California Club Sandwich image

A signature trademark of the California club sandwich is the use of avocado, either sliced or as guacamole. This recipe was adapted from www.food.com, and although not stated in the ingredients, you can also add slices of either Cheddar or Swiss cheese like Gruyère to make the sandwich richer and more filling.

3 slices white bread
3 tbsp mayonnaise
2 romaine lettuce leaves
4 slices plum tomatoes
1/2 avocado, sliced
4 slices crisp bacon
4 oz (120g) chicken breasts, sliced
freshly ground black pepper, to taste
salt, to taste

Steps:

  • To prepare the bread, toast it whichever way you like, in the oven, in a toaster, or under a broiler. Both sides must be toasted.
  • Spread one side of each bread slice with mayonnaise. Top two of the bread slices in the following order. Lettuce, two tomato slices, seasoning of salt and pepper (to taste), two slices of bacon, chicken slices, avocado slices, and again a seasoning of salt and pepper to taste.
  • Place one layered bread slice chicken side up onto the second layered bread slice and then cover everything with the remaining bread slice mayonnaise side down.
  • Secure the sandwich layers by inserting through the top four toothpicks in a diamond-like pattern. Make sure that you've pierced the sandwich all the way to the bottom.
  • With a serrated knife, cut the sandwich into four triangular pieces.

Really nothing more than a traditional club sandwich with avocado, but it really makes a difference in texture as I have always found club sandwiches to be a little dry.

3 slices white bread
3 tablespoons mayonnaise
2 romaine lettuce leaves
4 slices roma tomatoes
1/2 avocado, sliced
4 slices crisp bacon
4 ounces chicken breasts, sliced
fresh ground black pepper
kosher salt

Steps:

  • Toast the bread in a toaster, or under a broiler on both sides.
  • Arrange 3 bread slices in a row. Spread 1 tablespoon mayonnaise over 1 side of each bread slice. Place a lettuce stack on top of the first bread slice, top with 2 tomato slices, and season with salt and pepper, to taste. Place 2 slices bacon over the tomatoes (broken to fit neatly if necessary) and top with the chicken (without letting any hang over the sides).
  • Add avocado slices & season with a pinch of salt and pepper, to taste. Repeat with the second bread slice. Carefully place the second layered bread slice on top of the first layered bread, chicken side-up. Cover with the third bread slice.
  • Pin the sandwich's layers together by piercing them with 4 frill picks or cocktail swords through the top bread slice, in 4 places in a diamond-like pattern, all the way to the bottom bread slice.
  • Using a serrated knife cut sandwich, diagonally, into 4 triangular pieces (each piece should be secured in the center with a pick or sword).

1 tablespoon olive oil
1 cup quinoa, rinsed and well drained
2 garlic cloves, minced
1 medium zucchini, chopped
2 cups water
3/4 cup canned garbanzo beans or chickpeas, rinsed and drained
1 medium tomato, finely chopped
1/2 cup crumbled feta cheese
1/4 cup finely chopped Greek olives
2 tablespoons minced fresh basil
1/4 teaspoon pepper

Steps:

  • In a large saucepan, heat oil over medium-high heat. Add quinoa and garlic; cook and stir 2-3 minutes or until quinoa is lightly browned. Stir in zucchini and water; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Stir in remaining ingredients; heat through.

A longtime favorite sandwich of mine, since first trying the California Sandwich many moons ago at a little "healthfood" deli stand in Pacific Beach, California. This is my version. Use recipe #173076 for ease of preparation. Also good with thinly sliced tomatoes, in place of the cucumbers. I hope you enjoy!

8 slices whole wheat bread or 8 slices sourdough bread
8 slices deli smoked turkey (or leftover turkey breast slices)
4 slices provolone cheese
4 slices crisp cooked bacon (optional)
1 avocado, sliced into thin strips (optional)
16 slices cucumbers, very thinly sliced (or thin tomato slices)
1/2 cup alfalfa sprout (or lettuce)
mayonnaise
whipped cream cheese

Steps:

  • Toast bread lightly.
  • Spread 4 slices toasted bread with mayo, and the other 4 slices with cream cheese.
  • Assemble the sandwiches:.
  • For each sandwich use one slice mayo toasted bread and one slice cream cheese toasted bread. Per sandwich use 2 smoked turkey slices, 1 provolone cheese slice, 1 bacon, avocado strips, 4 thin cucumber or tomato slices, and sprouts or lettuce.

250g butternut squash , chopped into small chunks
2 tbsp olive oil or rapeseed oil
120g pack thin-stemmed broccoli , cut into small pieces
250g pouch cooked quinoa
small handful coriander , leaves picked and chopped
small handful mint , leaves picked and chopped
4 spring onions , finely sliced on an angle
50g pomegranate seeds
20g pistachios , roughly chopped
1 small ripe avocado
juice ½ lemon
handful sprouts (alfalfa or china rose sprouts are nice) or baby herb leaves
1 tbsp tahini
½ small ripe avocado , stoned, peeled and roughly chopped
small handful coriander , leaves picked
small handful mint , leaves picked
zest and juice ½ lemon
2 tsp clear honey or maple syrup

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a baking tray with parchment. Tip the butternut squash onto the tray, drizzle with 2 tsp oil and season well. Roast for 20 mins, then push the squash to one end of the tray, add the broccoli to the other end and drizzle with 1 tsp oil. Season and roast for 10 mins more.
  • Meanwhile, make the dressing. Put all the ingredients in the small bowl of a food processor, add 1 tbsp water and a pinch of salt. Blitz to make a loose dressing, adding a little more water if necessary.
  • Squeeze the pouch of quinoa to separate the grains, then tip into a large bowl. Add the herbs, spring onions, pomegranate seeds and pistachios. Add the remaining 1 tbsp oil, season and toss everything together. Add the roasted veg too.
  • Divide the salad between two plates and drizzle over the dressing. Halve the avocado and remove the stone, then slide a dessertspoon between the skin and flesh to remove it in one piece. Place on a chopping board, rounded side up, and thinly slice. Squeeze over the lemon juice, then slide a knife underneath and lift half the avocado onto each salad. Top with the sprouts and grind over a little pepper, if you like.

4 slices shaved ham
4 tomatoes, sliced, divided

2 slices monterey jack cheese

Steps:

  • Spread mayonnaise on one side of a piece of toast; add layer of American cheese, ham, two slices of tomato, two leaves of lettuce, and two pieces of bacon.
  • Spread mayonnaise on second piece of toast and place on top, mayo side down.
  • Spread mayonnaise on top of that second piece of toast.

1 loaf unsliced round bread (about 9" diameter)
1 cup bottled sour cream and bacon salad dressing
lettuce
1/3 lb sliced swiss cheese
3/4 lb sliced cooked roast beef
1/2 lb sliced cooked turkey
1 large tomatoes, sliced

Steps:

  • Cut bread in half horizontally; hollow out center of each half, leaving 1/4 inch shell.
  • Spread 1/3 cup of the sour cream and bacon dressing into each shell.
  • Line bottom of each shell with lettuce.
  • Into the bottom of each shell layer cheese, roast beef, remaining dressing, turkey and then tomato.
  • Top with lettuce.
  • Replace top shell.

12 slices Italian bread or 12 slices white bread, toasted
mayonnaise
salt and pepper
16 ounces imitation crabmeat
3 (6 ounce) cans tuna, drained
dill relish (optional)
black olives (optional)
lettuce (optional)
1 tomatoes, sliced (optional)
1 onion, sliced (optional)
4 slices mozzarella cheese (optional) or 4 slices provolone cheese (optional)

Steps:

  • shred up crab into bowl and mix with a couple heaping tablespoons mayo until enough is added to your liking.
  • In another bowl, mix drained tuna with mayo the same way as you did with the crab mixture.
  • To these mixtures you can add seasonings if desired.
  • I put black olives in my crab mix and dill relish sometimes in my tuna mix.
  • Take the lightly toasted bread and on first slice scoop some crab mixture onto it to desired thickness.
  • Place another slice of toasted bread on this.
  • Scoop some tuna mixture onto this second slice of toast.
  • Can now place any other options- I like lettuce, tomato and mozzarella cheese.
  • Place third slice of toasted bread onto top layer (I sometimes put a little mayo on bread so it sticks together).
  • Can toothpick layers together and cut in half.
  • Enjoy.

  • Make the aioli. Combine egg, chopped garlic, and fresh lemon juice in the bowl of a food processor fitted with blade attachment. Process until finely chopped, then with the motor running slowly stream in the canola oil. Continue to process for 30 seconds, or until well incorporated. Scrape down the sides then process once more.
  • Finish the aioli. Transfer to a large mixing bowl, then stream in the extra virgin olive oil, whisking the entire time. The aioli will be smooth, thick, and pale yellow. Add finely chopped tarragon, Kosher salt, and black pepper. Stir to mix, then refrigerate until needed.
  • Toast bread. Once bread is toasted, either leave in toaster oven or place on a wire rack until all remaining ingredients are ready. This will help keep the bread crispy!
  • Assemble the California club sandwiches. Spread a thin layer of tarragon aioli on both sides of toasted bread. To the bottom piece, layer the following: 1 ½ strips crispy bacon, thinly sliced turkey, 2 slices tomato. On the top slice of bread, place a layer of thinly sliced avocado. Season both the tomato and avocado with a little Kosher salt and black pepper. Place a generous handful of arugula (or other greens) on top of tomato, then flip the bread with avocado on top.
