste)
1 tsp turmeric (peeled and chopped - wear gloves if you don't want to get stained hands)
10 cloves garlic (peeled and crushed)
5 pieces shallots (peeled and chopped)
1 tsp shrimp paste
3 tbsp cooking oil
2 tbsp red kroeung (see above)
1 tsp shrimp paste
1/2 tsp palm sugar
200 ml coconut cream
1 whole chicken cut into chunky pieces
1 tbsp fish sauce
400 ml coconut milk
250 ml chicken stock
1 handful long beans cut into 4cm lengths ( cut into 4cm lengths)
2 pieces round eggplants (cut into chunks, soaked in cold water to reduce bitterness, then drained)
3 pieces sweet potatoes (or potatoes) (cut into chunks and cooked separately)

Steps:

  • Heat oil in a wok over low heat. Add red kroeung, shrimp paste and palm sugar. Stir-fry until fragrant. Add the chicken pieces and cook until well coated and takes on a little colour. Then add the coconut cream and half the amount of fish sauce (you can add more later).
  • Stir in coconut milk and stock. Bring to the boil, then reduce heat and simmer over medium heat until chicken is tender. Add the long beans and aubergines. Just before serving add the potatoes and continue cooking until curry is reduced and thick. Taste, taste, taste, and if it's a little too mild in flavour (not heat) add more fish sauce.
  • Serve with steamed rice or fresh rice vermicelli and crunchy vegetables such as cucumber or bean sprouts. Cambodians also like to eat their curries with French baguettes.
  • Note: The curry will be tastier if you prepare this recipe using homemade coconut cream and milk. Also, while the curry paste will be bright red, the addition of the coconut cream and milk will see the curry have a yellow hue. This is not important, the flavour of the curry is.

1 cup coconut milk
1 lb chicken breast, cubed
1 lb green beans, trimmed
1 tablespoon lime juice
2 tablespoons water
2 1/2 tablespoons curry powder
1 tablespoon lemongrass, powder
2 tablespoons oil
2 tablespoons fish sauce

Steps:

  • Mix the water, curry powder, lemongrass powder, oil, and fish sauce with a fork to form a paste. Reserve.
  • Heat the coconut milk on low heat 5-6 minutes. Add the curry paste.
  • Add chicken, then add green beans. Simmer, covered, for about 30 minutes. Stir or shake pan occasionally, but try to make sure chicken stays at the bottom of the mix (green beans are less likely to have salmonella, so their cooking isn't as critical).
  • Curry is done when chicken is tender. Serve over rice.

4 small onions, peeled and cut into eighths
2 teaspoons finely minced garlic
1 teaspoon butter
1 tablespoon chili powder
2 tablespoons curry powder
2 teaspoons salt
3 cups coconut milk
2 (2 lb) fryer chickens (legs, wings or thighs) or 2 (2 lb) chicken parts (legs, wings or thighs)
4 potatoes, peeled and cubed
1/2 cup chopped peanuts

Steps:

  • Cook onions, garlic and butter on medium heat until onions are soft and yellow.
  • Stir in curry, chili powder and salt.
  • Add 2 cups of the coconut milk.
  • Add the chicken and the potatoes.
  • Cover tightly and simmer for 20-30 minutes, stirring occasionally, until chicken is tender.
  • Add remaining 1 cup of coconut milk and chopped peanuts.
  • Simmer for 10 minutes, then serve on Basmati rice!
  • PS-You could easily use cut up chicken breasts, just watch the cooking time so they don't get too dry!
